If you're tired of the same old taco routine, give these a try. I tweaked a friend's recipe to suit our tastes and my family's loved it since. It's so tasty and low maintenance. -Ally Billhorn, Wilton, Iowa

Number Of Ingredients 10

2 pounds extra-lean ground turkey
1 small onion, finely chopped
2 tablespoons chili powder
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (15 ounces) tomato sauce
18 Bibb or iceberg lettuce leaves
3/4 cup shredded cheddar cheese
Optional toppings: Sour cream, salsa and guacamole

Steps:

  • In a large skillet, cook and crumble turkey with onion over medium-high heat until no longer pink, 8-10 minutes., Stir in seasonings and tomato sauce; bring to a boil. Reduce heat; simmer, covered, until flavors are blended, about 10 minutes. Serve in lettuce with cheese and toppings as desired. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

8 thin slices cooked turkey
4 flour tortillas (6 inches), room temperature
1 large tomato, thinly sliced
1 medium green pepper, cut into thin strips
1 cup shredded lettuce
1 cup shredded cheddar cheese
1/3 cup ranch salad dressing

Steps:

  • Place 2 slices of turkey on each tortilla. Layer with tomato, green pepper, lettuce and cheese. Drizzle with salad dressing. Roll up tightly.

Pinwheels are soooo easy to make, and the perfect little sandwich to take to get togethers. I like to add green pepper, black beans, and green chilies to the cream cheese mix when I have them on hand, just to make these pinwheels even more festive looking! Cook time is chill time.

Number Of Ingredients 7

8 flour tortillas, burrito size
24 slices cajun-style turkey
1/2 cup shredded monterey jack cheese
8 ounces cream cheese
1 (1 ounce) packet dried southwest ranch dressing mix
1/2 teaspoon Tabasco sauce
1/2 cup chunky salsa

Steps:

  • Mix cream cheese, ranch dressing mix, tabasco sauce, and salsa.
  • Spread about a tablespoon on each tortilla, or until covered.
  • Arrange turkey so that there are 3 pieces per tortilla, and all parts of tortilla are evenly covered.
  • Sprinkle with monterrey jack cheese.
  • Roll the tortilla up to resemble a burrito. Wrap tightly in saran wrap and refrigerate at least an hour.
  • Slice the burrito to make about 5 or 6 pinwheels per burrito, discarding the ends.

4 large flour tortillas
8 ounces romaine lettuce, shredded
8 ounces tomatoes, seeded and diced
4 ounces red onions, diced
16 ounces smoked turkey, julienned
8 ounces guacamole
1 1/2 jalapeno peppers, seeded and minced
8 ounces cream cheese, softened
2 1/2 teaspoons ground black pepper
1/4 teaspoon salt

Steps:

  • Jalapeno Cream Cheese: Mix the jalapenoes into the cream cheese. Season with salt and pepper. Refrigerate until needed.
  • Lay tortilla out flat. Spread the cream cheese on the tortilla. Sprinkle lettuce, tomatoes, and onions in the center of the tortilla. Place the turkey all over. Top with guacamole and spread over the turkey. Roll burrito style, making sure the ends are tucked inside. Slice in half on the bias and serve.
