These are FANTASTIC! This recipe was revised from an old family favorite! My southern roots come through on this one! Either way the beans end up melting in your mouth and the cooked bacon adds more flavor! REALLY tasty! Good for cookouts or to compliment any meal!

1 (16 ounce) bag frozen green beans or 2 (14 ounce) cans green beans, do not drain
4 -6 slices bacon
1 large onion, sliced large chunks
1 dash red pepper flakes (optional)
salt and pepper

Steps:

  • Put green beans in pot- if canned add juices, if frozen add water enough to see but not cover beans- cook on medium heat.
  • Fry bacon until cooked but not too crisp- drain on paper towel.
  • Cut onion in large (thick) slices and break rings apart in to beans.
  • Crumble or rip bacon apart add to beans.
  • Add spices to taste.
  • Let cook for a few hours on low heat.
  • If want to serve sooner- turn heat up and cook until water boils down.
  • OR can put in crockpot on low all day long and let simmer.

2 lbs green beans (ends trimmed)
8 slices thick-cut bacon (cut into 1/2-inch pieces)
1 medium onion (chopped)
2 cloves garlic (chopped)
1/2 to 1 cup low-sodium chicken broth
Salt and freshly ground black pepper

Steps:

  • Fry the bacon in a large skillet until cooked through. Drain on a paper towels and discard all but 2 tablespoons of the bacon fat.
  • Add the onion to the pan and sauté over medium heat until soft and translucent, 4 to 5 minutes. Add the garlic and continue cooking until soft and fragrant, 1 to 2 minutes longer.
  • Add the green beans and 1/2 cup of the chicken broth. Cover and cook for 15 minutes, stirring once or twice. Season to taste with salt and pepper, then return the bacon to the pan.
  • Reduce the heat to low, partially cover the pan (set the lid askew) and cook, stirring occasionally, until the green beans are tender but not mushy, 45 minutes to 1 hour.

3 slices bacon
1 lb. fresh green beans
1 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook bacon in cast iron pan or skillet until crispy to the amount preferred.
  • DO NOT drain grease from pan.
  • Remove bacon from pan and set on paper towels to cool.
  • Add fresh whole green beans, chicken stock broth, salt and pepper.
  • Cook green beans in the bacon grease, covered, for about 10 minutes.
  • Stir green beans frequently to sauté on all sides of the bean.
  • Chop cooked bacon and add back to pan.
  • Keeping lid removed, cook another 5-10 minutes or until beans are cooked through at the texture you like and broth is reduced.
  • Side Dish serves 4-6

1 (14-ounce) can low-sodium beef broth
1/2 cup frozen chopped onions

Steps:

In defense of the old-school recipes in the preceding chapters, we offered this introduction: "Southerners have never apologized for cooking their green beans 'to death,' but it is not widely known that properly motivated we can cook them as crunchy as the most sophisticated chef can and dress them in many ways, from herb-buttered to hollandaised to amandined. It is just that we may want to cook them half a day with salt pork or ham hocks if we are alone with the home folks; and that is a preference that bears no relationship to ignorance."
