1/2 cup butter, softened
3 cups powdered sugar, divided
1 large egg
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
Parchment paper
White nonpareils

Steps:

  • Beat butter and 1 cup sugar at medium speed with an electric mixer until creamy. Add egg and vanilla; beat 30 seconds. Add flour, beating at low speed until combined.
  • Place dough on lightly floured parchment paper, and roll to 1/4-inch thickness. Transfer rolled dough and parchment paper to a baking sheet, and chill 15 minutes.
  • Preheat oven to 375°. Cut dough with lightly floured 2-inch cutters; place 1/2 inch apart on 2 parchment paper-lined baking sheets. Reroll scraps, and repeat process.
  • Bake, in batches, at 375° for 8 to 10 minutes or until golden brown around edges. Cool completely on a wire rack (about 30 minutes).
  • Whisk together 2 1/2 Tbsp. water and remaining 2 cups powdered sugar. Dip top of each cookie in glaze, and transfer to a wire rack in a jelly-roll pan. Sprinkle with nonpareils. Let stand 1 hour or until set.

Whenever you make these cookies for someone, be sure to bring along several copies of the recipe! You will be asked for it, I promise! NOTE: I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.

1 ½ cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  • Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  • Bake 6 to 8 minutes in preheated oven. Cool completely.

1 cup butter, softened
1 cup vegetable oil
1 cup sugar
1 cup confectioners' sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
4-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Steps:

  • Preheat oven to 375°. In a large bowl, beat the butter, oil and sugars. Beat in eggs until well blended. Beat in vanilla. Combine the flour, baking soda and cream of tartar; gradually add to creamed mixture., Drop by small teaspoonfuls onto ungreased baking sheets. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.

1/2 cup butter or 1/2 cup margarine, softened
3/4 cup sugar
1 large egg
3/4 teaspoon vanilla extract
1/2 teaspoon cinnamon extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons ground cinnamon (or more)
1 teaspoon ground mombassa pepper (you can substitute equal amounts of cayenne)

Steps:

  • Cream butter in a large mixing bowl; add sugar, beating until light and fluffy. Add egg, vanilla and cinnamon extract, mixing well.
  • Combine flour, soda, salt, ground cinnamon and ground pepper, mix well and add to creamed mixture, blending well. (Dough will be very stiff).
  • Divide dough into thirds; roll each portion to 1/8 inch thickness on lightly floured waxed paper. Cut with desired cutters, and place 2 inches apart on lightly greased cookie sheets. Bake at 375°F for 8-10 minutes or until lightly browned. I found 6 minutes to work best in my oven. Remove to wire rack to cool.
