SOUTHERN PECAN DIVINITY CANDY

Southern Pecan Divinity Candy image

I don't recall exactly how the conversation came about, but as a new bride, I discovered that my husband loves Southern Pecan Divinity Candy. Divinity is a traditional nougat-like Southern candy made with vanilla and pecans.

Provided by Jackie Garvin

Number Of Ingredients 7

2 1/2 cups granulated sugar
1/2 cup light corn syrup (I use Karo)
1/4 teaspoon salt
1/2 cup water
2 egg whites
1 1/2 teaspoon vanilla extract
1 1/2 to 2 cup pecans (chopped)

Steps:

  • Combine sugar, corn syrup, salt and water in a 2 quart saucepan. Stir only until the sugar dissolves. Cook to 260 degrees (hard ball stage). I highly recommend using a food thermometer to make sure you get the syrup to the right temperature.
  • With an electric mixer, beat egg whites until stiff peaks form. When the syrup is ready, slowly pour it over the egg whites while beating on high-speed. BE CAREFUL! The syrup is hot and it will burn the fool out of you if it splatters.
  • Add vanilla and continue beating until the candy holds is shape.
  • Add pecans, mix well.
  • Drop by teaspoons onto waxed or parchment paper.
  • Let the candy dry on the paper before attempting to stack it in a candy dish or storage container.

SOUTHERN PECAN PRALINES

Southern Pecan Pralines image

Pralines are a southern candy loaded with pecan goodness. This recipe combines the old fashioned molasses version with the newer sugar recipes and gets the best of both worlds

Provided by Carlee

Categories     Candy & Fudge

Time 25m

Number Of Ingredients 8

1 1/2 cups packed brown sugar
1 1/2 cups granulated sugar
3 Tablespoons molasses (or corn syrup if you prefer)
1 cup whole milk (or heavy cream)
4 Tablespoons butter
2 cups pecans*
pinch of salt
1 teaspoon vanilla extract

Steps:

  • First, toast the pecans. You can do this on the stove over medium-low heat or in the oven at 300° F. Heat them until they are just fragrant and toasty, 5-10 minutes. Be careful not to burn them. Remove them from the heat and set them aside.
  • Line a baking sheet with parchment or wax paper and set aside.
  • In a large heavy bottomed saucepan, combine the sugars, molasses, and milk. Heat over medium high heat until the sugar dissolves, stirring frequently with a wooden spoon.
  • Bring to a boil and continue to cook for about 5 minutes. The candy should be at the soft ball stage or read 240° F on a candy thermometer.
  • Remove the pan from the heat and stir in the butter, pecans, salt and vanilla. Stir vigorously for about 2-3 more minutes or until the mixture starts to thicken.
  • Quickly drop heaping Tablespoons full of praline mixture onto the parchment lined baking sheet. Allow them to cool completely then store in an airtight container at room temperature.

Southern Pralines use pecans rather than almonds in the recipe. But the recipe was altered based on the available ingredients in the South. Pralines are commonly made with butter, sugar and cream. • In a medium-size heavy pot, combine the granulated sugar, brown sugar, salt, evaporated milk, and butter. Cook and stir with a wooden spoon over medium heat until the sugars dissolve and the mixture comes to a boil.
  • Continue to cook until the temperature reaches between 235-240 degrees F on a candy thermometer (soft ball stage). Remove from heat and allow the praline mixture to cool for 5 minutes.
  • Stir in the vanilla and pecans, beating by hand with a wooden spoon just until the candy begins to lose its glossiness and thickens slightly, about 2 minutes. If you beat too long, the candy will seize and start to crumble. If you don't beat it long enough, then pralines won't set properly and will stay soft and sticky.
