- In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add the enchilada sauce, flour, chipotle peppers, cumin and oregano; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Meanwhile, in a large saucepan, combine the water, milk, butter and salt; bring to a boil. Remove from the heat. Stir in potato flakes until combined. Add chiles and 1/2 cup cheese., Transfer meat mixture to 2 greased 11x7-in. baking dishes. Layer with corn, mashed potato mixture and remaining cheese. Sprinkle with green onions. Cover and freeze 1 casserole for up to 3 months. , Cover and bake the remaining casserole at 375° for 20 minutes. Uncover and bake 5-10 minutes longer or until bubbly. Sprinkle with paprika., Freeze option: Thaw casserole in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. , Cover and bake at 375° for 20 minutes. Uncover and bake until bubbly, or until a thermometer inserted in center reads 165°, 15-20 minutes longer. Sprinkle with paprika.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender., Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, salsa, green chilies and 1/4 teaspoon salt and pepper; heat through. Stir in 1/2 cup cheese. Steps:
- 1. Heat oil in a large pot over medium heat. Add onion and bell pepper; cook, stirring, for 10 minutes. Add garlic and jalapeño; cook for 2 minutes. Raise heat to medium-high; add beef and brown for 5 minutes.
- 2. Add tomato paste and spices; cook, stirring, for 2 minutes. Add tomatoes; simmer until liquid reduces, 15 minutes. Add corn, beans, and 4 tablespoons cilantro. Spoon into a 9x9-inch baking dish.
- 3. Place sweet potatoes in a saucepan with water to cover. Bring to a boil, reduce heat, and simmer for 30 minutes. Drain; mash with butter and milk. Spread mash over the meat mixture. Bake in a 400°F oven until brown, 30 minutes. Garnish with more cilantro.

- Prepare potatoes as directed on package.
- Meanwhile, brown meat in large nonstick skillet; drain. Return meat to skillet. Add taco seasoning mix; cook and stir 1 min. Add gravy and corn; mix well. Cook 3 to 4 min. or until heated through, stirring occasionally. Spread onto bottom of 11x8-inch baking dish sprayed with cooking spray.
- Heat oven to 400°F. Add garlic powder to potatoes; mix well. Spread over meat mixture; top with cheese.

LOW FAT SHEPHERD'S PIE!
I got this recipe from the About.com Low Fat Blog and modified it a little bit. My boyfriend, who studied for a year abroad in England, said that his English roommates would be proud! For a twist and some more color, try it with sweet potatoes!

Steps:
- In a large saucepan or wok, saute carrots and onion in oil on medium-low heat until soft (about 10 minutes).
- Turn heat up to medium, and add in ground beef. Cook until no longer pink.
- Add in Worcestershire sauce, beef broth, tomato paste, peas, and spices. Reduce heat and simmer uncovered for 15 minutes.
- While sauce is simmering, bring a large pot of water to a boil. Add in potatoes. Cook for about 15-20 minutes until tender. Drain water, add in butter and milk, and mash with a potato masher.
- Preheat oven to 400 degrees.
- Pour meat and vegetable mixture into a 13x9 casserole baking dish. Top with mashed potatoes.
- Bake in oven for about 20 minutes until potato topping begins to golden up.

- In a large nonstick skillet, sauté onion, garlic, carrot, and mushrooms over medium heat, stirring occasionally, until vegetables are wilted and pan liquids are absorbed, about 6 minutes.
- Crumble in the ground sirloin and continue to cook, stirring occasionally, until beef is well browned, about 5 minutes. Drain off any excess fat.
- Add oregano, thyme, cumin, and pepper. Sprinkle flour over the beef mixture and stir. Add beef broth, wine, and tomato paste. Stir until well combined.
- Line a 2-quart (2 l) casserole with a piece of heavy-duty aluminum foil large enough to completely enclose the casserole. Lightly spray the foil inside the casserole with cooking spray.

- Cover the casserole and freeze until solid. Lift the food out of the casserole (the foil will adhere), wrap securely in the foil, then slip the package into a self-sealing plastic freezer bag or overwrap in additional foil or freezer paper. Label with the casserole name and the date. Use within 3 months.
- When ready to bake, unwrap the casserole and place back in the casserole dish to bake. Defrost completely. Then bake at 375°F (190°C) for 40 to 45 minutes, until golden and bubbly. LOW-FAT CHICKEN SHEPHARD'S PIE
This is made with a frozen whole wheat pie crust from Whole Foods and topped with pureed cauliflower rather than the traditional mashed potatoes. It's a great recipe if you have left over chicken or potatoes. If you want this to be veggie, simply leave out the chicken and use a mock-chicken bouillon cube. If you don't have potatoes left over it also isn't the end of the world-- the topping is almost completely made of cauliflower and is delicious without. Use your imagination-- a savory pie is a great medium for all manner of leftovers. This recipe is enough to make two pies. I prepared them both at the same time and then froze one for later. To cook the frozen pie, heat oven to only 400 degrees and cook for 30 minutes, then raise the temperature to 425 and cook for an additional 40 minutes, making sure the crust and top does not burn.

- Preheat your oven to 425 D fahrenheit.
- Boil cauliflower with salt until soft and drain, reserving about a cup of the water. Chop all veggies. Saute shallots or onion with garlic, celeriac or celery, and carrots until garlic is browned. Add a bouillon cube to the reserved cauliflower water and in a separate container, mix the corn starch with a Tbs or two of cool water before whisking it into the broth. If it doesn't get (almost) gravy-thick, add an eggwhite and whisk vigorously.
- In the frozen pie crusts, add half the sauted veggies, half the chicken,half the peas, and 1/3 the potatoes into each. Set aside. In your food processor, add the cauliflower, garlic clove, salt, paprika, mustard powder, the earth balance and the last 1/3 of the potatoes and mix. You may need to add a splash of the broth or milk, but use your judgment. It should be the consistency of mashed potatoes.
- Over the veggies and chicken in each pie crust, pour half the broth mix and then spread the cauliflower mix over top to cover.
- Bake for 45- 55 minutes or until the crust and topping are slightly browned. Let cool about 10 minutes before digging in. Enjoy!

CHORIZO SHEPHERD'S PIE

- Add the sweet potatoes to a large pot of cold salted water and bring it to a boil. Boil for 20 minutes, until fork tender.
- Drain and set aside to cool until safe to handle. When ready, discard skins.
- Return to the pot, add the butter, and mash with a potato masher or hand mixer. Season with salt and pepper to taste.
- Preheat the oven to 350 degrees F.
- In a large, oven safe skillet, toast the paprika, cumin, and cayenne for one minute.
- Add the chorizo and brown, breaking into small bits, about 7 to 10 minutes.
- Add the white wine, onion, and pepper. Simmer another 5 minutes until liquid is reduced and almost gone.
- Stir in the corn and cook until heated through.

- Switch the oven to broil and toast the top of the sweet potatoes, 3 to 5 minutes longer.

- PREP OVEN AND DISH: Move oven rack to middle position and preheat to 400 degrees F. Lightly spray 9-inch deep-dish pie plate with nonstick cooking spray; set aside.
