SOUTHWESTERN STUFFED BELL PEPPERS



Southwestern Stuffed Bell Peppers image

Classic Southwestern flavors make this rainbow of bell peppers a favorite, healthy dinner.

1 pound lean ground beef (, 90% lean)
1 medium onion (, diced (about 1 1/2 cups))
2 ribs celery (, diced (about 3/4 cup))
2 cloves garlic (, minced)
1 large Select One tomato (, chopped)
2 tablespoons tomato paste
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon kosher salt
1 15- ounce can black beans
1 7- ounce can roasted green chiles
1 cup frozen corn (, defrosted)
1 1/2 cups cooked long grain rice
1/4 cup cilantro leaves (, chopped plus more for garnish)
6 Select One rainbow bell peppers
1 cup spicy cheese such as Chipotle Gouda or Pepper Jack

Steps:

  • Preheat the oven to 350°F.
  • Brown the ground beef in a large fry pan over medium high heat for 5 minutes or until cooked almost through. Add the chopped onion, celery, and garlic and cook until vegetables are softened, about 5 minutes. Stir in the diced tomato, tomato paste, cumin, chile powder and kosher salt and cook for another 4-5 minutes. Stir in the black beans, green chiles, corn, cooked rice and chopped cilantro.
  • Meanwhile, cut off the tops of the peppers and spoon out the ribs and seeds, then rinse. Lightly sprinkle the inside of the peppers with kosher salt and place in a microwave safe dish with ¼ cup water. Cover with plastic wrap and microwave for 5 minutes or until they start to soften.
  • Transfer to a 3 quart baking dish and fill the peppers with the hot meat and rice mixture. Sprinkle the tops with cheese and bake for 20 minutes or until peppers are tender and cheese is browned. Garnish with additional chopped cilantro. Serve hot.

Steps:

  • Make Cornbread Stuffing, cooking 1 cup corn, 2 cups cubed winter squash and 3 cups chopped roasted poblanos with the onions. Toss in 1/2 cup toasted pumpkin seeds with the bread.
  • Cornbread Stuffing: Melt 1 stick butter in a large skillet over medium heat. Add 2 cups each diced onion and celery and 1 tablespoon each minced sage and thyme; add salt and pepper and cook 5 minutes. Add 3 cups chicken or turkey broth and bring to a simmer. Beat 2 eggs with 1/4 cup chopped parsley in a large bowl; add 6 cups cubed stale cornbread and 8 cups white bread, then pour in the vegetable-broth mixture and toss. Transfer to a buttered baking dish and dot with butter. Cover and bake at 375 degrees F, 30 minutes; uncover and bake until golden, about 30 more minutes.

3 cups cornmeal
2 tablespoons baking powder
2 tablespoons sugar
1 tablespoon red pepper flakes
2 1/2 teaspoons kosher salt
2 cups milk
1/2 cup canola oil
One 14.75-ounce can cream-style corn
1 cup grated sharp Cheddar
1 cup finely diced yellow onion (about 1 small)
1/2 cup diced green bell pepper

Steps:

  • Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with nonstick spray and place in the oven while you make the batter.
  • In a large bowl, combine the cornmeal, baking powder, sugar, red pepper flakes and salt. Stir to combine. Add the milk, oil and corn and stir until just combined. Stir in the Cheddar, onions and green peppers and stir just until incorporated.
  • Carefully remove the hot muffin tin from the oven and ladle the batter into it. Return to the oven and bake until a toothpick comes out clean, about 15 minutes. Let cool 5 minutes. Remove from the muffin tin and serve.

1 cup celery (chopped)

10 ounces Old El Paso Mild Red Enchilada Sauce ((or 1 can of preferred red enchilada sauce))
4.5 ounces Old El Paso Chopped Green Chiles
3.8 ounces sliced black olives
1/2 cup cilantro (chopped, + extra for garnish)
14 ounces dried cornbread stuffing
2 cups shredded "Mexican blend" cheese
1 1/4 cups chicken stock (or vegetable)
salt and pepper

Steps:

  • Preheat the oven to 350 degrees F. Place a large deep skillet over medium heat. Add the butter, onion, garlic, celery and chopped bell peppers. Saute and stir for 3-5 minutes, until soft. Then turn off the heat and salt and pepper to taste.
  • Pour the Old El Paso Mexican Cooking Sauce into the skillet, followed by the green chiles, olives, cilantro, and dried stuffing. Stir to combine. Then toss in the shredded cheese, reserving a handful for the top.
  • Spray a 9x13-inch baking dish with nonstick cooking spray. Then spoon the cornbread stuffing into the dish. Drizzle the stock over the top of the stuffing, covering the entire dish. Sprinkle the top with the remaining cheese and a little more cilantro.

