1 tablespoon butter
3-1/3 cups fresh corn or 1 package (16 ounces) frozen corn
1 plum tomato, chopped
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/3 cup minced fresh cilantro

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat. Add corn; cook and stir until tender, 3-5 minutes. Reduce heat to medium-low; stir in tomato, lime juice, salt and cumin. Cook until heated through, 3-4 minutes. Remove from heat; stir in cilantro.

8 ears fresh corn in husks
1 red bell pepper, diced
1 green bell pepper, diced
1 red onion, chopped
1 cup chopped fresh cilantro
½ cup olive oil
4 cloves garlic, peeled and minced
3 limes, juiced
1 teaspoon white sugar
salt and pepper to taste
1 tablespoon hot sauce

Steps:

  • Place the corn in a large pot with enough water to cover, and soak at least 15 minutes.
  • Preheat grill for high heat. Remove silks from corn, but leave the husks.
  • Place corn on the preheated grill. Cook, turning occasionally, 20 minutes, or until tender. Remove from heat, cool slightly, and discard husks.
  • Cut the corn kernels from the cob, and place in a medium bowl. Mix in the red bell pepper, green bell pepper, and red onion.
  • In a blender or food processor, mix the cilantro, olive oil, garlic, lime juice, sugar, salt, pepper, and hot sauce. Blend until smooth, and stir into the corn salad.

  • In a large bowl, combine the corn, onions, jalapenos and cilantro. Combine the mayonnaise, salt and pepper; gently stir into corn mixture. Cover and refrigerate for 4 hours.

15.5 oz can black beans (rinsed and drained)
9 oz cooked corn (fresh or frozen (thawed if frozen))
1 medium tomato (chopped)
1/3 cup red onion (chopped)
1 scallion (chopped)
1 1/2 - 2 limes (juice of)
1 tbsp olive oil
2 tbsp fresh minced cilantro (or more to taste)
salt and fresh pepper
1 medium hass avocado (diced)
1 diced jalapeno (optional)

Steps:

  • In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper.
  • Squeeze fresh lime juice to taste and stir in olive oil.
  • Marinate in the refrigerator 30 minutes.
  • Add avocado just before serving.

3 cups corn kernels (fresh or frozen)
1 teaspoon olive oil
½ cup vegan mayonnaise
2 tablespoons fresh lime juice
¼ cup nutritional yeast
2 tablespoons cilantro (chopped)
2 tablespoons red onion (diced)
½ teaspoon chipotle chili powder
Salt and pepper to taste
1 roma tomato (diced)
½ red onion (diced)
½ green bell pepper (diced)
¼ cup black olives (sliced)
2 tablespoons cilantro (chopped)
½ avocado (sliced)
1 tablespoons pumpkin seeds (toasted)
Lime wedges
Cilantro (chopped)

Steps:

  • Preheat oven to 400 degrees.
  • Toss corn kernels with olive oil, spread on sheet pan and place in oven. Cook for 20 minutes stirring at several intervals so corn browns more evenly.
  • When ready, remove corn from the oven and allow to cool for 10 minutes.
  • Mix together vegan mayo, nutritional yeast, lime juice, diced onion and chipotle chili powder together. Taste and add salt and pepper as desired.
  • When corn is cooled, combine with remaining salad ingredients. Just before serving, add the mayonnaise and mix well.
  • Top the corn salad with avocado slices and pumpkin seeds and garnish with lime wedges and cilantro.
