- Cook sausage in a skillet or frying pan over medium heat, rotating every 3 minutes, until nearly cooked through, about 10 minutes. Drain most of the juice, leaving a layer of juices in the skillet.
- Stir butter and olive oil into sausage; add turnip greens and garlic. Cook greens mixture over high heat, stirring every 5 minutes, until wilted and sausage is cooked through, about 15 minutes. Season greens mixture with salt and pepper and continue cooking over medium-low heat for 10 minutes more.

- Preheat oven to 350 degrees
- Prepare a pan of cornbread (best if the cornbread is made a day or two ahead); crumble into small pieces
- In a large skillet, cook the onion and sausage; drain if there's excess oil
- In a large bowl, combine greens with their juice and the condensed soup
- Fold in cooked sausage and onions, crumbled cornbread; season with Trappey's pepper sauce, salt and pepper; sprinkle in red pepper flakes (optional)
- Transfer to ungreased baking dish and bake uncovered for 30 minutes, or until most of the liquid is absorbed

SOUTHERN TURNIP GREENS
Learn how to cook turnip greens just like they do in the South. Greens are slowly simmered with pork jowl, apple cider vinegar, salt and pepper for a tender, tasty soul food side dish.

- Remove the center stems from the greens. Discard the stems and coarsely chop the leaves.
- Heat the pork jowls in a large stock pot over medium heat. Cook for 3-5 minutes to render off some of the grease, but so not drain the grease.
- Add one quart (4 cups) of water to the pot. Bring the water to a boil, then reduce the heat to low, cover and simmer for 10 minutes.
- Add the cider vinegar, sugar, salt and pepper to the pot. Bring the pot to a boil again.
- Add the greens. You may need to work in batches, allowing the greens to wilt down to make room for more.
- Reduce the heat to low. Cover the pot again, then cook for 1 -2 hours. The longer the greens cook, the more tender they will become.
- Season the greens with salt and pepper if needed.

SOUL FOOD TURNIP GREENS
Turnip greens with smoked turkey is a classic southern soul food side dish. Customize this recipe with your favorite meat (like ham hocks, smoked neck bones, or salted pork) for a delicious family dinner side.

- Add the smoked turkey wing into a large pot, then pour in 8 cups of water.
- Place the pot over high heat, and bring to a boil. Let cook for 45-50 minutes.
- While the smoked turkey is cooking, clean your greens. ( Be sure to check out my cooking tutorial to that you can see how I clean my turnip greens).
- Once the greens are cleaned, remove the leaves from the stems, and start adding the turnip leaves in the pot.
- Once all the greens are in the pot, start adding in the onions and bell peppers.
- Next add in the garlic, red pepper flakes, seasoning salt, black pepper, brown sugar, and vinegar.
- Give everything a nice stir, then reduce the heat to medium.
- Let the soul food turnip greens cook for 1 hour & 30 minutes over medium heat.
- Now toss in the turnips, and fold in with the other ingredients. Let cook for another 30 - 45 minutes.
- Serve, and enjoy with some cornbread.

SALUBRIOUS TURNIP GREENS AND ROOTS
Fresh turnip greens, turnip roots and rutabagas steamed in a stock pot with olive oil, water and seasonings.

- Wash and drain greens. On cutting board, place a large hand full of layered washed greens and roll into a tube. This does not have to be exact. With a sharp knife cut tube of greens and toss into large bowl. Repeat until all leaves are cut into smaller pieces.
- Meanwhile, in a large stock pot turn on medium low heat for 1 minute. Add in olive oil.
- To stock pot add all greens, chopped turnip roots, rutabaga and water. Stir well and cover with lid. Cook for 15 minutes and stir as needed. If water amount becomes too low, add in another cup of water to help steam the greens.
- Cook for 30 additional minutes or until all turnip greens, turnip roots and rutabagas are tender. Add in salt and pepper. I have used a small amount of salt in an effort to reduce sodium. You may add more at the table if needed.
- Note: At this point, the greens need a sprinkle of cayenne. Sprinkle cayenne and adjust to your enjoyment.

- Clean all the assorted greens under cold tap water to remove the grit. Pick out all discolored and spoiled leaves and discard them. With a sharp kitchen knife, shred all the fresh greens into roughly 1/2-inch ribbons. You will want to pick three or more different greens to use in your Southern Greens and Sausage Soup.
- Once done cleaning the fresh greens and flat-leaf parsley add them to an 8-10 quart stockpot, cover the greens entirely with the vegetable stock, add the ham hock and place on medium-high heat to bring to a full simmer- you will want to simmer for 40-50 minutes to cook the fresh greens down.
- Meanwhile, place a large cast-iron skillet over medium heat allow the cast-iron to heat up before adding the two tablespoons of butter and one tablespoon of oil. Once heated, add the butter and oil. After melting the butter, reduce the heat slightly under the cast-iron skillet and add the onions, peppers, diced celery, and garlic- cook the vegetables until softened but do not brown them. Once softened, add them to the simmering stockpot of green.
- At this time, cook the sliced sausages to render off the fat. This will take approximately 10 minutes or so. Once the sliced sausage is done, add them to the stockpot only after you have cooked the fresh greens at least 40 minutes- do not combine the sausage before the greens have cooked down.
