SOUTHERN GREEN BEANS
I just love these beans! What could be better than green beans, potatoes, and bacon, all in one dish?!

- Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
- Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

One of my favorite vegetables fresh out of the garden is green beans. When I was growing up, I remember a man that use to come through our neighborhood in a wagon pulled by a mule. He always had fresh vegetables and while I know my mother purchased other veggies I can still picture those baskets of green beans and new potatoes...

Steps:
- 1. Wash, clean and snap green beans. Wash new potatoes and remove any bad spots; cut in half. NOTE: if potatoes are small enough it's not necessary to cut in half.
- 2. Place beans, potatoes, and onion in appropiate size pot, cover beans with chicken broth or water. Add salt to taste and place strips of bacon on top.
- 3. Cook over medium heat until beans and potatoes are tender. Stir in pimento if desired. Remove bacon strips before serving.

- In a medium sized saucepan, place the red potatoes and cover with water. Boil over medium high heat until a fork can pierce the potatoes easily. (about 15 minutes)
- Drain the potatoes and set them aside.
- In the same saucepan, place 4 slices of bacon and allow to fry until crispy.
- When crispy, remove the bacon and set aside.
- Add the butter to the bacon drippings and heat over medium heat till melted. Add the chopped onions and cook till translucent.
- Cut the bacon into pieces and add back to the saucepan.
- Drain the cans of green beans and pour into the saucepan.
- Add the potatoes back to the saucepan. Add water to come about halfway up the level of the green beans in the saucepan (about a cup of water) (read step 9 before you add the water).
- Add 1 Tbs sugar and Add 1 heaping tsp of chicken broth concentrate (if you do not have broth concentrate, then add chicken broth instead of water in step number 8). Add the vinegar and cayenne.
- Stir well and when beans start to steam and boil, they are done. Taste and add salt and pepper to taste.

Steps:
- Slice bacon into 1 inch pieces, (easiest way is to cut with scissors).
- Put bacon into a large pot and begin to fry.
- While bacon is frying, coarsely chop onion.
- When bacon is about 1/2 way done, add onion and continue frying until bacon is semi crisp. (Do NOT drain grease).
- Drain green beans and dump into bacon and onions. Stir.
- Continue to cook for 30 minutes on medium, stirring occasionally.
- Serve.

- Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.
- Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
- While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.
