1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (7 ounce) can diced green chile peppers, drained
1 cup sour cream
16 (6 inch) corn tortillas, cut into strips
10 ounces cooked turkey, diced
8 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the chicken soup, mushroom soup, chile peppers and sour cream.
  • Line the bottom of a 9x13 inch baking pan with corn tortillas. Follow with a layer of turkey. Pour soup mixture over turkey, sprinkle with 1/2 of the cheese. Repeat layers and top with cheddar cheese. Bake for 30 to 45 minutes or until cheese is browned and bubbly.

2 pounds yellow squash, cut in 1/4 inch slices
2 sweet onions, quartered and separated
1 red bell pepper, cut into 1/2 inch pieces
1 pound fresh mushrooms, sliced
1 (4 ounce) can chopped green chile peppers
2 fresh jalapeno peppers, chopped
1 (8 ounce) package shredded Monterey Jack cheese
1 cup sour cream
¾ cup crushed tortilla chips

Steps:

  • Lightly grease a large casserole dish. Arrange the squash, onions, and red bell pepper in the dish. Place in the microwave, and cook on High 10 minutes, stirring once, until tender.
  • Gently mix the mushrooms, green chile peppers, jalapeno peppers, cheese, and sour cream into the dish. Sprinkle with crushed tortilla chips. Cover dish, and cook in the microwave 10 minutes on Medium-high power, or until cheese is melted and casserole is heated through.

1 cup crushed corn chips (3 oz)

Steps:

  • Heat oven to 350°F. In ungreased 2 1/2-quart casserole, place green beans. In medium bowl, mix soup, dip and chiles; stir into beans. Bake 20 minutes.
  • Remove from oven. Stir mixture; bake 15 to 25 minutes longer or until hot and bubbly. Sprinkle with corn chips; bake 5 to 10 minutes longer or until bubbly around edge.

Number Of Ingredients 14

2 cups (8 ounces) uncooked elbow macaroni
2 pounds ground beef
1 large onion, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles, drained
1-1/2 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
2 cups shredded Monterey Jack cheese
2 jalapeno peppers, seeded and chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.

I love mushrooms so I couldn't resist posting this delicious-sounding recipe from Rachael Ray's recent magazine issue.

2 (8 ounce) packages mushrooms, sliced
1/4 cup beef broth
1 tablespoon flour
1/2 cup heavy cream
1/2 teaspoon cayenne pepper
salt
1/2 cup fresh breadcrumb
1/2 cup parmesan cheese, grated
2 tablespoons butter, cut into pieces

Steps:

  • Preheat oven to 350 degrees.
  • Place the mushrooms in a 2-quart pie pan.
  • In a medium bowl, combine the beef broth and flour; microwave at low power until slightly thickened, 2-3 minutes.
  • Stir in the heavy cream and cayenne; season with salt.
  • Immediately pour the sauce over the mushrooms.
  • In a medium bowl, mix together the breadcrumbs and parmesan.
  • Sprinkle on top of the mushrooms; top with the butter and bake until browned, about 45 minutes.

10- oz red enchilada sauce
1 cup OPA Greek Yogurt Ranch Dressing
2 Tbsp. olive oil
5 green onions (sliced)
2 cloves garlic (minced)
1 cup fresh mushrooms (sliced)
1 1/2 pounds chicken breast (cut into cubes)
salt and pepper (to taste)
3 to matoes (diced)
1/2 cup cilantro (chopped)
1 12-oz bag egg noodles
1 cup shredded swiss cheese

Steps:

  • Preheat oven to 350º F. Spray a 3 quart casserole dish or 9x13 sized pan with cooking spray; set aside.
  • Combine enchilada sauce with OPA Ranch Dressing in a small mixing bowl; set aside.
  • In large pot, heat water and cook egg noodles according to package directions.
  • Meanwhile, in a large saucepan, heat olive oil over medium heat. Add in green onions and garlic. Stir until onions begin to get tender (be careful not to burn garlic!). Add in mushrooms. Sauté until tender.
  • Add in chicken and cook until no longer pink. Drain any extra liquid and season with salt and pepper. Pour in enchilada and ranch mixture as well as tomatoes and cilantro; stir to combine.
  • Drain egg noodles and pour into large bowl. Add in chicken mixture and lightly toss. Pour into prepared casserole dish or pan and top with shredded swiss cheese.
  • Cover with tin foil and place in preheated oven for 20-25 minutes. Serve warm with a sprinkle of cilantro on top and enjoy!

1 cup Frozen Peas
12 oz Pasta of Choice, cooked according to package instructions
1-10 oz Cream of Mushroom Soup
8 oz cup Water
1 cup Mexican Cheese Blend
1/4 cup Bread Crumbs of Choice
2 tbsp Olive Oil
Salt and Pepper
Optional toppings: Green Onions, Sour Cream, Salsa, Avocado, etc

Steps:

  • Preheat Oven to 375 degrees
  • Heat olive oil in a medium sized skillet, add chopped onion and minced garlic. Stir until fragrant
  • Add diced red bell pepper, jalapeno, frozen corn, and frozen peas
  • Stir in Chili Powder and Cumin, cook until peppers have softened
  • Season with salt and pepper
  • In Medium/Large casserole dish add cooked skillet ingredients, tuna, cooked pasta, cream of mushroom, and water
  • Mix with large wooden spoon until equally distributed
  • Sprinkle cheese, followed by breadcrumbs over the top
  • Pop in the oven for 25 minutes
  • When done cooking top with whatever toppings you would like!
