1/4 cup lime juice
6 garlic cloves, minced
4 teaspoons chili powder
4 teaspoons canola oil
1 teaspoon salt
1 teaspoon crushed red pepper flakes
1 teaspoon pepper
2 beef flank steaks (1 pound each)

Steps:

  • In a small bowl, mix the first seven ingredients; spread over both sides of steaks. Place in a large resealable plastic bag; refrigerate 6 hours or overnight, turning occasionally., Grill steaks, covered, on a greased grill rack over medium heat or broil 4 in. from heat 6-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let steaks stand 5 minutes. Thinly slice across the grain.

This easy roasted southwestern steak paired with roasted baby potatoes makes a hearty, comforting meal. With this recipe you can enjoy steak any time of the year.

1 tablespoons cumin
1 tablespoons chili powder
1 tablespoons smoked paprika
1/2 tablespoon salt
1/2 tablespoon black pepper
1/2 tablespoon cinnamon
4 garlic cloves, minced
1/3 cup olive oil
2-3 pounds skirt or flank steak
3 pounds of baby red potatoes, quartered
3 tbs olive oil
3 cloves of garlic pressed
1 tbs smoked paprika
salt and pepper to taste

Steps:

  • In a small bowl, mash together garlic and salt with the back of a fork. Mix in the spices. Stir in olive oil gradually and blend until a thick paste forms. Rub paste over all sides of steak. Cover steak and let marinate in the refrigerator for 2-12 hours. Preheat oven to 425. Cook covered for 20-30 minutes, depending on desired amount of doneness.

Use for flank or skirt steak (or meat of choice). Make sure that all surfaces of the meat have contact with the marinade. Allow to marinate up to 2 hours; cook as desired. I generally grill a flank steak for sandwiches or tacos when I'm feeling the need for something fun. It's got a Southwestern flair to it, but is still agreeable enough for my 4-year-old's palate. ⅓ cup oil
3 tablespoons lime juice
1 pound boneless beef sirloin steak, cut into 1 1/2-inch cubes
2 ears corn, cut into 1-inch pieces
1 medium red bell pepper, cut into chunks
1 medium red onion, cut into thin wedges

Steps:

  • Mix Seasoning Mix, oil and lime juice in small bowl until well blended. Reserve 2 tablespoons for brushing. Place steak in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well.
  • Refrigerate 30 minutes or longer for extra flavor. Remove steak from marinade. Discard any remaining marinade. Alternately thread steak and vegetables onto skewers.
  • Broil or grill over medium-high heat 8 to 10 minutes or until steak is desired doneness and vegetable are tender, turning occasionally. Brush with reserved marinade halfway through cooking.

Diced potatoes are tossed with southwest spices like cayenne and cumin, then roasted until tender. Garnished with a sprinkling of cilantro, these potatoes are a unique side dish for any Tex-Mex meal.

3 pounds potatoes, cubed
2-3 tablespoons olive oil
3/4 teaspoon chili powder
1/4 teaspoon paprika
1/4 teaspoon cumin
1/8 teaspoon cayenne pepper
Salt and pepper, to taste
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 425 degrees. Grease a large baking sheet with one tablespoon olive oil.
  • Place the potatoes in a large bowl. Add 1-2 tablespoons more olive oil, along with chili powder, paprika, cumin, cayenne and salt and pepper. Toss well to coat potatoes in oil and seasonings.
  • Spread the potatoes in an even layer on prepared baking sheet. Bake for 30-40 minutes (depending on size of potato pieces), turning once halfway through cooking. Garnish with fresh cilantro before serving.

Coffee Spice Rub, recipe follows
Smoky Tomato-Red Chile Salsa, recipe follows
1/4 cup ancho chile powder
1/4 cup finely ground espresso- roast coffee beans
2 tablespoons sweet paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon freshly ground pepper
1 tablespoon dried oregano
1 tablespoon ground coriander
2 teaspoons ground ginger
2 teaspoons arbol chile powder
1/4 cup red wine vinegar
1/4 cup extra-virgin olive oil
2 teaspoons pureed chipotles in adobo sauce
3 large ripe tomatoes, diced
1 small red onion, halved and thinly sliced
1 serrano chile pepper, seeded and finely chopped
1/4 cup chopped fresh cilantro
2 teaspoons honey
Kosher salt and freshly ground pepper

Steps:

  • Season two 20-ounce boneless rib-eyes with salt and pepper and rub with Coffee Spice Rub on one side. Grill rub-side down over high heat, 4 to 5 minutes; flip, reduce the heat to medium or move the steaks to a cooler spot, cover and grill 8 to 10 more minutes (for medium-rare). Serve with Smoky Tomato-Red Chile Salsa.
  • Whisk all of the ingredients in a bowl.
  • Whisk the vinegar, olive oil and chipotle puree in a bowl. Add the remaining ingredients and toss. Season with salt and pepper.
