1 cup chopped onion
2 cans (10 ounces each) enchilada sauce
2 tablespoons all-purpose flour
2 teaspoons chopped chipotle peppers in adobo sauce
1 teaspoon ground cumin
1 teaspoon dried oregano
2-1/2 cups water
2 cups whole milk
1/3 cup butter, cubed
1 teaspoon salt
4 cups mashed potato flakes
2 cans (4 ounces each) chopped green chiles, undrained
2 cups shredded Mexican cheese blend, divided
2 cans (11 ounces each) Mexicorn, drained
2/3 cup chopped green onions

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add the enchilada sauce, flour, chipotle peppers, cumin and oregano; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Meanwhile, in a large saucepan, combine the water, milk, butter and salt; bring to a boil. Remove from the heat. Stir in potato flakes until combined. Add chiles and 1/2 cup cheese., Transfer meat mixture to 2 greased 11x7-in. baking dishes. Layer with corn, mashed potato mixture and remaining cheese. Sprinkle with green onions. Cover and freeze 1 casserole for up to 3 months. , Cover and bake the remaining casserole at 375° for 20 minutes. Uncover and bake 5-10 minutes longer or until bubbly. Sprinkle with paprika., Freeze option: Thaw casserole in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. , Cover and bake at 375° for 20 minutes. Uncover and bake until bubbly, or until a thermometer inserted in center reads 165°, 15-20 minutes longer. Sprinkle with paprika.

1/2 pound lean ground beef (90% lean)
1/2 cup canned diced tomatoes
1/3 cup medium salsa
2 tablespoons canned chopped green chilies
1/2 teaspoon salt, divided

1 cup shredded cheddar cheese, divided
1 cup frozen corn
2 tablespoons butter

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. 1 medium onion, diced
1 small green bell pepper, diced
1 tablespoon minced garlic
1 tablespoon chopped green jalapeño

1/2 teaspoon ground cinnamon
Salt and pepper, to taste
2 cups tomatoes, chopped
1/2 cup cooked corn
1/2 cup black beans, rinsed
1/4 cup chopped cilantro
1 1/2 pounds sweet potatoes, peeled and cut in chunks
2 tablespoons butter
1/2 cup milk

Steps:

  • 1. Heat oil in a large pot over medium heat. Add onion and bell pepper; cook, stirring, for 10 minutes. Add garlic and jalapeño; cook for 2 minutes. Raise heat to medium-high; add beef and brown for 5 minutes.
  • 2. Add tomato paste and spices; cook, stirring, for 2 minutes. Add tomatoes; simmer until liquid reduces, 15 minutes. Add corn, beans, and 4 tablespoons cilantro. Spoon into a 9x9-inch baking dish.
  • 3. Place sweet potatoes in a saucepan with water to cover. Bring to a boil, reduce heat, and simmer for 30 minutes. Drain; mash with butter and milk. Spread mash over the meat mixture. Bake in a 400°F oven until brown, 30 minutes. Garnish with more cilantro.

  • Prepare potatoes as directed on package.

1 tablespoon canola oil
2 large carrots, chopped
1 medium onion, chopped
1 lb extra lean ground beef
2 tablespoons Worcestershire sauce
1/2 teaspoon dried rosemary
1 teaspoon dried basil
1/2 tablespoon dried parsley
1/2 teaspoon pepper
1/4 cup tomato paste
1 cup fat free low-sodium beef broth
1 (16 ounce) can peas, drained
2 lbs potatoes, peeled and cut into 1 inch slices
1 cup skim milk
1 tablespoon light butter

Steps:

  • In a large saucepan or wok, saute carrots and onion in oil on medium-low heat until soft (about 10 minutes).
  • Turn heat up to medium, and add in ground beef. Cook until no longer pink.
  • Add in Worcestershire sauce, beef broth, tomato paste, peas, and spices. Reduce heat and simmer uncovered for 15 minutes.
  • While sauce is simmering, bring a large pot of water to a boil. Add in potatoes. Cook for about 15-20 minutes until tender. Drain water, add in butter and milk, and mash with a potato masher.
  • Preheat oven to 400 degrees.
  • Pour meat and vegetable mixture into a 13x9 casserole baking dish. Top with mashed potatoes.
  • Bake in oven for about 20 minutes until potato topping begins to golden up.

