Tired of the same old side dish, I whipped up this new family favorite. We can't get enough of these loaded mashed potatoes at our house. Often, I'll prepare this casserole ahead and refrigerate it. Then I bake it just before serving. -Dawn Reuter, Oxford, Wisconsin

5 pounds potatoes, peeled and cubed
3/4 cup sour cream
1/2 cup milk
3 tablespoons butter
Salt and pepper to taste
3 cups shredded cheddar cheese blend, divided
1/2 pound sliced bacon, cooked and crumbled
3 green onions, sliced

Steps:

  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain and place in a large bowl. Add the sour cream, milk, butter, salt and pepper. Beat on medium-low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions., Transfer to a greased 3-qt. baking dish. Top with remaining cheese. Bake, uncovered, at 350° for 30 minutes or until heated through and cheese is melted.

2-3 lbs small red potatoes
3/4 cup milk
1/4 cup chicken broth (or enough to cover the potatoes )
4 tablespoons butter
salt and pepper to taste

Steps:

  • Scrub the potatoes and if you prefer peeled potatoes peel them now
  • Dice the potatoes so that they are small and close in size (dicing them to similar sizes will help ensure the potatoes cook evenly)
  • Season the potatoes with salt and pepper then cover with chicken broth and bring to a boil
  • Reduce heat to low and simmer for 20 minutes or until fork tender
  • In a small sauce pan melt the butter and then stir in milk until combined
  • Pour mixture over potatoes and mash until desired consistency

8 ounces bacon (or more to taste)
3 pounds russet potatoes (peeled and cut into 1" cubes)
1 stick butter
1 container (16 oz) sour cream
4 teaspoons Kosher salt (divided)
1/2 teaspoon coarse ground black pepper
8 ounces shredded Cheddar cheese
1/4 cup green onions (sliced)

Steps:

  • Preheat the oven to 375 degrees.
  • Put the potatoes into a large pot and cover with water and 2 teaspoons of the salt.
  • Bring to a boil then reduce to a simmer and cook for 20 minutes.
  • Drain the potatoes and put them back into the pot with the butter and sour cream.
  • Mash them well and add in the remaining salt and the pepper.
  • Scoop the potatoes into a 9x13 casserole dish and top with the cheese and bacon.
  • Cook the potatoes for 5-10 minutes covered with foil, or until the cheese is fully melted.
  • Garnish with green onions before serving.

2 1/2 cups Kraft Shredded Sharp Cheddar Cheese

3/4 cup of crumbled bacon (cooked crispy)

Steps:

  • Peel, quarter, boil & drain potatoes.Preheat oven to 350 degrees. Place potatoes in a large mixing bowl. Mash with potato masher.Mix in 2 cups of cheese while still hot.
  • In a separate bowl, combine sour cream, milk, & ranch seasoning. Mix well. Add mixture to potato mixture and blend together with 3/4 cup green onion.

8 ounces bacon (about 10 strips)
1 head of garlic
1 tablespoon olive oil
Kosher salt and freshly cracked black pepper
3 pounds Yukon gold potatoes, peeled and cut into 1-inch chunks
1/2 cup heavy cream
4 tablespoons salted butter
1/4 cup sour cream
2 cups grated sharp Cheddar
3 scallions, thinly sliced on the bias

Steps:

  • Preheat the oven to 350 degrees F. Place a cooling rack on top of a baking sheet lined with parchment paper.
  • Spread the bacon over the cooling rack so that none of the slices are touching. Slice the top off the head of garlic so the cloves are exposed. Drizzle the exposed cloves with the olive oil and sprinkle with some salt and pepper, then wrap in aluminum foil to create a packet. Roast both until the bacon is crispy and the garlic is soft, about 30 minutes. Set aside to cool.
  • Put the potatoes in a pot and cover with water. Add a generous pinch of salt. Bring to a simmer and simmer until the potatoes are tender, about 30 minutes.
  • Drain the water from the pot and transfer the potatoes to a stand mixer. Add the cream, butter, sour cream, 6 cloves of the roasted garlic and 1 3/4 cups of the Cheddar to the mixer and whip until combined and smooth. Add additional salt and pepper to taste.
  • Transfer the potatoes to a serving dish and top with the remaining Cheddar. Crumble the bacon over the top and sprinkle with the scallions. Serve immediately.

8 Cups Water or Broth of choice (You may use vegetable, beef, or chicken broth)
½ Stick butter (Or 4 tablespoons)

1 Tsp. Garlic Powder
½ Cup Heavy Cream (You can also use milk or half and half)

Steps:

  • Peel and cut the potatoes into 3-4 pieces. Transfer the potatoes to a bowl, then wash the potatoes before transfering them to the pot. After you've transfered the potatoes to the pot, add enough water to cover the top of the potatoes. We added about 17 cups of water.
  • Set the temperature on the stove to medium heat to start cooking the potatoes. Cover with lid and cook until the potatoes are cooked fork through and tender.
  • Remove the potatoes from the stove and drain the water. Set the potatoes aside. In a large Sauté pan, add melt the butter over low heat. Next add the potatoes. Then season with salt and pepper to taste, and garlic powder. Mix well. Then slowly add the milk. Stir to well combine until the mashed potatoes are creamy and all lumps are gone (if desired).
