PORK AND PAPPARDELLE PASTA



Pork and Pappardelle Pasta image

Salt and freshly ground black pepper
3 tablespoons olive oil, plus more for drizzling
2 cloves garlic, chopped
1 white onion, finely chopped
2 teaspoons tomato paste
1 teaspoon crushed red chile flakes
2 cups chicken stock
2 cups shredded Simple Roasted Pork Shoulder, recipe follows
1 pound dried pappardelle pasta
Freshly grated Parmesan, for garnish
Chopped fresh parsley, for garnish
Red chile flakes, for garnish
3 tablespoons olive oil
3 tablespoons chopped garlic
Salt and freshly ground black pepper
1 (4 pound) pork shoulder

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat 3 tablespoons oil in a large saute pan over medium-high heat. Add the garlic and onions and cook about 5 minutes. Stir in the tomato paste and red chile flakes. After a minute or so, add the chicken stock and pork and season with salt and pepper. Reduce the heat to low, cover and cook an additional 10 minutes.
  • When you are ready to serve, drop the pasta into the boiling water and cook 6 to 8 minutes. Remove the pasta and place directly into the sauce. Cook, tossing the pasta with the sauce, another 2 minutes, and then turn off the heat.
  • Place the pasta into warmed bowls, spooning extra sauce over the top of each portion. Garnish with Parmesan, parsley and chile flakes. Drizzle with olive oil, if desired.
  • Preheat the oven to 425 degrees F.
  • In a small bowl, mix the olive oil, garlic, salt, and pepper. Using a pastry brush, spread the mixture all over the pork shoulder.
  • Set the meat on a rack set into a roasting pan. Roast for 20 minutes, and then reduce the heat to 325 degrees F. Continue to cook until an instant-read thermometer inserted into the shoulder reads 185 degrees F, about 4 hours. Remove the pork from the oven and let stand until cool enough to handle, about 30 minutes.

8 ounce pasta
1 Tablespoon olive oil
1 red bell pepper (sliced)
1 green bell pepper (sliced)
2 cups heavy cream
1/2 cup sour cream
1/4 cup parmesan cheese
1 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon paprika

Steps:

  • Prepare seasoned carnitas according to package directions. Set aside. Bring water in a large pot to a boil and cook pasta until al dente.
  • In a medium-sized skillet over medium-high heat add olive oil. Add peppers and saute until tender. Set aside on a plate.
  • Add heavy cream, sour cream, parmesan cheese, chili powder, cumin, and paprika to the skillet. Whisk and let simmer until it starts to thicken. Add pork and peppers to the sauce and toss until coated and heated through.

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained

1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. This is a deliciously cheesy pasta casserole. If you can't find mini penne pasta in your grocery store, you can use small shell pasta or regular penne instead. I like to use "Recipe#111347" for the alfredo sauce.

1 lb lean ground beef
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1 (16 ounce) jar salsa
1 (16 ounce) jar alfredo sauce
4 eggs
2 cups Mexican blend cheese, shredded
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 tablespoon fresh parsley, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions; drain.
  • Meanwhile, coat a 9-inch springform pan with cooking spray.
  • In large nonstick skillet over medium-high heat, cook beef with seasoning and salt until browned.
  • Stir in salsa; remove from heat.
  • In large bowl, mix Alfredo sauce, eggs and 1 cup cheese; stir in pasta.
  • In another bowl, toss spinach with 1/2 cup cheese.
  • To assemble, spoon half of pasta mixture, about 4 cups, into pan.
  • Sprinkle spinach mixture evenly over pasta.
  • Top with even layer of beef mixture.
  • Top with remaining pasta mixture.
  • Sprinkle with remaining 1/2 cup cheese.
  • Bake until hot in center and top is golden, about 1 hour.
  • Run sharp knife around edge of pan to loosen pasta.
  • Let stand 10 minutes.
  • Remove side of pan; sprinkle with parsley.

1 1/2 lbs boneless pork loin, cut in bite sized pieces
1 egg
1 cup milk
1 3/4 cups dry breadcrumbs
3/4 cup vegetable oil
1/2 teaspoon black pepper
2 teaspoons seasoning salt
1 tablespoon dried oregano
1/2 teaspoon garlic powder
1 teaspoon onion powder
12 ounces uncooked spaghetti
1 (32 ounce) jar plain spaghetti sauce
1 1/2 cups shredded parmesan cheese (or same amount of any other white cheese)

Steps:

  • In a shallow dish beat egg with milk.
  • Set aside.
  • In a one quart zip-lock bag add bread crumbs.
  • Add pork a few pieces at a time coating well.
  • Repeat above steps until all pork is coated.
  • Add coated pork pieces a few at a time into egg/milk wash.
  • Repeat above step until all pieces are coated with egg wash.
  • Coat pork in bread crumbs again.
  • In a medium-sized skillet, over medium heat, add oil.
  • While oil is heating, cook pasta according to directions on package.
  • Cook for 10 minutes or until desired tenderness.
  • Drain.
  • In a small bowl, combine all seasonings and spices.
  • Add pork to skillet.
  • Sprinkle seasoning over pork.
  • Stirring lightly to coat all sides of pork, cook pork until no longer pink and lightly browned.
  • If needed drain excess oil.
  • Add spaghetti sauce to pork in skillet.
  • Pour pasta into lightly buttered 13x9-inch dish.
  • Pour pork and sauce mixture over pasta.
  • Sprinkle with cheese.
  • Bake at 350°F for 20 minutes or until cheese is lightly browned.
  • Remove and let sit for 5 minutes.

  • How to make Paprika Pork Pasta I had no rice hence the use of pasta. :( I'm such a rice person that I die when I don't eat rice for more than a few days, okay make that more than 2 days, then you slowly see the life being sucked out of me and watch me curl up into a corner, rocking back and forth chanting "pretty pretty rice, pretty pretty rice". Okay enough. So here's how to make a slightly spicy pasta. For the pork: 1. Wash and slice the pork then throw them into a bowl with a teaspoon of paprika, a teaspoon of curry powder and pepper then mix thoroughly. 2. Set aside, it's services are not needed.. yet. For the pasta: 1. Boil until al dente, then drain and stir through some olive oil so it doesn't stick together. 2. Set aside, preferably not touching the raw pork. eww. Now it all comes together. 1. Heat up a frying pan and add in sliced onions and fry till they are transparent, not brown, then throw in the garlic and fry till fragrant. 2. Throw in the diced tomatoes, lettuce and when the tomatoes have shriveled and become pulpy, throw in the pork. 3. Pour in about half a cup of water, turn down the heat and let it simmer till a thick sauce has formed. 4. Taste test it and add more curry powder, salt or sugar if needed. (I didn't add sugar, because the tomatoes were rather ripe and a tad sweet already, you can add fresh chillies if you like it more spicy too) 5. Put in the pan and mix throughly. 6. Put it in a pretty bowl like mine and then serve. My friend wanted to put cheese on it because it's a pasta, i'm not sure how that would turn out though. This would be a "red" curry, not thai style but just the ingredients used just make it reddish. Next recipe i'll be using green curry. Haha. I hate it when I run out of rice.
