SOUTHERN LIVING EVERYDAY CHILI
A good basic chili recipe I have been making for years. We like to serve with toppings of sour cream and/or shredded cheese.

Steps:
- Saute onion, garlic and gound beef in hot oil until browned, drain well.
- Combine 1/4 cup of boiling water and chili powder, stirring well until dissolved.
- Add tomatoes, salt, oregano, basil and chili powder mixture to meat mixture.
- Cover and simmer about 1 hour, stirring occasionally.
- Add 3/4 cup of water and beans to meat mixture.
- Simmer 25 to 30 minutes longer.

SOUTHERN LIVING BEEF AND BEAN CHILI
This recipe is form my Ultimate Southern Living cookbook and is written with very slight modifications. I have tried all sorts of chili recipes from competition to exotic and time consuming but I always come back to this one for its great taste and simplicity. I always cut the stew meat up into even smaller pieces before browning. I'm not sure what the "beans or no beans" argument is all about, but I'm born and raised in Texas and I do like some beans in my chili, it's up to you to add them or not....

Steps:
- Saute first 5 ingredients in hot oil in a large skillet over medium high heat until tender.
- Remove veggies from pan.
- After cutting into smaller pieces, rub salt and pepper over stew meat and brown in skillet along with ground beef.
- Place sauteed veggies and meat into crock pot.
- Add tomato sauce and next five ingredients into beef mixture and stir well.
- Cook on high for 4 hours then on low for 2-3 more hours.
- If more liquid is needed, sometimes I add a bit of beef broth and some jalapeno juice (for extra spice) or just some extra water.
- Add beans the last hour of cooking.
- Serve with an assortment of condiments: shredded lettuce, shredded cheddar cheese. diced onion, tortilla chips.

- Heat oil in a programmable pressure cooker (such as Instant Pot) set on sauté or in a heavy-bottomed pressure cooker over medium-high. Add beef to the pot, and cook, stirring once, until browned, about 10 minutes. Remove the beef from pot. Add onion and poblano chile to pot, and cook, stirring occasionally, until starting to soften, about 3 minutes.
- Add tomato paste, cocoa, chili powder, salt, pepper, and sugar; cook, stirring often, until fragrant, about 2 minutes. Add broth, tomatoes, beans, browned beef, and, if desired, beef bones to pot; bring to a boil. Cover pot with lid, and bring to full pressure according to manufacturer’s directions. Reduce heat to normal or medium, and maintain high pressure for 30 minutes. Remove from heat, if needed, and release steam according to manufacturer’s directions. Discard beef bones, if using.

- Add chopped vegetables, except garlic, and cook until meats are cooked through and vegetables are tender.

- Preheat the oven to broil (500ºF) Set an oven rack at the top, directly under the broiler. Spread out the poblano peppers on a tray, and roast for 15-20 minutes, turning them every 5 minutes. Place the peppers in a bowl and tightly cover with plastic wrap. Let them steam for 15 minutes and then peel off the skin. Remove the seeds and membranes and chop.
- Heat a large Dutch oven over medium-high heat and add bacon, cooking until almost crisp. Remove the bacon and reserve about 1/4 cup of bacon grease.
- Add the chopped poblanos, onions, red bell peppers and jalapeños, cooking for about 5 minutes or until softened. Add the garlic and cook for another minute. Transfer the cooked veggies to a bowl and set aside.
- With the Dutch oven still on medium-high heat, add the beef chuck and brown on all sides, about 4 minutes. Stir in the ground beef and sausage. Break it up with a spoon and cook for 7-10 minutes or until no longer pink. Add the veggies as well as the bacon back in.
