AUNT LIBBY'S SOUTHERN MEATLOAF

This my 86-year-old Aunt Libby's home-made meatloaf recipe. I finally had her write it down for me last year. You can be sure no one will tell you this meatloaf is dry!

2 pounds ground beef
1 onion, chopped
1 cup ketchup
1 cup Italian-seasoned bread crumbs
2 eggs
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 ½ cups ketchup
¼ cup water
3 tablespoons white wine vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
  • Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
  • Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
  • Bake in the preheated oven, basting every 25 minutes with more sauce, until meatloaf is cooked through, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cool in the pan for 10 minutes before slicing.

A popular southern way to make meatloaf sandwiches is to use butter or margarine instead of mayo. This great sandwich is a favorite for lunches and picnics. You can add lettuce, if you like, but it's good without "adornment".

1 slice of leftover meatloaf, thick, straight from the fridge
ketchup, drizzled over slice
bread and butter pickles
2 slices bread, I like white bread
butter
salt and pepper

Steps:

  • Slather both slices of bread with butter.
  • Add the meatloaf slice and additional seasonings.
  • Cut in half and pack in a lunch or eat right away!

  • To make the glaze: Mix together 1/3 cup soup, ketchup, brown sugar and 1 1/2 tsp mustard until smooth. Set aside.
  • Preheat the oven to 350°F. Line a standard baking sheet with aluminum foil and spray with cooking spray.
  • In a stove top pan, saute the diced onions and peppers in a few drizzles of olive oil until softened and translucent around 3 minutes. Season with salt and black pepper to your taste, then set aside to cool slightly.
  • While vegetables cook, in a medium mixing bowl, mix together beef, Panko, 3/4 cup soup, buttermilk, eggs, mustard, Worcestershire, barbecue seasoning and pepper. Add cooked peppers and onions. Mix well.
