2 teaspoons garlic powder
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon paprika
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons lime juice

Steps:

  • In a small bowl, combine the garlic powder, chili powder, salt and paprika. Rub over both sides of chicken. In a large skillet coated with cooking spray, brown chicken on both sides; drizzle with lime juice. Cover and cook for 5-7 minutes or until chicken juices run clear.

I discovered this recipe one Sunday afternoon in the WW magazine when I was looking to find a different way to prepare chicken. This recipe is very easy and very tasty. I served it with rice and green beans. The chicken can be cooked immediately after using the rub, but for a more intense flavor, marinate for a couple of hours in the fridge or overnight.This chicken has a sweet and spicy flavor and can be served with a squeeze of fresh lime.

1/4 cup packed light brown sugar
2 teaspoons salt
1 1/2 teaspoons chili powder
1 teaspoon garlic powder

1 (3 lb) chicken, cut into 8 pieces

Steps:

  • Preheat oven to 375 degrees F. Or prepare grill for direct-and indirect-heat cooking.
  • Combine first 8 ingredients;reserve. Line roasting pan with foil. Rub sugar mixture over all sides of chicken;place in pan. Coat chicken with cooking spray.
  • Roast chicken in oven until no longer pink near bone, about 45-60 minutes.Or place chicken meaty side down over direct heat;cook until just browned, 4-5 minutes. Turn;place over indirect heat. 4 boneless skinless chicken breasts
2 tbsp olive oil (divided)
1 lime (juiced, and zested)
1/4 cup cilantro leaves (chopped)
3-4 cloves garlic (minced)
1 tsp ground cumin
1/2 tsp chili powder
1/2 tsp kosher salt
1/4 tsp ground black pepper
4 cups packed romaine lettuce or 1 large head (chopped)
2 cups cherry tomatoes (halved)
8 oz black beans (one can, rinsed and drained)
8 oz corn (one can, rinsed and drained)
1 red onion (thinly sliced)
1 large avocado (chopped)
1/4 cup cilantro (chopped)
1/4 cup olive oil
1 lime (juiced and zest)
2 cloves garlic (minced)
kosher salt and ground black pepper (to taste)

Steps:

  • Place the chicken in a shallow dish and add 1 tbsp of the oil, lime juice plus zest, garlic, and seasonings. Rub the chicken well, then cover the dish and allow it to marinate for at least 30 minutes over the counter. If time allows, you can marinate in the fridge overnight.
  • Meanwhile, combine all dressing ingredients into a small bowl and whisk until smooth.
  • Heat a non-stick frying pan over medium-high heat and add the other 1 tbsp of oil. Add the chicken and cook for 5 minutes on each side, or until golden brown and cooked through. Allow the chicken to slightly cool, then slice it.
  • While the chicken cools, add all the salad ingredients to a bowl.
  • Top with juicy chicken and drizzle the dressing over.

1/2 tablespoon mild paprika (or as needed)
1 teaspoon sea salt

3/4 cup red onion, finely chopped
3/4 cup celery, finely chopped
3/4 cup red pepper, finely chopped
2 large garlic cloves, pressed
1/4 cup dry white wine

Steps:

  • Preheat oven to 350ºF. Season chicken generously with paprika, salt and pepper; set aside. In a large ovenproof skillet over medium-high heat, add oil and clarified butter. Place thighs skin side down and cook until brown, about 4 to 5 minutes per side; remove and place them on a plate.
  • Reduce heat to medium and holding paper towels with tongs, remove most of the fat in the skillet, leaving about 1 ½ tablespoons Add red onion and celery; sauté for 3 minutes. ¼ cup lime juice

1 Tablespoon minced garlic

Lime wedges to squeeze over the top when cooked

Steps:

  • Combine lime juice, chili powder, paprika, minced garlic, cumin, salt, and pepper into a large container or Zip-lock bag. Mix all ingredients together and add chicken. Marinate for at least 4 hours, can be refrigerated over night.
  • Grill chicken 5 to 6 minutes per side. Chicken is done when it reaches an internal temperature of 165 degrees F and chicken is cooked through.
