SOUTHERN CHICKEN SALAD
Steps:
- Preheat oven to 350 F. Line a pan with aluminum foil. Set aside.
- Brush the chicken very lightly with a little olive oil.
- To season the chicken, mix together Old Bay Seasoning, garlic powder, onion powder, and celery salt.
- Sprinkle chicken generously with seasoning on top and bottom.
- Place chicken on prepared pan and bake for 20-25 minutes. (You may need more or less time depending on the thickness of your chicken)
- Once the chicken is done, let it cool and then dice it up into small chunks and place in a large bowl.
- Add diced celery, diced onions, diced eggs, sweet relish, and dill weed to the large bowl. Stir to combine.
- Next, stir in the mayonnaise a little at a time until your desired creaminess is reached.
- Stir in parsley and black pepper
- Taste and adjust the seasonings if needed. (see note)
- Cover and refrigerate until chilled. (about 1 hour)
- Stir before serving. Serve with crackers or on buttered croissants.
SOUTHERN CHICKEN SALAD
Buttermilk lends the dressing a distinctive flavor, and grapes and cashews lend it richness. I have found that it works best if I add the dressing all at once, but if there is any left over, pass it around to people separately.

- TO MAKE DRESSING: Whisk the mayonnaise, green onions, buttermilk, dill and ground black pepper in a small bowl to blend (can be made 1 day ahead). Cover and chill.
- TO MAKE SALAD: Arrange the chicken in a heavy, medium size skillet. Add the wine, dill and ground black pepper. Season with salt. If necessary, add water to cover the chicken. Simmer over medium low heat until chicken is just cooked through, turning once (about 11 minutes). Transfer chicken to a plate and let cool.
- Cut chicken into 1/2 inch pieces. Place in a large bowl. Add the grapes and the celery and mix in the dressing to thoroughly coat the mixture. Season with salt and pepper to taste. Cover and refrigerate for at least 20 minutes to develop the flavors. (Can be prepared up to 3 hours ahead).
- Arrange the lettuce leaves on plates, mound on the salad and sprinkle with nuts. Garnish with fresh dill and serve.

Steps:
- Chop chicken as desired and place in a medium size mixing bowl.
- Wash celery stalks under cool water, chop very fine.
- Add chopped celery to mixing bowl.
- Add the chopped onions.
- Add sweet pickle relish.
- Add mayonnaise.
- Add a little sugar if desired.
- Add salt.
- Add black pepper.
- Add Mustard.
- Add the chopped boiled egg.
- Stir mixture well, cover and refrigerate for at least one hour prior to serving.
- Serve cool and enjoy!
CLASSIC CHICKEN SALAD SANDWICHES
Steps:
- To bake boneless chicken breasts, preheat the oven to 350 F. Line a baking pan with foil.
- Arrange the chicken on the pan and season lightly with salt and freshly ground black pepper.
- Bake until the chicken registers 165 F on a food thermometer. Depending on the size and thickness of the boneless chicken breasts, it will take 22 to 30 minutes. Let cool and chop.
- To poach boneless chicken breasts, place chicken in a single layer in a deep skillet or sauté pan.
- If desired, add some herbs and chopped aromatic vegetables, such as onions, garlic, or carrots. Cover the chicken with water (about 1/2 to 1 inch above the chicken breasts) and bring to a boil over high heat.
- Reduce the heat to a simmer, cover the pan, and continue cooking for 8 to 15 minutes, depending on the size of the chicken pieces.
- Check the chicken breasts with a food thermometer to ensure they are done to at least 165 F. Let cool and chop.
- Once you've cooked the chicken, gather all of the ingredients.
- In a medium bowl, combine the cooked, chopped chicken, onion, celery, and egg. Stir to combine.
- Add 1/3 cup of mayonnaise, the dill pickle relish, salt, and pepper to the chicken. Stir to blend well.
- Add more mayonnaise to moisten, if desired.
- Serve on bread with lettuce and enjoy.

- To make Southern Chicken Salad, get your eggs and chicken cooking at the same time. Start by adding your eggs to cold water in a large saucepan along with a splash of vinegar. Heat your saucepan on High until your water boils, then cover your pan and turn your burner off. Do not remove your saucepan but let it continue to stay on the now turned off stove burner.
