CINNAMON SUGARED PECANS
My grandma makes these every year for the holidays. It's always handy to make extra for later snacking! They are relatively quick and easy to make and taste wonderful. I love the smell of these when they're in the oven.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Beat egg white in a large bowl with an electric mixer until frothy. Add pecans to egg white and stir until evenly coated.
- Mix sugar, cinnamon, and salt together in a separate bowl; add to pecans and stir until coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven until fragrant and crisp, about 25 minutes.

MANDARIN ORANGE SALAD WITH SUGARED PECANS
There are many versions of this salad out there but I couldn't find one exactly like mine here on 'Zaar so I thought I'd throw mine in the mix.

Steps:
- For sugared pecans: combine sugar, margarine, orange juice, cinnamon and red pepper and cook to boiling. Boil for 1 minute. Add pecans and coat well. Bake on cookie sheet at 200 degrees for one hour stirring every 15 minutes. Cool completely and store in air-tight container.
- For dressing: combine all ingredients and refrigerate for 1 hour.
- For salad: combine ingredients, adding pecans and oranges last. Add dressing and gently toss.
- Preparation time does not include cooking pecans.

- Combine sugar, salt, and cinnamon Beat egg white and water to a froth.
- Dip pecan halfs in egg white froth.
- Then dip in sugar mixture.
- Place in a shallow pan And bake@ 300 degrees for up to 30 to 45 minutes, stirring every 15 minutes.
- Careful not to burn.
- let cool till warm and enjoy.

OLD-FASHIONED ROASTED PECANS
My ex-mother-in-law lives in the South and has lots of pecan trees. She sends me bags of shelled pecans every year for Christmas. I found out how they make the roasted pecans at the fair. Even though they use big roasters, these turn out just as great.

- Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan.
- Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan.
- Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.

SOUTHERN COMFORT CRUNCH PECANS

- Combine Southern Comfort, orange juice, vanilla, cinnamon and nutmeg.
- Spread pecans in a shallow dish.
- Sprinkle with salt.
- Pour liquid mixture over pecans stirring until all moistened.
- Marinate 1 hour, stirring occasionally.
- Sprinkle with 2 TBS brown sugar and stir til coated.
- Bake at 275 for 30-40 minutes stirring every 10 minutes.
- Add remaining brown sugar, stirring until coated.
- Bake additional 10-15 minutes, stirring every few minutes.
- Toward the end of cooking watch them carefully as they will scotch if overcooked.
- Test for doneness by cooking and tasting a couple of nuts.
- They should be crunchy not chewy.
- Cool on wax paper separating with a fork as they cool.

- Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
- In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.
- Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
- Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

SOUTHERN CINNAMON SUGARED PECANS
I found this recipe on a can of evaporated milk many years ago, and I make up many batches each year to take to parties and give as gifts at Christmas. These are wonderful.

Steps:
- In a large sauce pan over medium heat, combine evaporated milk, sugar, water and vanilla.
- Heat mixture, stirring often, until sugar is dissolved.
- Add cinnamon and stir. Some may float on top.
- Add 3 cups of pecans to mixture and stir to cover.
- Continue stirring pecans in mixture until pecans become coated well and mixture cooks away (gets absorbed/crystalized on the the pecans).
- Spread hot coated pecans on wax paper; try to separate them as you spread them on the paper.
- Let pecans cool completely.
- Break apart pecans and store in air-tight container for up to 2 weeks.
- To give as gifts, put in decorative glass jars or decorative tins lined with wax paper.
- NOTE: I've tried using brown sugar (1:1 with the white sugar), but the pecans have a tendency to come out sticky and the sugars don't get 'crystalized'. I have not tried these with turbinado or unbleached cane sugar yet. If they don't turn out right, I'll have to keep them for myself !
