TEXAS SHEET CAKE
This chocolaty delight was one of my favorites growing up. The Texas sheet cake is so moist and the icing so sweet that everyone who samples it wants a copy of the recipe. -Susan Ormond, Jamestown, North Carolina

- In a large saucepan, bring the butter, water and cocoa to a boil. Remove from the heat. Combine the flour, sugar, baking soda and salt; add to cocoa mixture. Stir in the sour cream until smooth. , Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean., In a small saucepan, melt butter; add milk and cocoa. Bring to a boil. Remove from the heat. Whisk in confectioners' sugar and vanilla until smooth. Pour over warm cake. Cool completely on a wire rack.

- Grease and flour a 9 x 13 inch cake pan. Preheat oven to 325 degrees F (165 degrees C).
- Mix together sugar, eggs, fruit cocktail, soda, and flour. Pour batter into prepared pan.
- Mix the brown sugar and nuts together, and sprinkle mixture onto the batter.
- Bake for 40 minutes, or until done.

- Beat together the first 5 ingredients at low speed with an electric mixer 2 minutes or until blended. Pour batter into a greased 15x10 inch jelly roll pan.
- Bake at 350°F for 15-20 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 2 hours. Make Caramel Pecan frosting and pour immediately over cooled cake in pan, and spread quickly to cover cake.
- FROSTING:.
- Place chopped pecans in a single layer in a shallow pan. Bake at 350°F for 6 minutes or until lightly toasted.
- Bring butter and brown sugar to a boil in a 3 1/2 quart saucepan over medium heat, whisking constantly (about 2 minutes). Remove from heat and slowly whisk in buttermilk.
- Return mixture to heat, and bring to a boil. Pour into bowl of a heavy duty electric stand mixer. Gradually add powdered sugar, vanilla extract and almond extracts,beating at medium-high speed until smooth(about 1 minute). Stir in pecans. Use immediately.

- Preheat the oven to 325°F. Spray a 15 x 10 x 1 inch jelly roll pan with baking spray. Set aside. Spread pecans on another baking sheet in a single layer. Toast for 6-8 minutes or until fragrant. Set aside.

- In a large mixing bowl combine flour, sugar, salt and cinnamon. Mix well with a wire whisk. Set aside. In a smaller bowl combine eggs, vanilla extract, buttermilk and baking soda. Mix well with wire whisk. Set aside.
- In a pan on top of the stove melt butter, add cocoa and water. Bring to a boil. Remove from stove and pour into flour and mix until all flour is wet with a spoon. Add egg and milk mixture and continue mixing just until all ingredients are wet
- Pour into a sprayed (I line my pan with Reynolds wrap and don’t spray. You can do either) 15 x 10 inch jelly roll pan.(Could use a 9 x 13 pan, too). Bake in preheated 350 degree oven for 20 to 25 minutes testing for doneness at 20 minutes. If you use a 9 x 13 it may take a little longer to cook. Frost.
- Bring milk, butter and cocoa to a boil on top of the stove. Remove from heat and stir in sugar, vanilla and nuts. Spread over cake.

Scrape down sides of the bowl with a spatula, add another third of the liquid ingredients and mix on low for another 2 minutes. Fold batter a few times with spatula to ensure that no unincorporated bits are stuck to the bottom and sides of the bowl. Transfer batter to prepared baking dish, using a spatula to level the surface. Bake until lightly golden brown across the surface and until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Allow cake to partially cool before adding the Frosting.
- While cake is baking, melt butter for Frosting in a saucepan. Allow to foam and boil until butter browns and nutty aromas come from the saucepan, about 5 minutes. Transfer browned butter to mixer. Add milk, powdered sugar, and vanilla. Mix on low until sugar is incorporated, scraping down the sides of the bowl as needed. Beat on medium-high for 3 minutes. Add toasted walnuts to Frosting and stir to combine.
