SOUTHERN MUSHROOM SOUP
A rich and creamy home made mushroom soup that is topped with toasted bread and shredded cheese for a comforting home-cooked meal.

Steps:
- In a large saucepan, combine the mushrooms, onion and chicken broth. Bring to a boil, then simmer covered for 15 minutes over low heat.
- Stir together the melted butter and flour to make a paste. Stir the paste into the pan with the vegetables. Increase the heat to medium, and gradually stir in the milk. Continue stirring constantly.
- When the mixture thickens and begins to boil, stir in the cream. Cook over low heat without boiling for about 10 minutes, or until the mushrooms are tender. Season with salt and pepper.
- Ladle the soup into bowls, and trim pieces of toast to fit the bowls. Butter the toast, and place on top of the soup. Sprinkle the cheese over the bread and serve.

BAKED PORK CHOPS WITH CREAM OF MUSHROOM SOUP

Steps:
- Preheat oven to 375.
- Sprinkle Cajun seasoning evenly over each chop.
- In a medium mixing bowl, stir together soup, water, Worcestershire sauce and garlic.
- Heat oil in oven-proof skillet on medium-high. Brown pork chops on both sides and pour off any excess oil.
- Pour sauce over chops and add the tablespoon of butter, a little dot on top of each chop.
- Cover skillet tightly with foil.
- Bake covered for 30 minutes, then remove foil, turn the chops over and stir the sauce slightly.
- Bake uncovered for another 10-15 minutes or until done.

Steps:
- Lightly spray a 9×13 inch casserole baking dish with non-stick spray. Set aside.
- Brown ground beef, drain, set beef aside.
- Slice the onion, into rounds, then into quarters.
- Place the mushroom soup in a medium size mixing bowl.
- Add the milk.
- Add the salt.
- Add the pepper.
- Mix well and set mixture aside.
- Rinse and slice the potatoes into 1/8 inch thick slices.
- Place a layer of potatoes in the casserole dish.
- Add a layer of the beef.
- Add a layer of onions.
- Add a layer of soup mixture.
- Add layer of cheese. Reserve ½ cup of cheese for topping later.
- Repeat the layering process ending with the soup mixture.
- Cover with aluminum foil and bake at 350F degrees for 1 hour and 30 minutes.
- Remove foil, sprinkle top with remaining cheese.
- Bake uncovered for another 15 minutes or until potatoes are fork tender.
- Remove from oven, place on wire rack, let cool for 10 minutes.
- Enjoy!
