SUPER FLAVORFUL CABBAGE SIMMERED IN CHICKEN BROTH, WITH ONIONS, GARLIC, AND SMOKED TURKEY. SEASONED WITH APPLEWOOD SMOKED SALT, BLACK PEPPER, AND DOUSED WITH A LITTLE HOT SAUCE!

Provided by Divas Can Cook

Categories     Side Dish     Vegetable

Time 30m

Number Of Ingredients 8

1 large head of cabbage
2-3 tablespoons butter
1/2 large white onion (sliced)
1/2 teaspoon garlic (minced (can add more if desired))
2 cusp chicken broth
1 fully-cooked (smoked turkey wing or leg)
Smoked salt & pepper (to taste)
hot sauce (if desired)

Steps:

  • Cut cabbage into quarters and then cut each quarter into strips. Set aside.
  • In a large pot or deep skillet, melt butter over medium heat.
  • Add in onions and cook until semi-translucent.
  • Add in garlic and cook until fragrant.
  • Slowly pour in chicken broth.
  • Add in the smoked turkey. (You can add it in whole but I like to chop it up a bit so that all the meat is simmering with the broth)
  • Bring to a simmer and cover.
  • Simmer for about 5-10 minutes.
  • Add cabbage and toss.
  • Cover and continue simmering (do not boil) until your desired firmness is reached, tossing cabbage mid-way.
  • When cabbage is done removed the turkey and chop it up into small bits.
  • Return smoked turkey to pot.
  • Taste cabbage and season with smoked salt and black pepper.
  • Serve with a splash of hot sauce if desired.

CABBAGE CASSEROLE

Cabbage Casserole image

This casserole provides a lovely, snappy contrast to tender barbecued pork or brisket.

Provided by Southern Living Editors

Categories     Casserole

Time 40m

Yield Serves 8 (serving size: about 1 1/2 cups)

Number Of Ingredients 13

5 tablespoons (2 1/2 oz.) salted butter, divided
1 medium (2 lb.) cabbage, shredded (about 10 cups)
1 cup chopped celery (about 2 stalks)
2 medium-size yellow onions, chopped (about 2 1/2 cups)
1 garlic clove, chopped (about 1 tsp.) or to taste
Cooking spray
2 tablespoons all-purpose flour
1 1/2 cups evaporated milk (from 1 12-oz. can)
Dash of Worcestershire sauce
1 teaspoon kosher salt, or to taste
1/2 teaspoon black pepper, or to taste
4 ounces Parmesan cheese, grated (about 1 cup), divided
1/3 cup dry breadcrumbs

Steps:

  • Preheat oven to 350˚F. Melt 2 tablespoons of the butter in a large skillet set over medium. Add cabbage, celery, onions, and garlic, and cook, stirring often, until tender, 10 to 15 minutes. Transfer to a 3-quart lightly greased (with cooking spray) baking dish.
  • Melt 2 tablespoons of the butter in a medium saucepan over medium; whisk in flour, and cook, whisking constantly, until smooth and thick, about 1 minute. Gradually add milk to saucepan, whisking constantly to remove any clumps. Cook, whisking constantly, until thickened and smooth, about 3 minutes. Remove from heat, and whisk in Worcestershire, salt, pepper, and 1/2 cup of the Parmesan until smooth. Pour sauce over cabbage mixture.
  • Place remaining 1 tablespoon butter in microwavable bowl, and microwave on HIGH until melted, about 30 seconds. Add breadcrumbs and remaining 1/2 cup Parmesan to melted butter, and stir until combined. Sprinkle breadcrumb mixture evenly over cabbage.
  • Bake in preheated oven until casserole is bubbly and breadcrumbs are golden, 20 to 25 minutes.

SOUTHERN FRIED CABBAGE AND SAUSAGE

Southern Fried Cabbage And Sausage image

What is more comforting than the Southern classic that is cabbage and sausage, nothing at all! This extra filling and hearty dish is so wildly easy to make yet so flavorful and perfect for meal prepping. You can serve this one as a side dish or as a main entree, a simple meal to have in your cozy rotation!

Provided by Quin Liburd

Categories     Main Course

Number Of Ingredients 11

3 tablespoons unsalted butter, sub for bacon grease or duck fat
12 ounces pre-cooked andouille or kielbasa sausage links, sliced into rounds
1 cup chopped yellow onion
4 garlic cloves, finely minced
2 teaspoons packed brown sugar
1 medium-sized head of green cabbage (about 2 lbs), roughly chopped into pieces
2 tablespoons apple cider vinegar, sub for red wine vinegar
2 teaspoons cajun seasoning- I use Tony Chachere's or Slap Ya Mama
1/4 teaspoon ground nutmeg
1/2 teaspoon crushed red pepper flakes, optional
freshly chopped parsley, for garnish- optional

Steps:

  • In a large deep skillet or dutch oven, heat the butter over medium heat. Once the butter is sizzling, add the sausage rounds into the pan in an even single layer. Cook until golden brown, about 3-5 minutes per side. Then use a utensil to transfer the sausage to a plate and set aside.
  • Add the chopped onion into the pan and sauté together until the onion becomes translucent and tender, about 2-3 minutes. Then add in the garlic and stir together along with the onion until the garlic is fragrant, about 1-2 minutes.
  • Add in the brown sugar and stir together with the onion/garlic until the sugar begins to dissolve.
  • Toss in the chopped cabbage- note: depending on the size of your pan, you may need to add in about half of the cabbage first. Then pour in the vinegar and carefully stir together. Cover the pan with a lid to allow the cabbage to steam through until tender, about 3-4 minutes. Then add in any remaining cabbage, if needed, and continue cooking for another 3-4 minutes.
  • Add the cooked sausage rounds back into the pan and seasoning the dish with the cajun seasoning, nutmeg, and red pepper flakes (if using). Stir everything together to fully combine. Allow the dish to continue cooking together for another 3-5 minutes and then remove from heat.
  • Taste the cabbage and sausage and adjust seasoning by adding more cajun seasoning, if desired. Serve immediately and garnish with freshly chopped parsley if you'd like. Enjoy!

  • In a large frying pan, cook 6 strips of bacon over high heat. Once cooked, remove bacon from pan and set aside. Leave bacon grease in the frying pan.
  • Add butter, onions and minced garlic to frying pan with bacon grease. Cook over high heat until onions just start to brown. Keep stirring the onions often so they don't burn
  • In a large saucepan, add chopped cabbage (cabbage should be chopped into bite-sized pieces), contents of frying pan (onions, garlic and remaining butter), all the spices, apple cider vinegar, and Worcestershire sauce. Stir all until cabbage is well coated.
  • Cover pot with a lid and simmer over low heat for 10 to 15 minutes, stirring often so nothing burns on the bottom of the pot. Cabbage is cooked when it is softened but not wilted.TIP: If you don’t have a lid big enough for the pan, you can move everything into a large pot when it's time to cook together. Foil over the frying pan won’t work as a “lid” since enough steam won’t stay in the pan to cook the cabbage.
