1 avocado, halved
1 clove garlic
½ teaspoon salt
½ teaspoon pepper
¼ cup olive oil
1 tablespoon fresh cilantro
1 lime, juiced
1 head lettuce, chopped
1 cup bell pepper, chopped
¼ cup fresh cilantro
15 oz black beans, 1 can
½ cup red onion, chopped
15 oz corn, 1 can
¼ cup scallion
¾ cup tomato, chopped

Steps:

  • Add all dressing ingredients to a blender, blend until smooth.
  • In a large bowl add lettuce, peppers, cilantro, beans, onion, corn, green onion, and tomatoes.
  • Top with prepared dressing; toss to coat.
  • Enjoy!

I have been preparing this salad for the past 6 or 7 years and I still love it just as much as the first time I made it. These ingredients just come together so beautifully in this dish you'll be amazed at the reactions each time you serve it. And unlike many salads, it is even great the next day as leftovers!

3 romaine lettuce hearts, shredded
1/2 cup red onion, diced
4 roma tomatoes, chopped
1 (15 ounce) can black beans, rinsed and drained
2 cups four-cheese Mexican blend cheese
1 (15 ounce) can whole kernel corn, drained
3 cups tortilla chips, broken and simply crushed between your hands
1/3 cup fresh cilantro leaves
1/2 cup fresh lime juice, usually about 4 limes
1/2 cup canola oil
1/2 cup sour cream
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Prepare dressing first by combining in food processor or blender fresh cilantro, lime juice, sour cream, sugar, salt and pepper.
  • Then slowly drizzle in oil until fully combined.
  • Pour dressing into container and chill in fridge for several hours for flavors to meld.
  • In large glass/acrylic bowl layer lettuce, then tomatoes, onion, black bean, cheese, and corn.
  • (At this point the salad can wait for up to 8 hours before serving if you wish to be a step ahead later on.).
  • Before serving sprinkle broken chips over corn layer. Then pour dressing over chips and toss completely.
  • Enjoy!

1 1/2 cup dried quinoa
1 cup fresh corn
1 cup black beans, (drained and rinsed)
1 red bell pepper, (diced)
1 cup red onions, (diced)
1 jalapeño, (seeded and sliced)
1/4 cup olive oil
1/4 cup cilantro, (minced)
juice of 2 limes
2 tsp. cumin
1 tsp. salt, (to taste)

Steps:

  • Rinse quinoa and set aside. Bring 2 3/4 cups water to a boil. Add quinoa and reduce heat to a simmer. Simmer for about 20 minutes, until water has evaporated and quinoa is cooked. Transfer to a large bowl and fluff with a fork. Place in the refrigerator to cool for at least 20 minutes.
  • Dice the onions, bell peppers, and jalapeno pepper. Rinse the black beans and corn. Set aside.
  • While quinoa is cooking, mix together salad dressing ingredients. Once the quinoa is no longer hot to the touch, stir in the salad dressing so that the quinoa is fully coated.
  • Add the vegetables, black beans, and corn. Taste and adjust seasonings. Cover and place in refrigerator until ready to serve.

salt & pepper to season
1 head of green leaf lettuce, thinly sliced
1 piquillo pepper, juilienned
1/2 cup cherry tomatoes, halved
1/2 cup unsalted sweet corn (I used a can)
1/2 cup low sodium black beans (I used a can)
1/2 cup orange bell pepper, diced
1/2 avocado, sliced
cilantro for garnish
1 cup fresh cilantro
1 avocado
1/4 cup fresh lime juice
1 tablespoon red wine vinegar
1 tablespoon olive oil
1/4 teaspoon red pepper flakes
1/4 teaspoon ground cumin
salt and pepper to taste

Steps:

  • Preheat the grill to medium high heat.
  • In a small food processor, add fresh cilantro, avocado, lime juice, red wine vinegar, olive oil, red pepper flakes, and ground cumin. Blend until smooth and creamy. Add salt and pepper to taste.
  • Season the steak on both sides with salt and pepper.
  • Place the steak on the grill and grill each side for 3-4 minutes. Remove and let rest for 3 minutes, then thinly slice.
  • Assemble the salad: in a large bowl add lettuce, piquillo pepper, cherry tomatoes, corn, black beans, orange bell peppers, avocado, and thinly sliced steak. Serve with Cilantro Avocado Dressing.

1 orange bell pepper
10 oz. cherry/grape tomatoes (about 1 pint)
2 cups sweet corn, cooked
5 green onions
1 cup loosely packed cilantro (stems removed and roughly chopped)
1/2 avocado (or 1/2 cup plain vegan yogurt)
2 Tbsp. fresh lime juice (about 1 lime, more to taste)
1-2 garlic cloves
3 Tbsp. olive oil (for oil-free, sub a little water to thin)
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Recommended: agave & cumin to taste

Steps:

  • Make the dressing: Blend all dressing ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary. (I like the addition of a little cumin, and also agave to sweeten.)
  • Chop romaine, bell pepper, tomatoes, and green onions. Rinse and drain black beans.