2 1-pound packages frozen petite yellow corn kernels, thawed
1 1/4 cups chopped green onions
2/3 cup chopped fresh cilantro
Buttermilk Corn Bread , 1 day old
4 large eggs
1/4 cup sugar
2 1/4 teaspoons salt
1/2 teaspoon ground black pepper

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Add all chilies; sauté until beginning to soften, about 8 minutes. Stir in 1 package corn and green onions. Transfer to very large bowl. Mix in cilantro. Coarsely crumble corn bread into vegetable mixture; toss to blend.
  • Blend second package of corn, eggs, sugar, salt, and pepper in processor to coarse puree. Stir mixture into stuffing.
  • To bake stuffing in turkey:
  • Loosely fill neck and main cavities of turkey with stuffing. Add enough broth to remaining stuffing to moisten slightly (1/4 to 3/4 cup, depending on amount of remaining stuffing). Generously butter baking dish. Spoon remaining stuffing into prepared dish. Cover with buttered foil, buttered side down. Bake stuffing in dish along side turkey until heated through, about 25 minutes. Uncover stuffing. Bake until top of stuffing is slightly crisp and golden, about 15 minutes longer.
  • To bake all of stuffing in baking dish:
  • Preheat oven to 350°F. Generously butter 13x9x2-inch glass baking dish, depending on recipe. Transfer stuffing to prepared dish. Cover with buttered foil, buttered side down. Bake until heated through, about 40 minutes. Uncover and bake until top is slightly crisp and golden, about 20 minutes longer.

Over the years I've developed my own version of cornbread dressing. We like it spicey but you can control the 'heat' by omitting the jalapenos. In a pinch I've even made with a small can of diced mild green chiles. This is a very forgiving dish so feel free to experiment . . . add some corn, etc.

2 cups diced onions
2 cups diced celery
1 cup diced and seeded poblano pepper
2 jalapenos, diced and seeded (optional)

4 cups finely crumbled toasted bread
4 cups finely crumbled dried cornbread
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 tablespoon dried sage (adjust to taste)
2 teaspoons poultry seasoning

Steps:

  • Preheat oven to 350 degrees f.
  • To a large skillet add butter and melt over medium heat.
  • Add onions and celery to skillet and cook for approximately 2 minutes, stirring occasionally.
  • Add polblano and jalapenos and continue cooking until onions are transparent (about two additional minutes).
  • Combine cooked vegetables, cilantro, bread crumbs, and spices in the large bowl, stir in the beaten eggs and broth and mix well(If still dry,add a little water).
  • Spray a casserole dish with cooking spray and fill with dressing mixture.
  • Cover and bake for one hour in a preheated 350 degree oven.
  • Remove cover and bake for an additional 10-15 minutes, to lightly brown top of dressing.

16 ounces frozen corn
1/2 cup toasted pine nuts,coarsely chopped
cornbread, baked and crumbled ( I usually use 2 boxes of Jif cornbread mix)
2 cups shredded cheddar cheese
1/3 cup chopped cilantro
1-1/2 tbsp poultry seasoning
1-1/2 tsp sage
1-1/ tsp chili powder
1 tsp oregano, crumbled
1-1/2 tsps cumin ( I always use more, because I really like it)
1 cup chopped green chiles
1-1/2 cups chicken stock
1 pound chorizo

Steps:

  • Saute chorizo and set aside. Saute onion and pepper in choizo drippings, until soft. Transfer, using a slotted spoon to a small bowl. Add 2 tbsp butter to pan, add corn and cook for ten minutes. Combine crumbled corn bread, pine nuts, cheese and spices. Toss well to mix. Add chilies, reserved onion and pepper mixture, and corn to cornbread mixture, add 2 tbsp softened butter and one cup chicken stock. Toss again......Spoon into casserole and drizzle with extra one half cup stock. Cover with buttered foil and bake 40 to 45 minutes until hot. Serve at once.....
