Our version uses fresh green beans and potatoes, but we have a fun trick-we peel a thin strip around the middle of each potato before cooking for textural contrast and pretty presentation.

- Heat oil in a 5-quart saucepan over medium-high. Add onion. Cook, stirring occasionally, until just tender, about 2 minutes. Add garlic and red pepper, and cook, stirring frequently, until onion is tender, about 3 minutes.
- Add stock, salt, and potatoes. Bring to a boil, then reduce to a steady simmer. Simmer 10 minutes or until the potatoes are just tender enough to be pierced with a fork but still firm.
- Add green beans, cover, and simmer until very tender, about 6 minutes. Use a slotted spoon to transfer the potatoes and green beans to a serving dish. Bring the liquid to a boil, and cook until reduced to 1 cup, about 6 minutes. Spoon over the vegetables, and gently fold to mix. Serve hot.

- Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
- Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

- Fry the bacon or the ham hock until the fat starts to render out.
- Add canned green beans, including the water in the can.
- Salt and pepper to taste.
- Add the potatoes and just enough water to cover; cook for about 25 minutes.
- For fresh green beans:.
- Sauté the pork after you have washed and cut the green beans in half; add to pot. Cover with water. Add salt and pepper and cook until tender on low heat.
- Add in potatoes and cook a little longer until the potatoes are done.
SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES

- In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

- In a medium sized saucepan, place the red potatoes and cover with water. Boil over medium high heat until a fork can pierce the potatoes easily. (about 15 minutes)
- Drain the potatoes and set them aside.
- In the same saucepan, place 4 slices of bacon and allow to fry until crispy.
- When crispy, remove the bacon and set aside.
- Add the butter to the bacon drippings and heat over medium heat till melted. Add the chopped onions and cook till translucent.
- Cut the bacon into pieces and add back to the saucepan.
- Drain the cans of green beans and pour into the saucepan.
- Add the potatoes back to the saucepan. Add water to come about halfway up the level of the green beans in the saucepan (about a cup of water) (read step 9 before you add the water).
- Add 1 Tbs sugar and Add 1 heaping tsp of chicken broth concentrate (if you do not have broth concentrate, then add chicken broth instead of water in step number 8). Add the vinegar and cayenne.
- Stir well and when beans start to steam and boil, they are done. Taste and add salt and pepper to taste.

- If using fresh green beans, snap off the ends then snap the beans into 2-inch pieces. Wash thoroughly.
- Cook bacon until crispy, then remove from pot.
- Add green beans to bacon grease and stir to coat well.
- Add bacon back to pot. Add broth, garlic powder, salt, and pepper.
- Bring to a boil then turn down to a simmer and cook until tender, 30-45 minutes. Taste periodically and add seasonings as necessary.

- Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.
- Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
- While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.
