PIG PICKIN' CAKE
The unofficial cake of Southern barbecues, potlucks and pig picking soirees, a Pig Pickin' or mandarin pineapple cake as some call it is a delicious dessert

Steps:
- Preheat oven to 350°F
- Combine cake mix, eggs, vegetable oil, mandarin oranges and the mandarin orange juice together. Beat for three to four minutes. Pour batter equally into two greased and floured 9" round pans. This cake is also commonly baked as a sheet cake if preferred.
- Bake for 25-30 minutes until golden brown and set. Remove from oven and cool five minutes before turning out of the pans. Allow the cakes to cool completely before frosting.
- Once the cake is cool, prepare the frosting. Combine the juice from the pineapple with the vanilla pudding mix.
- Add the whipped topping and mix. Stir in the crushed pineapple.
- Frost the cake layers.
- Garnish the top with mandarin orange slices if desired. I reserved a heaping tablespoon of the crushed pineapple for garnish as well.

Steps:
- Mix together cake mix, canned oranges with juice, eggs, and oil. Pour batter into three greased and floured 8 inch round pans. Layers will be thin.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cake tests done. Cool layers on wire racks.
- Mix together whipped topping, drained pineapple, and instant pudding mix. Fill and frost the cooled cake. Refrigerate until ready to eat.

SOUTHERN PIG PICKEN CAKE
I have lived in the south all my life and we have large get togethers where we cook a pig (called a pig picken)and have all the trimings. This cake is the second best part to this tradition. Oh so good!

Steps:
- Place cake mix, oil and eggs, in bowl and mix well.
- Add oranges and mix a little more.
- Pour into two 8 inch round cake pans.
- Bake in oven at 350 degrees for 35 to 45 minutes.
- Cool cake, pour pineapple juice over layers.
- Mix pudding and pineapple, then fold in cool whip.
- Ice cake, and put in the refrigerator.

Steps:
- Beat the first 4 ingredients together in a large mixing bowl using an electric mixer at medium speed until blended.
- Stir in oranges.
- Pour batter into 3 greased and floured 8-inch cake pans (layers will be thin).
- Bake in a 350° oven for 25-30 minutes or until a pick comes out clean.
- Cool layers in pans on wire racks for 10 minutes; remove layers from pans and cool completely on wire racks.
- In a large bowl, stir together the crushed pineapple and next 3 ingredients; spread pineapple mixture evenly between layers and on top of cake.
- Chill cake 3-4 hours.
- Garnish with chopped pecans, if desired.
- Store cake in the refrigerator.
