HOT DOG CHILI
Quick and easy hot dog chili recipe. Great for hot dogs and hamburgers, or just chili dogs with cheese.

Steps:
- Place ground beef in sauce pot over Medium heat.
- Crumble the beef as it begins to cook.
- Cook beef until browned. Drain and discard any grease.
- Add the water.
- Add the salt.
- Add the black pepper.
- Add the chili powder
- Add ketchup.
- Stir and let simmer for about 20 minutes.
- Add sugar.
- Add vinegar.
- Stir again and let cook until chili reaches desired thickness.
- Enjoy!

Steps:
- Place ground beef in a large saucepan with water and mash the beef with a potato masher to break apart. Stir in tomato sauce, ketchup, chili powder, salt, black pepper, sugar, onion powder, and Worcestershire sauce. Bring to a boil and cook over medium heat until the chili has thickened slightly and the beef is fully cooked, about 20 minutes.

CHILI SLAW DOGS
Carolina-Style Slaw Dogs are topped with mustard, homemade chili, and a cool and creamy coleslaw. This is probably the most popular way to top hot dogs in the Carolinas and it happens to be my favorite.

- In a medium bowl, combine coleslaw mix, mayonnaise, sugar, and apple cider vinegar. Refrigerate until needed.
- In a large nonstick pan cook the ground beef and onion until ground beef is no longer pink. Crumble the meat with a wooden spoon as it cooks. Spoon off any excess fat/liquid.
- Add remaining chili ingredients and cook for about 20 minutes. If chili gets too thick, you can add more water. Let cool slightly and place in a food processor. Pulse 4 to 5 times to finely ground the beef. (Note: This is optional.)
- Heat grill and grill hot dogs until grill marks form on all sides.
- To serve, place hot dogs in buns. Top with mustard, chili, and slaw.

- Put a couple tablespoons of vegetable oil in medium sauce pan.
- On medium-high heat, saute onion until translucent, then add garlic.
- Stir for about a minute, then add ground beef.
- As beef begins to brown, use a potato masher to grind up the beef into small bits.
- Once brown, add in the rest of the ingredients (if your beef produced a lot of grease, you may want to strain some of that out first before adding the rest of the ingredients).
- Give it all a good stir to combine then reduce heat and simmer for about 15 minutes.
- Do a taste test at this point to see if it has enough salt.

- Cover the ground beef with water and break up the meat completely. Next, add the beer (if using), diced onion, Worcestershire, ketchup, hot sauce sauce and spices and start on Medium High to bring to a rapid boil.
- Reduce and simmer. You can cook it down faster if needed on a higher temperature, just until most water is reduced. Stir occasionally.
- When water is reduced, add tomato paste to thicken. Stir to incorporate.
- Serve as a hot dog topping.
- Leftover chili sauce freezes well.

- In a large skillet on the stovetop over medium heat, pour the oil into the pan (if your ground beef is very lean, if it isn't, you can skip the oil part). Break up the ground beef as you remove it from the package into the pan with your fingers. Cook ground beef till just past pink breaking it into fine pieces with a potato masher.
- Once the beef is just past pink, add all of the other ingredients and stir well. You can serve this immediately, but the flavor will deepen if you allow it to simmer for just a bit. This may mean that you need to add a little more of the stock to loosen the consistency.

- In a dutch oven or heavy bottom pot, brown ground beef. When the meat is no longer pink, drain excess fat and add onions to pot, stir. Add in garlic, tomato paste, chili powder, salt, pepper and cumin and cook for 2-3 minutes. Add celery salt, sugar, Worcestershire sauce, mustard, tomato sauce, honey and ketchup, stir. Add in water.
