Official Contest Entry: Simply Potatoes 5Fix. Corn and Mashed potatoes are a marriage made in culinary heaven. With just 5 simple ingredients you can turn that medley into a bold side dish with flavors of corn, mashed potatoes, pablano and red peppers, sour cream and chives that pairs great with steak, pork or chicken. I created this dish due to my family always mixing their corn into the mashed potatoes.

Steps:
- Preheat oven 350°.
- Peel the corner of the Sour Cream & Chive Mashed Potatoes package to vent. Place the container in the microwave and heat on HIGH for 3 minutes.
- Completely remove film and stir.
- Return the package, uncovered, to the microwave on HIGH for 1 additional minute.
- Meanwhile, in a mixing bowl, combine drained southwest corn, cream corn, muffin mix and 4 oz melted butter. Stir to combine ingredients.
- Pour corn mixture into an ungreased 9"x9" rectangular casserole dish. Carefully spread mash potatoes on top of corn mixture (keeping the layer of potatoes on top).
- Place in preheated oven uncovered and bake 55 min or until a knife inserted near the center comes out clean.
- Remove from oven, slice remaining butter and evenly distribute on top of casserole. Let stand 10-15 minutes before serving.

Ready, Set, Cook! Special Edition Contest Entry: Try this yummy cheesy zesty potato casserole! It has all of the southwest flavors I love. It's very comforting and satisfying too. It is super easy to throw together, and uses pantry staples most of us have on hand. I really enjoyed it with tuna, but I think it would be just as good Vegetarian or with cooked chicken, cooked ground beef or cooked sausage. I made this pretty mild, but it can easily be spiced up with fresh or canned jalapenos or added red pepper flakes or hot sauce. Feel free to use reduced-fat cheese.

Steps:
- Preheat oven to 350°F Grease a 13x9 baking dish.
- Mix together the first 8 ingredients through the first 2 cups of shredded cheese.
- Mix together the sour cream, salsa, cilantro, garlic, cumin and salt and stir into the potato mixture until it's well coated.
- Spread mix into prepared baking dish and top with remaining cup of cheese.
- Bake for 60 minutes.
- Remove from oven and top with fresh chopped tomatoes and sliced green onions.
- Can serve right away, but sauce will thicken more if you let it sit 10-15 minutes.
- Serve with sour cream and hot sauce. This is really good served alongside a crisp salad.

Official Contest Entry Simply Potatoes 5 Fix. This is a complete well seasoned meal in one dish. The chili tomatoes add flavor to the beef and corn and goes well with the layer of garlic herb hash browns that are topped with cheese.

- Preheat oven to 400 degrees F. In non-stick fry pan, brown ground beef breaking up meat into small pieces.
- Add tomatoes and corn to beef. Bring mixture to a boil. Remove from heat and spread mixture evenly into shallow 2 1/2 quart baking dish.
- Sprinkle potatoes evenly over beef mixture. Pat down lightly. Bake 20 minutes. Sprinkle with cheese. Bake 8 to 10 minutes longer.

- Line unpricked pastry shells with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. - Preheat the oven to 400°F (200°C).
- Peel the potatoes, then thinly slice a knife or mandoline.
- Add the sliced potatoes to a large bowl and drizzle with the olive oil, 1 teaspoon of salt, ¼ teaspoon of pepper, and the Parmesan and toss with your hands or a spoon to coat.
- Arrange the potato slices in a pie dish, starting from the middle and working your way out, overlapping the potato slices. Fill in any gaps with leftover potato slices.
- Bake the crust for 15 minutes, or until the potatoes are just cooked and not yet brown.
- Reduce the oven temperature to 350˚F (180˚C).

- Preheat the oven to 400 degrees F (200 degrees C). Cut a 9-inch circle of parchment paper.
- Place pastry crust in a 9-inch quiche or pie pan, gently shaping and stretching to fit. Prick crust with a fork several times and place parchment circle over top. Add pie weights or dried beans on top of parchment paper.
- Set the pan on a baking sheet and place in the center of the preheated oven. Reduce heat to 375 degrees F (190 degrees C) and bake about 10 minutes. Remove to a wire rack and cool for about 5 minutes. Carefully remove pie weights or beans and parchment paper. Leave oven on.
- While the crust is cooling, squeeze thawed spinach between several layers of paper towels, to remove most of the moisture. Set aside.
- Add thawed potatoes to the cooled crust. Sprinkle 1 cup shredded Gruyere cheese on top.
- Stir beaten eggs, cream, bagel seasoning, and hot pepper sauce in a large bowl until ingredients are fully incorporated. Stir in spinach, breaking up any clumps. Pour mixture over the cheese and potatoes. Sprinkle the remaining 1/2 cup Gruyere on top.
- Place in the center of the oven and bake until eggs are set and a knife inserted into the middle comes out clean, 40 to 45 minutes. Remove from the oven and cool on a rack for 10 minutes. Serve warm.

- Peel film at corners of both containers to vent. Heat both containers in microwave for 4 minutes. Place warmed potatoes in a large bowl and stir in the sour cream.
