Steps:
- Put the bread in a large bowl with the milk and let soak until the liquid is absorbed. Add the beef, eggs, black pepper, onion, garlic, and parsley.
- Thoroughly mix the ingredients. Shape the mixture firmly into 50 (1 inch) meatballs, placing 1 olive in the center of each meatball.
- Put the meatballs in a 9x13-inch baking dish. Bake at 350°F for 25 minutes or until meatballs are cooked through.
- Remove the meatballs with a slotted spoon and put in a 4 quart sauce pot. Add the salsa. Cook over medium heat until hot and bubbling. Serve with toothpicks.

MEATBALL SALAD

- For the meatballs: Combine the Parmesan, ricotta, breadcrumbs, milk and egg in a medium bowl and stir well to combine and allow the breadcrumbs to absorb the liquid. Add the pork, sausage and salt and use your hands to mix gently to combine.
- Heat a medium straight sided skillet over medium heat. Add enough oil to cover the bottom of the skillet. Roll heaping tablespoons of the meat mixture into balls and place in the hot oil. Add as many as the skillet will allow without overcrowding, working in two batches if needed. Brown the balls on all sides, rotating as needed, about 8 minutes. Remove the balls to a plate and pour off the oil from the skillet. Add the marinara and 1/4 cup water to the skillet and bring to a simmer. Return the balls to the sauce and cover the skillet. Allow to simmer for 15 minutes. Remove from the heat.
- For the salad: Meanwhile, toss together the arugula, Parmesan shavings, olive oil and lemon juice in a medium bowl.
- Spoon 5 or 6 meatballs into a bowl, then top with some of the salad and serve. Repeat to make 4 more servings.
SPICY SOUTHWESTERN MEATBALL SOUP
This soup is a little bit of work, but well worth it in the end. Garnish with lime wedges, sour cream, diced avocado, cilantro sprigs on top. Recipe was adopted and has been edited by me February 2005. This recipe is courtesy of Souther Home by Design.

- Combine ground beef, breadcrumbs, fajita seasoning, cumin, salt, cilantro, and egg until well-combined. Shape mixture into 1-inch meatballs and arrange on a lightly greased baking sheet.
- Bake at 400°F for 12 to 15 minutes or until browned, turning occasionally.
- Sauté onion and carrot in hot oil in a Dutch oven for 4 to 5 minutes or until tender.
- Add zucchini, garlic, cumin, coriander, tomato paste, chipotle pepper, and adobo sauce; cook for 2 to 3 minutes, stirring constantly (Do not let garlic brown).
- Stir in meatballs, chicken broth, diced tomatoes, black beans, corn, and salt.
- Bring to a boil; reduce heat, and simmer, covered, 35 minutes.
- Stir in cilantro.
- Garnish as desired with lime wedges, sour cream, diced avocado, or cilantro sprigs and enjoy!

- Mix all salad ingredients together in large serving bowl.
- Mix all dressing ingredients together in a cup or small bowl.
- Toss with dressing or serve on the side.
- If preparing ahead of time, wait to add chips so they stay crisp.

Steps:
- In a large skillet, heat 1 tablespoon oil over medium heat.
- Add onion and chili powder; cook about 5-7 minutes, stirring frequently until onion is tender and well coated with chili powder.
- Remove from heat and let cool slightly.
- Spoon onion into large bowl; wipe out skillet and set aside.
- To the onions, add ground beef, bread crumbs, egg, and salt; blend well.
- Shape mixture into 1-inch balls.
- To skillet, add 2 tablespoons oil and heat over medium-high heat.
- Add meatballs and cook until well browned on all sides.
- Stir in taco sauce and tomato; bring to a boil.
- Reduce heat and simmer 5-10 minutes.
- To serve: On individual plates, arrange lettuce; spoon meat ball mixture over lettuce; sprinkle with cheese.
- Serve immediately.
