3 teaspoons paprika
3 teaspoons chili powder
1 -1 1/2 teaspoon ground cumin
1 -1 1/2 teaspoon ground coriander
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
2 teaspoons salt
4 (6 ounce) catfish fillets

Steps:

  • Combine the first 7 ingredients; stir well.
  • Rub spice mixture over catfish fillets.
  • Coat gill rack with nonstick cooking spray.
  • Grill fillets over medium heat for 5 minutes per side or until fish flakes easily.
  • Serve with fresh salsa.

4 4-5 ounces fresh or frozen skinless catfish or white-fleshed fish fillets, 1/2- to 3/4-inch thick
1 tablespoon lemon or lime juice
1 teaspoon Famous Dave's Rib Rub, lemon-pepper seasoning, Jamaican jerk seasoning or Cajun seasoning
4 round hard rolls, hoagie buns, kaiser rolls or, other crusty rolls, split and toasted

Steps:

  • Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Brush fish with lemon juice. Sprinkle desired seasoning evenly over all sides of fish.
  • Place fish in a greased grill basket, tucking under any thin edges. (Or, grill fish on the greased rack of the grill.) For a charcoal grill, place grill basket on the rack of an uncovered grill directly over medium coals and grill until fish flakes easily when tested with a fork (allow 4 to 6 minutes per 1/2-inch thickness of fish), turning basket once halfway through grilling. (For a gas grill, preheat grill on high for 10 to 15 minutes. Reduce heat to medium. Place grill basket on grill rack over heat. Cover and grill as above.)
  • Remove fish from grill basket. Serve fillets on buns. Makes 4 servings.

3 medium tomatoes, chopped
1/4 cup chopped onion
2 jalapeno peppers, seeded and finely chopped
2 tablespoons white wine vinegar
3 teaspoons salt, divided
3 teaspoons paprika
3 teaspoons chili powder
1 to 1-1/2 teaspoons ground cumin
1 to 1-1/2 teaspoons ground coriander
3/4 to 1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
4 catfish fillets (6 ounces each)

Steps:

  • For salsa, in a large bowl, combine the tomatoes, onion, jalapenos, vinegar and 1 teaspoon salt. Cover and refrigerate for at least 30 minutes., Combine the paprika, chili powder, cumin, coriander, cayenne, garlic powder and remaining salt; rub over catfish. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. , Grill fillets, uncovered, over medium heat or broil 4 in. from the heat for 5 minutes on each side or until fish flakes easily with a fork. Serve with salsa.

1 teaspoon white pepper
1 teaspoon creole seasoning
1 teaspoon blackened fish seasoning (I like Prudhomme's blackened redfish seasoning)
4 catfish fillets, 1 1/2 to 2 pounds
2 tablespoons lemon juice
lemon wedge (to garnish)

Steps:

  • Combine first 4 ingredients; rub the seasoning on catfish. Sprinkle lemon juice on both sides of fish.
  • Grill, covered with grill lid, over medium hot coals (350-400°F) 5 minutes on each side until fish flakes easy with a fork. Garnish with lemon, if desired.
