- Spray 5-quart slow cooker with cooking spray. In small bowl, mix taco seasoning mix, cumin, salt and red pepper. Sprinkle both sides of chicken thighs with seasoning mixture; arrange in slow cooker. Pour tomatoes, beans and corn over chicken in slow cooker. Cover; cook on High heat setting 2 to 2 1/2 hours or until juice of chicken is clear when thickest part is cut (at least 165°F). Remove chicken and, using two forks, shred into bite-size pieces.
- Add Velveeta™ and Cheddar cheeses to slow cooker. Cover; cook 15 minutes. Beat with whisk until cheeses have melted into sauce. Add rice and shredded chicken; stir to combine. Cover; cook about 10 minutes or until hot. Garnish with cilantro.

- Preheat the oven to 325 degrees. Lay a large piece of aluminum foil on the counter.
- Combine the salt, pepper, cumin, chili powder and oregano in a small bowl.
- Arrange the chicken on the foil in a single layer. Use half the seasoning mixture to sprinkle the tenderloins evenly on both sides.
- Cut one of the limes in half, squeezing all of its juice evenly over the chicken. Sprinkle with 1 tablespoon of the oil. Rub the chicken on both sides to evenly distribute the spices, juice and oil. Let sit for 10 minutes.
- Heat the remaining tablespoon of oil in a 4-quart shallow braising pan, ovenproof skillet or Dutch oven over medium-high heat. Add half of the spice-rubbed chicken; cook, turning once, until lightly browned on both sides. It's not necessary to cook comletely through. Transfer to a plate; repeat with the remaining chicken.
- Reduce the heat to medium. Add the onion, bell pepper and a pinch of salt to the pan, plus more oil if needed; cook, stirring, for 4 minutes or until the vegetables have softened. Add the tomato paste and the remaining spice mixture; cook, stirring to combine, for 1 minute. Add the rice and stir to incorporate. Add the broth; increase the heat to medium-high and stir to combine; cook until the broth begins to boil.
- Cover and transfer to the oven. Bake for 20 minutes, then remove from the oven and arrange the cooked chicken tenders over the rice. Cover and bake for 8 minutes, then check to see whether the rice has cooked through and all of the broth has been absorbed; if not, bake for 5 minutes or until rice has cooked through. Remove from the oven, uncover and sprinkle with cheese and cilantro.
- Serve right from the cooking vessel at the table, shielding the hot handles with pot holders. Cut the remaining lime into wedges to serve on the side.

- Preheat the oven to 350F
- Heat a medium sauce pot or dutch oven that has a lid over medium high heat and add in 2 Tbs oil
- Once it's heated, add in the 1/2 cup diced onion and 1.5 cups long grain white rice and stir frequently for five minutes until the onion is soft and fragrant and the rice is slightly toasted
- Next, add in 2 cups of chicken broth and 3/4 cup of jarred mild salsa and stir until it's all combined.
- Then reduce the heat to low and cover the pot with the lid and let it continue to cook over a low simmer until the rice has absorbed all the liquids (approximately 20 minutes).
- Once the rice is cooked, remove the lid and stir the rice to break it up.
- Then, in a large bowl (or in the pot, if the pot is large enough) combine the rice with 4.25 oz can of sliced black olives, 14 oz can of petite diced tomatoes, 1.5 cups sour cream, 7oz of diced green chiles, 3 cups of cooked diced or shredded chicken and half of the shredded jack cheese.
- Mix that all together and put it into a large 13 x 9 inch casserole dish.
- Smooth the mixture out in the casserole dish then cover it with aluminum foil and bake covered for 30 minutes at 350F.
- After 30 minutes and the casserole is heated through, remove the foil, add the remaining 8oz of shredded jack cheese to the top of the casserole and bake uncovered for an additional 15 - 20 minutes until the cheese on top is melted, bubbling and slightly browned.
- Remove the cooked casserole from the oven and allow it to rest out of the oven for at least 10 minute to allow the casserole to set.
- Slice the casserole into square servings and serve topped with sour cream, guacamole, avocados, cilantro, or anything you like with southwest flair!

- Preheat oven to 350 degrees and coat a 9x13 baking dish with cooking spray.
- In a small bowl, combine chili powder through dried oregano, stir and set aside.
- In a large bowl, combine rice through black beans. Stir to combine and then add spice blend, stirring to combine again.
- Line the bottom of the baking dish with chicken strips in a single layer. Pour rice and vegetable mixture over chicken. It is important to place the chicken on the bottom against the baking dish and near the heating element of the oven to make sure it is cooked all the way through.
- Cover with aluminum foil, tightly sealing around the edges to create a steamer for rice.
- Bake, covered, for 50 minutes. Remove, uncover and fluff rice with a fork before returning to the oven for an additional 10 minutes.
- Remove and serve. Top with avocado, sour cream and Mexican cheese blend, if desired.

SOUTHWEST CHICKEN AND RICE SOUP

- In a small bowl, combine the chili powder, cumin, oregano, smoked paprika, garlic, salt and pepper. Sprinkle half the mixture on the chicken and reserve the rest.
- In a large heavy bottom pot heat the olive oil over medium high heat. When the oil is hot add in the chicken and sear for 2 minutes per side. Add in the onion and sauté another 2 minutes.
- Add in the chicken broth, green chiles, black beans, salsa, spinach, remaining spice mixture and season with salt and pepper. Bring to a boil then lower the heat, cover with a lid and simmer for 20 minutes or until the chicken is cooked through.
- When the chicken is cooked, remove it from the pot and shred with a fork. Add the chicken back to the soup along with the rice, cilantro and lime juice. Stir everything together and taste for seasoning.
- Serve the soup topped with cheese, tomatoes, avocado, cilantro and plain Greek yogurt.

- Preheat the oven to 350 degrees F (175 degrees C).
- Spray a 4-quart casserole dish with nonstick spray. Add chicken, uncooked rice, black beans, and corn and stir until combined. Set aside.
- Mix tomato sauce, 2 cups chicken broth, sour cream, chili powder, salt, cumin, ancho chile pepper, and white pepper together in a large bowl. Pour into the casserole dish and mix well; contents should be fairly soupy. Cover with foil.
- Bake in the preheated oven for 40 minutes. Remove from the oven, uncover, and stir.
- Add the remaining 1/2 cup chicken broth if the casserole is too dry or beginning to stick. Cover again and return to the oven until rice is soft, about 40 more minutes.
