SOUTHWEST CHICKEN TORTILLA PINWHEELS



Southwest Chicken Tortilla Pinwheels image

The classic party appetizer with a Southwest twist. These pretty Southwest Chicken Tortilla Pinwheels are made ahead and are waiting for you in the refrigerator to slice and serve at party time. A great addition to your appetizer menu at any time of year.

8 ounces Neufchatel (light) or regular cream cheese, softened
3 tablespoons light sour cream
10 ounce can RoTel Tomatoes, drained slightly
½ teaspoon minced garlic
½ teaspoon all-purpose seasoning salt (like Lawry's Seasoned Salt)
½ teaspoon freshly ground black pepper
1 cup shredded cheddar cheese
5 green onions (thinly sliced)
2.25 ounce can chopped olives
1 jalapeno (seeded as desired and diced (optional))
2 cups cooked shredded chicken (I use rotisserie chicken)
5 large burrito size flour tortillas or wraps in assorted flavors

Steps:

  • Use a mixer to combine cream cheese, sour cream, diced tomatoes, garlic, and seasonings. Use a spoon to stir in cheese, green onion, olives, jalapeno (if using), and shredded chicken.
  • Divide mixture between the tortillas, spreading out evenly leaving about a ½-inch border at the edge. Roll up tightly. Wrap rollups tightly in plastic wrap and transfer to the refrigerator to chill for at least an hour or until ready to serve.
  • Remove from refrigerator and use a sharp knife to slice into 2-inch pieces.

1/2 pound ground beef
1/4 cup finely chopped onion
1/2 cup shredded pepper jack cheese
1/2 cup shredded cheddar cheese
1/4 cup frozen corn, thawed
1/4 cup canned diced tomatoes
2 tablespoons taco seasoning
2 tablespoons finely chopped seeded jalapeno pepper
1 tablespoon finely chopped chipotle peppers in adobo sauce
32 sheets phyllo dough (14x9-inch size)
3/4 cup butter, melted
1/2 cup ranch salad dressing
1/2 cup salsa

Steps:

  • In a small skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 5-7 minutes, breaking up beef into crumbles; drain. Stir in cheeses, corn, tomatoes, taco seasoning, jalapeno and the chipotle pepper; set aside., Preheat oven to 375°. Place 1 sheet phyllo dough on a work surface; brush lightly with butter. Cover with another sheet of phyllo; brush with butter. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) , Cut the 2 layered sheets into three 14x3-in. strips. Place 1 tablespoon filling about 1 inch from corner of each strip. Fold 1 corner of dough over filling, forming a triangle. Fold triangle over, forming another triangle. Continue folding, like a flag, until you reach the end of the strip. Brush end of dough with butter and press onto triangle to seal. Turn triangle and brush top with butter. Repeat with remaining phyllo and filling., Place triangles on greased baking sheets. Bake until golden brown, 12-15 minutes. Combine ranch dressing and salsa; serve with triangles. Freeze option: Freeze cooled triangles in freezer containers. To use, reheat triangles on a greased baking sheet in a preheated 375° oven until crisp and heated through.

1/2 cup vegetable oil
2 large onions, chopped
2 (10 ounce) packages frozen chopped spinach, thawed, drained and squeezed dry
2 tablespoons chopped fresh dill
2 tablespoons all-purpose flour
2 (4 ounce) packages feta cheese, crumbled
4 eggs, lightly beaten
salt and pepper
1 (24 ounce) package phyllo dough
3/4 lb butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat vegetable oil in a large saucepan over medium heat.
  • Slowly cook and stir onions until softened.
  • Mix in spinach, dill and flour.
  • Cook approximately 10 minutes, or until most of the moisture has been absorbed.
  • Remove from heat.
  • Mix in feta cheese, eggs, salt and pepper.
  • Lay phyllo dough flat and brush with butter.
  • Place a small amount of spinach mixture onto each piece of dough.
  • Fold phyllo into triangles around the mixture.
  • Brush with butter.
  • Place filled phyllo dough triangles on a large baking sheet.
  • Bake in the preheated oven 45 minutes to 1 hour, or until golden brown.

1/4 cup finely chopped red bell pepper
1/4 cup finely chopped jalapeno peppers

Steps:

  • Cut cheddar and monterey jack cheeses into small triangles. Top each cracker with some cheddar cheese, monterey jack cheese, bell pepper, jalapeno pepper and olives. Place on baking sheet.
  • Broil 4 to 5 inches from heat for 1 to 3 minutes or until cheese begins to melt.

1 can (16oz) refried beans
1 1/2 cups shredded cheddar cheese
1 cup salsa
1 (4oz) can diced jalapeno peppers, drained
2 pkg. (12oz) Wonton wrappers
oil for deep frying
additional salsa

Steps:

  • In a large skillet over medium heat, cook the beef, onion, salt and pepper until meat is no longer pink; drain. Add the beans, cheese, salsa and jalapenos. Cook and stir over low heat until the cheese is melted. Remove from the heat; cool for 10 minutes. Place a teaspoonful of beef mixture in the center of one wonton wrapper. Moisten edges with water. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold wonton in half, forming a triangle; press edges to seal. Repeat. In an electric skillet or deep fryer, heat oil to 375. Fry wontons, a few at a time, for 2-3 minutes or until golden brown. Drain on paper towels. Serve warm with additional salsa.

These appetizers really look and taste great! And they're really simple to make as well. The recipe can easily be doubled or tripled depending on how big a crowd your are making it for. Try using both green and red tortillas for a nice colorful platter. Cook time is for the filling's chill time.

4 ounces light cream cheese, softened
1/4 cup finely shredded sharp cheddar cheese (or Mexican blend)
2 tablespoons finely sliced scallions
2 tablespoons chunky salsa (home made or your favorite in a jar)
2 tablespoons chopped fresh cilantro
1/2 teaspoon cumin
2 flavored 10-inch flour tortillas (tomato/basil, jalapeno/cilantro, or spinach are some kinds I can find in stores here)
lavash bread, works well also
1 (10 ounce) package baby spinach leaves

Steps:

  • In a bowl, combine cream cheese, shredded cheese, scallion, salsa, cilantro and cumin and mix well.
  • Spread mixture evenly over the two flour tortillas- be sure to reach to the ends.
  • Place a single layer of the baby spinach leaves evenly over the crem cheese mixture.
  • Roll the tortillas tightly.
  • This step is important and will give the"pinwheel" look to your appetizers.
  • Wrap each roll in plastic wrap, and chill for at least an hour, or up to 8 hours.
  • After rolls are chilled, unwrap and cut each one in half.
  • Begin from the smooth half, and cut roll into 1 inch circles.
  • You should get 4 to 5 circles from each tortilla half depending on how well you tortilla"ends" hold together.
  • Arrange your pinwheels cut side up on your serving platter.
  • Cover and chill for up to one hour before serving.
