I coaxed this easy (and forgiving) recipe from its maker after tasting it at a pot luck, and was surprised by its simplicity. Just a few ingredients make a delicious summer side dish for anything barbecued, grilled, or smoked - especially if the squash is home grown!

3 pounds yellow summer squash, cut into 1-inch cubes
½ cup dry bread crumbs
½ cup chopped onion
2 eggs
¼ cup butter, melted
1 tablespoon white sugar
1 teaspoon salt
½ teaspoon black pepper
¼ cup butter, melted
¼ cup dry bread crumbs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
  • Place the squash in a large saucepan, cover with water, and boil until soft, about 15 minutes. Drain the squash well, place in a large mixing bowl, and mash until slightly chunky. Stir in 1/2 cup of bread crumbs, onion, eggs, 1/4 cup of butter, sugar, salt, and pepper until thoroughly combined, and spread mixture into the prepared baking dish. Drizzle the top of the casserole with 1/4 cup melted butter, and sprinkle 1/4 cup bread crumbs over the butter.
  • Bake in the preheated oven until the casserole is cooked through and the top is golden brown, about 1 hour.

  • Melt butter over medium-low heat in a skillet. Add squash and onions and cook until onions are translucent and squash has become fork tender, about 8-10 minutes.
  • Remove from heat. Add salt and pepper to taste.

Southern Yellow Squash Casserole - CRAZY delicious! Creamy, cheesy, easy side dish for any meal.

3 tablespoons butter
2 pounds yellow summer squash, sliced into 1/2 inch chunks ((about 6 medium))
1/2 medium onion, diced
1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 cloves garlic, minced
1/2 cup sour cream
1 10.5 oz can cream of celery soup
1 cup sharp cheddar cheese, grated
1 1/2 cups herb stuffing mix
3 tablespoons butter, melted

Steps:

  • Preheat the oven to 350°F.
  • Heat a large skillet oven over medium heat. Add the butter. Once the butter is melted add the sliced squash, onions and season generously with salt and pepper, sauté for about 15 minutes, stirring occasionally. Or until the squash is tender. Stir in the minced garlic and saute another 2-3 minutes.
  • Grease a casserole dish with butter or spray with nonstick cooking spray.
  • Transfer the cooked squash to a large bowl.
  • In a small bowl mix the sour cream, soup, cheese, salt, and pepper to taste. Pour the cream mixture into the squash and mix until well combined.
  • In another small bowl, mix the herb stuffing with the melted butter.
  • Spoon the stuffing evenly over the top of the squash mixture.
  • Bake for 35 to 45 minutes or until bubbly and golden brown.
  • Serve and enjoy.

Sautéed Yellow Squash With Onions image

We enjoy this dish all year long and it goes well with any entrée! It is one of the ways my mother liked to prepare yellow squash for our family. The yellow color helps make a pretty plate. I have found that a combination of butter and olive oil is great for sautéing (Paula Deen agrees). Purchase small fresh squash.

6 yellow squash, thinly sliced
1 sweet onion, chopped
1/4 teaspoon garlic powder
1/4 teaspoon Lawry's Seasoned Salt
2 tablespoons olive oil
2 tablespoons butter
salt
pepper

Steps:

  • Cut squash into thin slices. Spread slices out onto paper towels. Salt and allow to "sweat". After 10 minutes blot with paper towel. Flip slices over and repeat with salt and blot after 10 minutes. This allows salt to flavor squash and releases water for better sautéing.
  • In a 10 inch saucepan combine olive oil and butter. Lightly sauté onion first and set aside into small bowl.
  • In same saucepan sauté squash on low heat until tender. Before removing from heat add sautéed onions and sprinkle with Lawry's seasoned salt, garlic powder and black pepper.
  • Note: For best flavor use a sweet onion.

5 -6 small yellow squash, sliced
1 medium onion, chopped

Steps:

  • Fry bacon until crisp, remove from skillet.
  • Add chopped onion, cook until translucent.
  • Add sliced squash fry stirring frequently until squash is tender.
  • Season with salt and pepper.
  • Crush bacon and add back to pan.
  • Either yellow zucchini or crookneck squash work well in this dish.

½ yellow onion, diced
4 potatoes, peeled and sliced
3 yellow squash, sliced
¼ cup butter
1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon red pepper flakes

Steps:

  • Heat vegetable oil in a large skillet over high heat until oil is hot; decrease heat to medium. Cook and stir onion and potatoes in the hot oil until potatoes are lightly browned and partially cooked, 15 to 20 minutes. Add squash, butter, paprika, black pepper, garlic powder, salt, and red pepper flakes; cook until potatoes are golden brown, 15 to 20 more minutes, turning occasionally. Remove from skillet with a slotted spoon.

4 small yellow squash (about 2 lbs.), sliced ( (about 6 cups total))
1 small onion, diced
1 red bell pepper, diced
½ teaspoon salt
¼ teaspoon pepper
2 eggs
1 cup grated cheddar cheese
¼ cup sour cream
¼ cup mayonnaise
¾ cup crushed butter crackers ((I used 18 Ritz crackers))

Steps:

  • Preheat oven to 350°F. Spray an 8-inch or 9-inch square baking dish with cooking spray and set aside.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add squash, onion, and bell pepper to the skillet, cooking and stirring for about 10 minutes (or until vegetables are tender). Remove from heat and season with salt and pepper.
  • Meanwhile, in a separate bowl, whisk together eggs, cheese, sour cream, and mayonnaise.
  • Stir the egg mixture into the squash mixture.
  • Transfer the squash mixture into the prepared baking dish.
  • In a separate bowl, combine crushed crackers with remaining 1 tablespoon of melted butter. Sprinkle buttered cracker crumbs over top of casserole.
  • Bake for 30-35 minutes, or until casserole is set and topping is golden brown.

5 medium yellow squash, (sliced into circles)
1 medium sweet onion, (sliced)
1 teaspoon sugar

1/4 teaspoon dried thyme or tarragon, (or use about 2 teaspoons fresh)

Steps:

  • In a large pan, preferably cast iron, heat bacon grease and butter. Add squash and onion.
  • Sprinkle sugar over squash and onion. Cook over medium-low heat for 20 minutes, stirring occasionally.
  • Stir in salt, pepper, and thyme and serve.

3 lbs yellow squash (about 5 squash, sliced into 1-inch rounds )
4 tbsp butter
1 onion (finely diced )
2 garlic cloves (finely minced)
1 tsp Italian seasoning
1 tbsp sugar
2 eggs
1/2 cup mayo
2 cups Gruyere cheese (shredded )
1/2 cup sour cream
salt and pepper to taste
1 cup ritz crackers (crushed )
2 tbsp butter (melted )

Steps:

  • Preheat oven to 350 degrees F. and grease an 8x8 baking dish with cooking spray or softened butter.
  • Slice the squash into 1-inch rounds.
  • Melt 4 tbsp of butter in a large skillet over medium-high heat. Add the squash and onions, cover, and cook for 10 minutes, stirring occasionally. Stir in the fresh garlic, Italian seasoning, sugar, and season with salt and pepper.
  • Place the squash mixture in a colander and let it sit for 5 minutes.
  • In a large bowl, mix the shredded Gruyere cheese, mayo, sour cream, and eggs until well combined.
  • Add the onion and squash mixture into the mayo mixture and mix well. Season with salt and pepper.
  • In a medium-sized bowl, mix the crushed ritz crackers and 2 tbsp melted butter until well combined.
  • Place the squash mixture into the prepared baking dish and top it off with the ritz cracker mixture. Bake for 25 minutes uncovered and enjoy!
