ANTHONY BOURDAIN'S NEW MEXICO BEEF CHILI RECIPE

Anthony Bourdain's New Mexico Beef Chili Recipe image

This is Anthony Bourdain's Beef Chili Recipe, New Mexico Style. Deep and richly flavored, this is a hearty chili stew featuring beef chuck and New Mexico Hatch chile and poblano peppers.

Provided by Lea Ann Brown

Categories     Main Course Beef

Time 3h30m

Number Of Ingredients 15

4 poblano peppers (roasted, chopped)
1 pound Hatch chili peppers (roasted, chopped)
½ cup all-purpose flour
2 pounds beef chuck (cut into 1-inch cubes)
2 to 3 tablespoons vegetable oil
1 large yellow onion (coarsely chopped)
5 garlic cloves (minced)
2 jalapeño peppers (seeds removed and chopped)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 1/2 teaspoons dried Mexican oregano
2 tablespoons tomato paste
1 cup beer
2 cups veal or beef stock
Chopped cilantro for garnish

Steps:

  • Preheat broiler and position rack as close to the broiler heat source. Line the bottom of a broiling pan with aluminum foil (this will catch any juices from the peppers). Place poblano peppers on top of the broiling pan. Place under the broiler. Let cook until peppers' skin is blackened, turning peppers with tongs so they blacken on all sides, approximately 10 to 15 minutes.
  • Place peppers in a large plastic bag and loosely seal for 30 minutes. Remove and discard as much of the blackened skin as possible along with the stems and seeds. Use your hands. Don't rinse peppers under water, you'll rinse away flavor. If you want your chili to be hotter, leave in some of the seeds (source of the peppers' heat). Coarsely chop peppers and set aside.
  • Repeat this roasting process for the hatch chile peppers. If you're using frozen (no need to thaw) or canned peppers (no need to drain), they are likely already roasted, peeled and seeded. In some cases they are already coarsely chopped, too - if not, then coarsely chop them and set aside.
  • In a large mixing bowl, whisk together flour and about 2 teaspoons each of salt and freshly ground pepper. Toss beef in the flour mixture to coat. Heat 2 tablespoons of oil in a Dutch oven (at least 5 quarts) over medium-high heat until just smoking. Add beef in batches and sear until dark brown on all sides. Be sure not to crowd beef too much. Using tongs, remove cooked beef to a plate. Continue to cook remaining beef in batches, so you're not crowding the beef pieces.
  • Add onion, garlic and jalapeño peppers to the pot and season with salt and freshly ground pepper. Cook over medium-high heat, scraping the bottom of the pot with a wooden spoon to dislodge browned bits. Add an additional tablespoon of oil if necessary to keep the caramelized bits of onion mixture and beef (know as "fond") from scorching. You can also add a splash of stock at this point. Cook for about 5 to 7 minutes or until the onion has begun to soften and brown.
  • Add cumin, coriander and Mexican oregano and cook for an additional 2 minutes.
  • Stir in tomato paste and beer. Bring to a boil and cook until liquid has reduced by about two-thirds. Scraping the bottom of the pan to loosen any bits of fond.
  • Stir in stock and return beef to pot. Add reserved poblano and hatch chili peppers. Bring to a boil and reduce heat to a simmer. Cook, covered for 2-1/2 hours or until beef is fork tender.
  • Remove chili from heat and serve in bowls with chopped cilantro, corn chips or flour tortillas and a wedge of lime. A splash of acid always brightens the flavor.

SOUTHWESTERN COWBOY BEANS

Southwestern Cowboy Beans image

This is a dish that is great for those days when it is just a lot of work to cook. Can be prepared ahead and frozen or simply prepared and eaten. My father taught me how to do this as a child and he loved to eat it and make it. It is a great recipe for those that love the outdoors and really would rather not have to make a huge dinner after a hike! I love it because it is filling, has a lovely southwestern flavor - old southwest, and because it is a wonderful protein, iron and potassium meal! *Note, if the beans are not completely crushable (pressed between fingers and mashed completely) they will not taste good. When sorting, do not put in beans that have been broken in half or have any kind of serious flaw. This will make your beans bitter. Make sure that you do not add too much water or too little as it will make it watery or burn.

Provided by Lori5640

Categories     Beans

Time 2h40m

Yield 6-8 serving(s)

Number Of Ingredients 8

3 cups pinto beans, sorted, washed and soaked
2 lbs lean ground meat or 2 lbs stew meat
1 diced onion, use the kind you like
1 1/2 teaspoons sage
2 teaspoons sea salt (to taste)
1 teaspoon thyme
2 tablespoons chili powder
water, to just cover

Steps:

  • Sort, wash and soak beans over night.
  • In a large pot, add all ingredients in no particular order. Breaking up the meat into smaller pieces.
  • Add water and cook at a medium temperature.
  • Cover, allow to cook 2 - 4 hours depending on the amount cooked, until beans can be pressed between your fingers.
  • Serve hot with cornbread or tortillas for the best tummy filler there is!