2 garlic cloves, minced
1 carrot, shredded
1/2 lb button mushroom, cleaned and sliced
1 lb extra lean ground sirloin
1 teaspoon dried oregano, crushed
1/2 teaspoon dried thyme, crushed
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground pepper
1 tablespoon unbleached all-purpose flour
1 cup canned fat free low-sodium beef broth (240 ml)
1/3 cup dry red wine or 1/3 cup additional beef broth
2 tablespoons tomato paste (30 ml)
vegetable oil cooking spray
1 lb russet potato, peeled and cut into chunks (480 g)
3 -4 tablespoons skim milk (45 to 60 ml)

Steps:

This is made with a frozen whole wheat pie crust from Whole Foods and topped with pureed cauliflower rather than the traditional mashed potatoes. It's a great recipe if you have left over chicken or potatoes. If you want this to be veggie, simply leave out the chicken and use a mock-chicken bouillon cube. If you don't have potatoes left over it also isn't the end of the world-- the topping is almost completely made of cauliflower and is delicious without. Use your imagination-- a savory pie is a great medium for all manner of leftovers. This recipe is enough to make two pies. I prepared them both at the same time and then froze one for later. To cook the frozen pie, heat oven to only 400 degrees and cook for 30 minutes, then raise the temperature to 425 and cook for an additional 40 minutes, making sure the crust and top does not burn.

Two Whole Wheat Pie Shells, Frozen
For inside the Pie:
1 Chicken Breast, cooked and diced
2/3 large Potato, cooked
1 large carrot
1 stalk celery or 1/4 cup celeriac root
2 shallots or 1/2 onion
1 clove garlic
1/2 cup green peas
1 cup reserve cauliflower water
3-4 Tbs corn starch
1 bouillon cube
herbs de provence or other aromatic
salt and pepper
For Topping:
1 Head Cauliflower
1/3 large potato
1 Tbs earth balance buttery spread
1 clove garlic
1 tsp paprika
1 Tbs mustard powder (or strong mustard, like Colmans)

Steps:

  • Preheat your oven to 425 D fahrenheit.
  • Boil cauliflower with salt until soft and drain, reserving about a cup of the water. Chop all veggies. Saute shallots or onion with garlic, celeriac or celery, and carrots until garlic is browned. Add a bouillon cube to the reserved cauliflower water and in a separate container, mix the corn starch with a Tbs or two of cool water before whisking it into the broth. If it doesn't get (almost) gravy-thick, add an eggwhite and whisk vigorously.
  • In the frozen pie crusts, add half the sauted veggies, half the chicken,half the peas, and 1/3 the potatoes into each. Set aside. In your food processor, add the cauliflower, garlic clove, salt, paprika, mustard powder, the earth balance and the last 1/3 of the potatoes and mix. You may need to add a splash of the broth or milk, but use your judgment. It should be the consistency of mashed potatoes.
  • Over the veggies and chicken in each pie crust, pour half the broth mix and then spread the cauliflower mix over top to cover.
  • Bake for 45- 55 minutes or until the crust and topping are slightly browned. Let cool about 10 minutes before digging in. Enjoy!

Using spicy chorizo and sweet potatoes takes this classic meat and potaoe recipe and adds bold rich new flavors! A great ground pork recipe that's also easy to make.

2 lbs sweet potatoes (cut into thirds - leave skins on)
2 tbsp butter
Salt and pepper
2 tsp smoked paprika
1 tsp ground cumin
1/4 tsp cayenne
1 lbs ground pork chorizo
1/4 cup white wine
1 small onion (chopped)
2 small sweet peppers (minced)
2 cups frozen corn kernels (thawed)
Additional Tabasco as needed

Steps:

  • Add the sweet potatoes to a large pot of cold salted water and bring it to a boil. Boil for 20 minutes, until fork tender.
  • Drain and set aside to cool until safe to handle. When ready, discard skins.
  • Return to the pot, add the butter, and mash with a potato masher or hand mixer. Season with salt and pepper to taste.
  • Preheat the oven to 350 degrees F.
  • In a large, oven safe skillet, toast the paprika, cumin, and cayenne for one minute.
  • Add the chorizo and brown, breaking into small bits, about 7 to 10 minutes.
  • Add the white wine, onion, and pepper. Simmer another 5 minutes until liquid is reduced and almost gone.
  • Stir in the corn and cook until heated through.
  • Spread the mashed sweet potatoes over the top of the skillet and place in the oven to bake for 10 to 15 minutes.
  • Switch the oven to broil and toast the top of the sweet potatoes, 3 to 5 minutes longer.
  • Serve with additional Tabasco sauce if desired.
