SOUTHERN-STYLE HONEY RICE
I believe this recipe originally came from Southern Living Magazine. This smells so wonderful when you stir it. I leave out the peanuts (personal preference), but you may enjoy them. Note: prep time does not include time to cook the rice.

Steps:
- Gently stir together rice and peanuts; set aside and keep warm.
- Put butter and honey in a heavy saucepan, cook over low heat just until butter has melted.
- Stir in the cinnamon and ginger, beating out any lumps.
- Pour over rice, and mix together thoroughly.
- Serve hot.

BRAZILIAN RICE
We love rice and this rice came from a friend who keeps a container of it in her fridge. She serves it with every meal.

Steps:
- Wash and drain rice.
- Set aside.
- Saute onion and garlic in olive oil until soft.
- Add tomatoes, rice, salt, pepper and water or broth.
- Bring to a boil.
- Bring heat to medium.
- Cook until all bubbles on surface have disappeared.
- Cover and cook on low heat for 20 minutes.

- Place a large nonstick skillet that has been sprayed with cooking spray over medium-high heat until hot.
- Add in the first 3 ingredients; stir/saute until crisp-tender.
- Stir in broth the the next 3 ingredients; bring to a boil.
- Add rice to a shallow 2-quart baking dish; add hot broth mixture.
- Cover and bake in a 350° oven for 30 minutes or until the rice is tender and the liquid is absorbed.
- Sprinkle with pecans.
