Many unconfirmed reports of this cocktail's creation exist. Some believe it came from Chicago's South Side during Prohibition; others think that it comes from the Southside Sportsmen's Club on Long Island. Manhattan's 21 Club also claims it as its own creation. There, they serve it long in a Collins glass over ice with a mint spring for garnish.

Yield Makes 1 drink

Number Of Ingredients 6

2 oz. (60 ml) gin
1 oz. (30 ml) fresh lime juice
¾ oz. (22 ml) simple syrup (1:1, see headnote)
8-10 fresh mint leaves
2 dashes Angostura bitters (optional)
Mint leaf, to garnish

Steps:

  • Combine all the ingredients in a cocktail shaker filled with ice and shake vigorously for 15-20 seconds, or until frosted on the outside. Double strain into a coupe. Garnish with a mint leaf.
  • Variations
  • For an East Side, muddle a few cucumber slices with the mint and garnish with a fresh cucumber slice.
  • Substitute vodka or tequila for the gin.
  • Serve in a highball glass over fresh ice and top with club soda.
  • Add 1-2 dashes of absinthe to make the French Pearl cocktail.

2 ounces gin, such as Plymouth
1 ounce lime juice
3/4 ounce simple syrup
1 sprig mint
1 fresh mint leaf

Steps:

  • Combine the gin, lime juice, simple syrup and mint sprig in a shaker. Add some ice cubes and shake vigorously. Strain into a chilled martini glass.
  • Garnish with one mint leaf, smacked to release the oils, floating on top of the cocktail.

DARK RUM SOUTHSIDES

Number Of Ingredients 8

12 large mint leaves plus 4 large sprigs
1 lime, cut into 8 wedges
1/2 cup freshly squeezed lime juice (4 limes)
1/2 cup simple syrup (see Cook's Note)
1 cup dark rum, such as Mount Gay
1 cup ice, plus extra for serving
1 1/2 cups sparkling water, such as San Pellegrino, chilled
1/8 teaspoon kosher salt

Steps:

  • Put the mint leaves and 2 of the lime wedges in a large cocktail shaker and muddle them with a muddler or a long-handled wooden spoon. Add the lime juice, simple syrup, rum, and ice and stir 40 times with a long-handled swiveling cocktail spoon or the wooden spoon. Add the sparkling water and salt and stir well.
  • For each drink, fill a low cocktail glass half full with ice, add a mint sprig and a wedge of lime, and pour over the cocktail mixture. Stir and serve ice cold.

Lemon Gin Cocktail

Makes 4 drinks.

Number Of Ingredients 6

1 1/3 cups fresh lemon juice
2/3 cup simple syrup
1/4 cup packed fresh mint leaves
6 ounces gin, vodka, or rum, or to taste seltzer or club soda (optional)
1 cup water
1 cup sugar

Steps:

  • In a small saucepan bring water and sugar to a boil, stirring, and boil until sugar is completely dissolved. Cool syrup. Syrup may be made 2 weeks ahead and chilled, covered.
  • In a blender, blend lemon juice, 2/3 cup syrup, and mint until completely smooth and add additional syrup to taste. Lemon mixture may be made 4 hours ahead and chilled in a sealable container.
  • Fill 4 glasses with ice and add liquor and lemon mixture. Top off Southsides with seltzer or club soda.

The story goes that Southsides were invented at New York City's "21" Club during Prohibition, when bootleggers from Chicago's South Side were among the restaurant's customers. The original recipe called for gin and lemon juice, but today the cocktail - still popular at "21" - is also made with vodka or rum. Our variation substitutes lime juice for lemon juice and leaves the choice of spirits open.

Number Of Ingredients 6

10 cups water
2 1/4 cups sugar, or to taste
3 cups fresh lime juice (from about 24 lines)
1 lime, sliced very thin
Mint sprigs for garnish
Gin, vodka, or rum

Steps:

  • In a saucepan cook 3 cups of water with sugar over moderate heat, stirring, until sugar is dissolved. Remove pan from heat and cool syrup.
  • In a large pitcher stir together syrup, remaining 7 cups water, lime juice, and lime slices and garnish with mint.
  • To serve, add 1 1/2 ounces (1 jigger) gin, vodka, or rum to each of 12 large goblets or tall glasses filled with ice cubes and add lime mixture to taste. Garnish cocktails with mint.