SOUTHWEST COWBOY CHILI

SOUTHWEST COWBOY CHILI image

Categories     Soup/Stew     Beef     Dinner

Yield 6 servings

Number Of Ingredients 18

1 (4-pound) beef chuck roast, cut into 2-inch cubes
2 teaspoons kosher salt
4 slices bacon, cut into 1/4-inch pieces
1 medium yellow onion, cut into 1/2-inch dice
2 tablespoons tomato paste
1/4 cup ancho chile powder
2 tablespoons ground cumin
1 tablespoon dried oregano
2 teaspoons smoked paprika
6 cups Bone Broth or chicken stock, divided
1 ounce unsweetened chocolate, shaved
4 garlic cloves, minced
Juice from 1 small lime
Freshly ground black pepper
1/2 medium white onion, cut into 1/4-inch pieces (optional)
1/2 cup minced fresh cilantro (optional)
1/2 cup julienned radishes (optional)
2 small limes, quartered (optional)

Steps:

  • Preheat the oven to 275°F. In a large bowl, toss the beef with the salt and set aside. Cook the bacon in a large Dutch oven over medium heat. Stir occasionally to ensure even browning. Once it's crisp, transfer the crunchy bacon to a platter with a slotted spoon. Increase the heat to medium-high. In batches, add the beef in a single layer to the bacon drippings in the Dutch oven, and brown the meat on two sides, about 2 minutes per side. Transfer the beef to a plate. Lower the heat to medium, and add the yellow onion and tomato paste. Sauté until the onion is tender and translucent, about 5 minutes. In the meantime, combine the chile powder, cumin, oregano, paprika, and 1/2 cup of the stock in a small bowl. Mix until smooth, and then stir in the chocolate shavings. When the onion is soft, stir in the garlic and chili-chocolate mixture, and cook for 1 minute or until fragrant. Add the seared beef, cooked bacon, the remaining 5 1/2 cups broth, and the lime juice. Stir well. Increase the heat to high and bring the contents of the Dutch oven up to a boil. Cover, but leave the lid slightly ajar. Place the pot in the oven, and cook for 3 hours or until the meat is fork-tender. Season with salt and pepper, and place the chili in the refrigerator overnight or up to 5 days to enable the flavors to meld. Reheat on the stove, and if desired, top with chopped white onion, cilantro, radishes, and limes.

COWBOY CHILI RECIPE

Cowboy Chili Recipe image

Vibrantly red and earthy with kidney beans, New Mexico Chile Powder and tomato paste, this chili is a perfect balance of Southwestern flavors. Hearty and robust, keeping ingredients simple and pure gives this Cowboy Chili Recipe its unique layers of flavor.

Provided by Lea Ann Brown

Categories     Soup, Stews and Chilis

Number Of Ingredients 12

1 pound dried kidney beans (Cooked)
3 cups Beef broth (or water)
2 Tablespoons lard (or bacon grease)
1 Pound lean ground beef (93% lean - 7% fat works well here)
1 large sweet onion (chopped. About 1 - 1 1/2 cups)
3 cloves garlic (minced)
3 Tablespoons cumin powder
2 Tablespoons Chile Powder
6 ounces tomato paste (Good quality. Either Cento or Muir Glen.)
2 cups water
salt and pepper to taste
Garnishes listed below

Steps:

  • Soak dried beans overnight in water. Use enough water to cover the beans by an inch or two. The next morning, drain the beans. Using a crock pot or Dutch oven, add the beef broth, the lard or bacon grease to the beans and simmer covered until tender. Depending on the age of the beans, this could take a 2-3 hours in a Dutch oven, or 5 hours in a crockpot on low.
  • Once the beans are tender, start making the chili. Brown the meat in a large skillet. When meat is about half browned, add the onion and cook, stirring often until onion is starting to become soft. Add the garlic and cook until fragrant. About 1 minute.
  • Add the cumin and chile powder to the ground beef and stir till everything is coated. If it's not spicy enough add more red chile powder. The original recipe calls for 4 tablespoons. I used 2 tablespoons. It all depends on the heat of the chile powder and your heat tolerance level. Cook, stirring for about 2 minutes. When all of this is a nice deep red color, then add the tomato paste and water.
  • Simmer gently for 15 minutes. You'll have a mixture that reminds you of Sloppy Joes. Add this mixture to the cooked beans (don't drain beef broth from the beans). Add two cups water and simmer for 15 minutes in a Dutch oven.. If you're using your crockpot, add the beef mixture and two cups water to the cooked beans and cook on low for 2 hours.
  • Serve with garnish and cornbread. Garnishes can include chopped avocado, sliced jalapeno peppers, sour cream, grated cheddar cheese and cilantro.
