Old-Fashioned Liver And Onions Recipe image

If you're already a fan of liver's earthy flavor, then this gently updated recipe for old-fashioned liver and onions promises to become a favorite.

Categories     Main Course

Time 30m

Number Of Ingredients 12

2 large onions, sliced
4 tablespoons unsalted butter, divided
3 tablespoons extra virgin olive oil, divided
3 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
1 cup all-purpose flour
4 slices calf's liver (about 1 ½ pounds)
¼ cup chicken stock
2 tablespoons lemon juice
2 tablespoons fresh flat-leaf parsley, minced
¼ teaspoon dried sage
1 lemon, cut into wedges

Steps:

  • Slice the onions to no more than a quarter-inch thick.
  • Heat two tablespoons of the butter and one tablespoon of the olive oil in a large sauté pan at medium-high heat.
  • Once the butter is melted, add the onions, one teaspoon of the salt, and one-half a teaspoon of the pepper, and sauté until the onions have caramelized to a light brown color (around 8 minutes).
  • Combine the flour, the rest of the salt, the rest of the pepper, and the dried sage in a bowl big enough to accommodate your liver slices.
  • Dip both sides of each slice of liver into the seasoned flour, thoroughly coating each piece.
  • Heat one tablespoon of the butter and another tablespoon of olive oil over medium-high heat.
  • When the butter has melted and the oil is shimmering, add two slices of the liver and sauté for 1 1/2 to 2 minutes per side. Set aside and repeat with the other two slices of liver.
  • With the pan still hot and the flame still set to medium-high, add the chicken stock or broth, the lemon juice, and the parsley to the pan, and stir to combine.
  • Add the caramelized onions, and stir everything together to deglaze the pan.
  • Divide onto four plates, and serve each with a lemon wedge, balsamic vinegar (if using) and a sprig of parsley.

LIVER AND ONIONS W/ GRAVY

Liver and Onions W/ Gravy image

This was the most tender and tasty version of liver and onions I ever had. The broth and the dredged flour on the liver makes a very nice gravy. It is good served over rice or with mashed potatoes.

ABSOLUTE BEST LIVER AND ONIONS

Absolute Best Liver and Onions image

This recipe will turn liver haters into converts. Very simple! The three things that will set your liver above all others are: 1) soak in milk, 2)turn liver as little as possible and 3) don't overcook!

Provided by JSHULER43

Categories     Everyday Cooking

Time 45m

Yield 4

Number Of Ingredients 6

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

SOUTHERN FRIED CHICKEN LIVERS

Southern Fried Chicken Livers image

Mom made them because they are cheap, and now the convenience stores sell them in the South! You must have a fry screen -- these darn things pop and will burn you! Serve with pepper gravy or a packet of chicken gravy.

Provided by Cindy Capps Lepp

Categories     Meat and Poultry Recipes     Chicken

Time 20m

Yield 4

Number Of Ingredients 7

1 pound chicken livers
1 egg
½ cup milk
1 cup all-purpose flour
1 tablespoon garlic powder
salt and pepper to taste
1 quart vegetable oil for frying

Steps:

  • Place the chicken livers in a colander, and rinse with water. Drain the livers well. Whisk together the egg and milk in a shallow bowl until well blended. Place the flour, garlic powder, and salt and pepper in a resealable plastic zipper bag, and shake to combine.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Place the chicken livers in the bowl of egg and milk mixture, and coat each liver. Place the livers, one at a time, into the plastic bag of flour mixture, and shake the bag to coat the each liver completely.
  • Gently place the coated livers, a few at a time, into the hot oil. Cover the pan of oil with a frying screen to avoid getting burned by spatters of oil that will pop out as the livers fry. Deep fry the livers until crisp and golden brown, 5 to 6 minutes.

SOUTHERN FRIED LIVER 'N' ONIONS

Southern Fried Liver 'n' Onions image

My husband and I have always loved liver and onions. My mom and my grandma told me how to make this years ago. My mom always steamed hers, but I prefer not to. I like it crispy and golden with the onions caramelized. My daughters never would touch liver, so when they lived at home, I had to break out the PB&J or scrambled eggs...

Categories     Beef

Time 35m

Number Of Ingredients 8

1 lb package beef liver
2 large onions, peeled and sliced thin
1/2 tsp sugar
1/2 c self-rising flour
1/2 c self-rising corn meal (not mix)
1 tsp salt
1/2 tsp black pepper (or to taste)
canola oil for frying

Steps:

  • 1. Pour about 1/2" to 1" canola oil into a heavy skillet (I use a cast iron chicken fryer). Turn heat to high. When oil is hot, add onions and sprinkle with sugar. Reduce heat to medium high and cook, stirring frequently until onions have lightly browned. Remove from pan and set aside.
  • 2. Remove liver from package, wash. If pieces are large, cut in half. Mix flour, corn meal, salt and pepper in a shallow dish. Roll liver pieces in flour mixture.
  • 3. In the same skillet that onions were caramelized in, add liver pieces a few pieces at a time so as not to overcrowd your pan. Brown well on both sides using medium to medium high heat. Transfer to plate and repeat with next batch.
  • 4. Once all liver is browned, return to pan and top with onions. Reduce heat to medium and cook for about 3 to 5 minutes. Transfer to serving platter and arrange caramelized onions on top. Serve hot with your favorite veggies (I like to serve with mashed potatoes, sawmill gravy and green beans).
