CLASSIC PARMESAN SCALLOPED POTATOES

- Preheat oven to 400°F. Layer potatoes in a 13- x 9-inch or 3-qt. baking dish.
- Stir together cream and next 4 ingredients in a large bowl. Pour cream mixture over potatoes.
- Bake at 400°F for 30 minutes, stirring gently every 10 minutes. Sprinkle with cheese; bake 15 to 20 minutes or until bubbly and golden brown. Let stand on a wire rack 10 minutes before serving.

Steps:
- Combine 1/2 cup mayonnaise and next 3 ingredients in a saucepan.
- Gradually add milk, and cook, stirring constantly, over medium-low heat 8019 minutes or until thicken. Remove from heat.
- Add cheddar cheese, and next 3 ingredients, stirring until cheese melts and is well-blended.
- Place half of potato slices evenly in a lightly greased 11x7" baking dish; pour half of cheese mixture over potatoes.
- Repeat layers with remaining half of potato slices and cheese mixture. Sprinkle with Parmesan cheese.
- Bake, covered, at 350 degrees, for 1 hour.
- Uncover and bake 30 minutes more or until potatoes are golden brown and fork tender.

- Melt butter in a medium-size skillet over medium-low heat. Add garlic and cook for about 30 seconds. Then, add the flour and whisk until smooth. Cook for about one minute, whisking constantly.
- Continue whisking and slowly add the milk. Keep whisking until the mixture is smooth and lump-free. Add the salt, red pepper and nutmeg.
- When the mixture comes to a boil and thickens, reduce the heat to low and add one and one-half cups of cheese. Once the cheese has melted, remove the skillet from the heat and set aside.
