¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch

SOUTHERN PEACH COBBLER

Southern Peach Cobbler image

My little cousin calls this dish "Peach Cobblet" because when he was younger, he couldn't pronounce "Cobbler." This cobbler is a spin-off of my mother's recipe. The crust is buttery and flaky (I use a butter+shortening mix), it's not too thick and not too thin, and it's a FLAVORED crust, so it boasts a lot more than just butter and flour. The filling is perfect and can be adjusted to your taste. This is a REAL, TRADITIONAL STYLE COBBLER, the way it was meant to be. No biscuit-topping and no lattice-style crust here. Serve warm with premium vanilla bean ice cream or serve with whipped topping, drizzled caramel, and a sprinkle of nutmeg.

Time 1h30m

Yield 10 serving(s)

Number Of Ingredients 18

2 cups flour
1 1/2 teaspoons salt
1/2 cup sugar
1 teaspoon nutmeg
1 teaspoon cinnamon
1/3 cup shortening
1/3 cup cold butter, semi-soft
water
1/2 orange, juice of
2 tablespoons flour
2 (29 ounce) cans peach slices, drained
1/2 cup butter, melted
1 1/2 cups sugar
1 tablespoon nutmeg
2 tablespoons cinnamon
1 teaspoon salt
1 tablespoon lemon juice
1 tablespoon cornstarch

Steps:

  • Sift flour and salt into a large bowl. Mix in sugar, nutmeg, and cinnamon.
  • Cut in shortening and butter until the texture is grainy and crumbly.
  • Add 5-6 tablespoons of water at a time and gradually squeeze in the orange juice, stirring with a fork and adding touches of flour until your dough is smooth and semi-dry. Form dough into ball.
  • Preheat oven to 350 degrees.
  • Cut the dough in half. Sprinkle a dry, clean surface with a small 1 tablespoons of the flour.
  • Roll out one half of the dough in the shape of your dish and place in a small butter-greased 8x8 or 9x9 glass, square/rectangular cobbler or casserole dish.
  • Re-sprinkle surface with second tablespoon of flour and roll out second half in the same shape and set aside.
  • In a medium-sized bowl, combine peaches, butter, sugar, nutmeg, cinnamon, salt, lemon juice, and cornstarch. Taste and add more sugar, cinnamon, or nutmeg if desired.
  • Pour peaches mixture into crust and smooth over.
  • Top the baking dish with the second crust and fold bottom and top crusts over onto the cobbler to seal the cobbler.
  • Bake in center of oven at 350 degrees for 45 minutes or until golden brown.
  • Cool for at least 25 minutes before serving, allowing filling to thicken.

SOUTHERN BOURBON FRESH PEACH COBBLER

Southern Bourbon Fresh Peach Cobbler image

I've pieced it together from a few recipes to get the balance I like between fruit and topping. It's great for serving to guests and definitely best with some ice cream. This is also great vegan with water or apple juice replacing the buttermilk, and margarine instead of butter. You could even serve it with tofrutti ice cream.

Categories     Dessert

Time 1h30m

Yield 8-10 serving(s)

Number Of Ingredients 17

4 cups yellow peaches, sliced and pealed (blanch in boiling water for about 30s depending on ripeness and skins should slip off)
1/2 cup white sugar
1 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 fluid ounce Bourbon (optional)
2 tablespoons fruit jam, blueberry and blackberry are very nice
1 1/2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 cup buttermilk
1/2 teaspoon salt
3/4 cup melted butter
1 cinnamon stick
1/4 cup orange juice
1 teaspoon lemon zest
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350°F.
  • Reserve peals and pits from peaches.
  • Mix sliced peaches, sugar, nutmeg and cinnamon powder in a bowl and reserve.
  • Combine bourbon (Maker's Mark is really good in this), orange juice, lemon juice, lemon zest, fruit jam, cinnamon stick, and peach scraps in a sauce pan, bring to a boil, then lower to a simmer and reduce mixture for approximately 10 minutes.
  • Mix flour, buttermilk, baking powder, baking soda and salt with a dash of cinnamon and nutmeg and set aside or in refrigerator for a few minutes. I have also used Dry Buttermilk Pancake Mix and 1/2 cup milk in place of the flour, buttermilk, baking powder and baking soda.
  • Strain reduced orange juice mixture and mix with peaches.
  • Pour melted butter into an 8x11" baking pan.
  • Spoon dough mixture over butter evenly, but leaving some gaps (this helps the dough rise over the peaches later.
  • Pour peaches over dough.
  • Bake for about 1 hour at 350F, or until the crust has risen to top of cobbler and crisped slightly. Can add a bit of sugar to top of cobbler just before finished and place in broiler to get a crisper caramelized topping, but beware this can be tricky.

Time 1h

Yield 6-8 servings

Number Of Ingredients 11

8 peaches, peeled and sliced (6 to 8 cups)
1/4 cup bourbon
3/4 cup sugar, plus more for sprinkling
2 tablespoons cornstarch
1 teaspoon ground cinnamon, plus more for sprinkling
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 sticks cold unsalted butter
3/4 cup heavy cream, plus more for brushing
1 quart vanilla-bean ice cream, for serving

  • In a 9- or 10-inch oven-proof skillet, melt the butter with the vanilla pod and scrapings over a medium flame. Continue cooking, swirling the pan occasionally, until the butter turns golden with dark flecks and smells nutty, about 5 minutes. Remove the pan from the heat and set aside, removing the vanilla pod once you are ready to add the batter.
  • Meanwhile, stir together the milk with the chia seed and set it aside to thicken. In a large bowl, whisk together the maple sugar, rice flour, millet flour, cornstarch, baking powder, sea salt and nutmeg. Whisk in the milk mixture until the batter is smooth and well-combined. It will be fairly runny.
  • Pour the batter into the hot, butter-filled pan. Place the peaches atop the batter, cut-side down, and sprinkle all over with the sugar. Bake the cobbler for 30-40 minutes. It is done when:-The edges are puffed and golden and pulling way from the sides of the pan.-The peaches are bubbling furiously.-The cobbler is set when you give it a shuffle.-A toothpick inserted into the batter comes out with moist crumbs.-If you peek inside the batter with the tip of a knife, the cobbler looks fluffy and airy.
