SOUTHERN CORNMEAL HUSHPUPPIES
Steps:
- Combine all ingredients in a large bowl. Mix with spoon. The batter should be just wet enough that you can shape it into balls about the size of a walnut with your hands and it sticks together.
- Have oil hot in a skillet and drop hushpuppies into oil. Cook about 3 to 4 minutes browning on all sides. Remove and drain on paper towels.

Steps:
- In a medium bowl, mix the cornmeal, flour, baking powder, pepper, salt, sugar, baking soda and cayenne. In another bowl, gently mix the buttermilk, scallions and eggs.
- Whisk the wet and dry ingredients together until just combined, then rest the batter for 10 minutes.
- In a 6-quart stockpot, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 to 360 degrees F. Drop small scoops or rounded tablespoons of the batter into the oil in batches of eight. As soon as the hush puppies start to float, use tongs to rotate and cook until both sides are crisp and light golden brown, 60 to 90 seconds. It helps to put a pasta strainer on top of the hush puppies at this point to keep them submerged. Use a slotted spoon to remove the hush puppies, and transfer to a clean brown paper bag to remove excess grease. Repeat for the remaining batter, about 24 hush puppies total.
- Serve the hush puppies steaming hot.

TRUE SOUTHERN HUSH PUPPIES
I spent many a night at "Henry's Fish and Grill", one of the top restaurants in Mississippi, and had these wonderful hush puppies with fresh caught bass that we would catch and the chef so graciously prepared. It wasn't until my cousin married one of the chefs that I ever got the recipe. I never gave it out, but now they are sadly no longer there and I want to pass on this beautiful recipe. I hope you enjoy it--and Chef Henry, this is your recipe.

- Combine the cornmeal, flour, sugar, baking powder, baking soda, cayenne pepper, and salt in a mixing bowl.
- In a separate bowl, whisk together the grated onion, egg, and buttermilk. Add to the dry ingredients, stirring just until combined.
- In a dutch oven or deep cast iron skillet, heat 2 inches of oil to 375 degrees F. When the oil is hot, use two spoons to drop batter into it by the tablespoonful, using the back of one spoon to push the batter into the hot oil all at once each time. The batter will immediately sink to the bottom of the pot for a few seconds, then pop up to the top. Fry for 3 minutes on one side, then turn and fry an additional 3 minutes on the other side, or until the hush puppies are golden brown, then remove from the oil and a tray lined with paper towels. Be sure to keep an eye on the oil temperature while frying so that it stays consistent. You may need to work in batches to fry all the batter.
