Time 1h45m

Yield 18

Number Of Ingredients 11

4 skinless, boneless chicken breast halves
1 (16 ounce) package dry corn bread mix
1 (1 pound) loaf day-old white bread, torn into small pieces
4 tablespoons margarine
½ cup chopped onions
½ cup chopped celery
1 (10.75 ounce) can condensed cream of chicken soup
⅛ teaspoon garlic powder
2 teaspoons poultry seasoning
½ teaspoon ground black pepper
6 eggs

Steps:

  • Place the chicken breast halves in a large saucepan with enough water to cover. Bring to a boil. Cook 1 hour, or until the meat is tender and easily shredded. Shred chicken and set aside. Reserve 4 to 6 cups of the remaining broth.
  • Prepare an 8x8 inch pan of cornbread according to package directions. Crumble the corn bread into a large bowl. Mix in the white bread.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, melt the margarine and stir in the onions and celery. Slowly cook, stirring occasionally, until tender.
  • Stir the onions and celery into the bread mixture. Mix in the chicken, 4 cups reserved broth, cream of chicken soup, garlic powder, poultry seasoning, pepper and eggs. Blend with a potato masher until the mixture is the consistency of gelatin. Use more of the reserved broth as necessary to attain desired consistency. Transfer to a 9x13 inch baking dish.
  • Bake in the preheated oven 30 minutes, or until golden brown.

Southern Cornbread Dressing image

Whether you call it dressing or stuffing, this EASY Southern Cornbread Dressing will be the star of your Thanksgiving table!

Provided by Jessica Formicola

Categories     Side Dish

Time 4h20m

Number Of Ingredients 21

1 cup yellow cornmeal
1 cup flour
⅔ cup sugar
1 tablespoon baking powder
½ teaspoon coarse salt
1 cup buttermilk
2 large eggs
½ cup unsalted butter (, softened)
1 bag (12 oz) dry stuffing cubes
½ cup unsalted butter
1 cup white onion (, chopped)
1 cup celery (, chopped)
1 tablespoon dried parsley
2 teaspoons dried sage
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon coarse Kosher salt
½ teaspoon black pepper
2 large eggs
2 ½ - 3 cups chicken broth

Steps:

  • Preheat oven to 400 degrees and prepare an 8x8 baking dish with cooking spray.
  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder and salt.
  • Add buttermilk, eggs and butter, stirring until all is wet. Do not overmix.
  • Transfer into prepared pan.
  • Bake for 20-30 or until toothpick inserted in the center comes out clean.
  • Allow to cool fully before cutting.
  • Cut into 1-2 inch cubes. Heat oven to 250 degrees and toast in a single layer for 30-40 minutes.
  • Preheat oven to 350 degrees and prepare a 9x13 baking dish (or other 3 quart casserole dish) with cooking spray.
  • In a large skillet, melt butter over medium heat.
  • Add onions and celery, cooking approximately 3-4 minutes or until they start to soften.
  • Remove from heat and add parsley, sage, thyme, garlic powder, onion powder, coarse sea salt and ground black pepper, stirring well.
  • In a large mixing bowl, toss hot onion mix with toasted cornbread and stuffing cubes. Word to the wise, use a larger bowl that you think you need.
  • Add beat eggs, tossing to combine. Gradually add broth to cornbread mixture. You might not need all of the broth. Use less for a crunchy dressing and more for a softer, cake-like dressing.
  • Transfer to prepared baking dish.
  • Bake, uncovered, for 20-25 minutes or until golden brown.
  • Remove from oven and serve immediately.

SOUTHERN CORNBREAD DRESSING

Nothing says "welcome home" like the aroma of a fresh baked Southern Cornbread Dressing. In the South you can guarantee there will be dressing on the table (no stuffing down here!) and one of the most popular dressings is cornbread. We've developed a special Cornbread Crumble recipe specifically for this Southern Cornbread Dressing. Our cornbread is a little-bit sweet, but it blends perfectly with the celery, onions, and sage.

REAL SOUTHERN HERBED CORNBREAD STUFFING

Real Southern Herbed Cornbread Stuffing image

NO bread, NO oysters, NO sausage, NO Eggs, NO Giblets. Simply the best cornbread stuffing you will ever put in your mouth. This is one of those 'secret' recipes handed down from my grandmother's grandmother. It has never been written down until now, but was taught in the kitchen to each generation during the holidays while helping grandma prepare the stuffing and listening to the stories of when they were little girls in the kitchen helping their grandmas.

  • Preheat your oven to 350 degrees F. Then, chop the onion, carrots and celery into small chunks. Add the chopped veggies to a large saute pan with a bit of olive oil, salt and pepper. Stir occasionally and cook over medium heat until soft, about 7 minutes. While the veggies are cooking prepare the rest of the ingredients.
  • Chop or tear the white bread into small 1/2 inch to 1 inch pieces. Crush the cornbread into small fine pieces, it is okay if there is a mix of crumbs and chunks this will just add texture. Add them to a large bowl with the croutons and cornbread and toss until combined.
  • Once the veggies are soft, add everything (except the butter) to a extra large prep bowl and stir/toss thoroughly to combine. I like to add little bits of everything then stir, then add more and continue until I use all the ingredients. Be careful to spread herbs and seasonings out so you don't get big pockets of them. The dressing will be thick, chunky and a tad moist, but NOT watery.
  • Butter the sides and bottom of your baking dish then pour the dressing in. Spread it into an even layer then add small chunks of butter over top and drizzle with bit of chicken stock (this will keep it moist). Cover the dish with foil and bake on the center rack for 40 minutes.

SOUTHERN DRESSING ARCHIVES - SOUTHERN MADE SIMPLE
2020-11-17 Even though there are many similarities, traditional Southern Cornbread Dressing is different from “stuffing” for a few reasons. Stuffing is typically known to be a bit herbier, with sage being the stand-out herb used. While many dressing recipes do call for sage and other seasonings (such as this recipe,) you’ll frequently find that many omit the sage all together. …
