Looking for a southwestern cuisine casserole dinner? Then try this sausage, veggie and cornmeal cake topped with salsa and cilantro - ready in 45 minutes.

1/2 cup frozen (thawed) corn, broccoli and red pepper mixture
1 tablespoon sliced ripe olives
2 cooked reduced-fat pork sausage links (2 ounces), chopped
1 cup low-fat milk
1/4 cup fat-free egg product or 2 egg whites
1/3 cup Reduced Fat Bisquick™ mix
2 tablespoons yellow cornmeal
1/2 teaspoon chili powder
1/4 cup reduced-sodium chunky salsa, if desired
Cilantro, if desired

Steps:

  • Heat oven to 425°. Spray two 10- to 12-ounce individual casseroles or custard cups with nonstick cooking spray. Spoon half the corn mixture, olives and sausage into each casserole. Place milk, egg product, baking mix, cornmeal and chili powder in blender. Cover and blend on high speed 15 seconds or until smooth. (Or beat on high speed 1 minute.) Pour evenly over sausage mixture.
  • Bake uncovered 20 to 25 minutes or until knife inserted in center comes out clean. Cool 10 minutes. Top with salsa and cilantro.

1 tablespoon butter
3-1/3 cups fresh corn or 1 package (16 ounces) frozen corn
1 plum tomato, chopped
1 tablespoon lime juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/3 cup minced fresh cilantro

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium-high heat. Add corn; cook and stir until tender, 3-5 minutes. Reduce heat to medium-low; stir in tomato, lime juice, salt and cumin. Cook until heated through, 3-4 minutes. Remove from heat; stir in cilantro.

2 cups cooked whole kernel corn, canned or fresh,drained
1/4 cup finely chopped onion (optional)
1 cup milk
1 beaten egg
1 1/2 cups flour
2 teaspoons baking powder
3/4 teaspoon salt

Steps:

  • Combine corn, onion, milk, with the beaten egg in a bowl.
  • Combine flour, baking powder and salt in a separate bowl.
  • Add corn mixture and mix just enough to moisten.
  • Drop, by 1/4 cupfuls, onto a lightly greased griddle and fry until golden brown on both sides.

Number Of Ingredients 7

1 tablespoon vegetable oil
2 medium red bell peppers, cored, seeded, deribbed and chopped
3 cups fresh corn kernels, blanched (cut from 6 medium ears corn), two 10-ounce packages frozen corn kernels, thawed, or 3 cups canned corn kernels, drained
2 jarred jalapeño peppers, seeded and minced
1/2 cup chopped cilantro or fresh parsley
2 teaspoons kosher salt
Freshly ground black pepper to taste

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the red peppers and cook for 2 minutes, stirring occasionally. Stir in the corn and the remaining ingredients. Cook until heated through, about 1 1/2 minutes.

1 eggs, lightly beaten
1/4 cup 2% milk

1 tablespoon diced pimientos
1/2 cup salsa

Steps:

  • In a small skillet, saute onion and green pepper in oil until tender; set aside. In a large bowl, whisk the flour, cornmeal, sugar, salt, oregano, baking powder, cumin, egg and milk just until combined. Fold in the corn, pimientos and onion mixture., Heat a large skillet coated with cooking spray; drop batter by 1/4 cupfuls into skillet. Cook for 3 minutes on each side or until golden brown. 1 1/2 cups Original Bisquick™ mix
1/2 cup cornmeal
1 cup milk
2 eggs
1/2 cup shredded Monterey Jack cheese (2 oz)
1/2 cup frozen corn, thawed, drained
1/4 cup Old El Paso™ chopped green chiles (from 4.5-oz can)
1 teaspoon chili powder
Sour cream, if desired
Old El Paso™ Thick 'n Chunky salsa, if desired
Shredded lettuce, if desired
Sliced ripe olives, if desired

Steps:

  • Brush griddle or skillet with vegetable oil or spray with cooking spray; heat griddle to 375°F or heat skillet over medium heat.
  • In large bowl, stir Bisquick mix, cornmeal, milk and eggs with wire whisk or fork until blended. Stir in cheese, corn, chiles and chili powder. Pour batter by slightly less than 1/4 cupfuls onto hot griddle; spread slightly.

1/2 cup red bell pepper, finely diced
2 tablespoons parsley, chopped
2 tablespoons green onions, chopped
1 cup pancake batter, prepared
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter, melted
1/4 cup sour cream
fresh chives

Steps:

  • In a bowl, combine corn, bell pepper, parsley and green onion.
  • Stir in the pancake batter, salt and pepper.
  • Heat a non-stick skillet over medium heat and brush pan with butter.
  • Add heaping tablespoons of batter, cook until golden brown on each side. Remove and place in warm over while cooking rest of batter.
  • Serve warm with small dollop of sour cream and garnish with chive.

1/4 cup chopped onion
1/4 cup red bell pepper
1/2 cup margarine, melted
1 large tomatoes, peeled and diced
1 teaspoon salt

Steps:

  • Place frozen corn, green peppers and onions in a container and cover with water.
  • Place on stove top and bring to a boil.
  • Boil for three minutes. Drain.
