SUMMER SQUASH SAUTE

My mother used to whip this up for a quick summer side dish. Great with all the bounty from my dad's garden. Very easy and delicious.

Number Of Ingredients 6

1 -2 yellow squash, sliced thick
1 onion, sliced
1 tomatoes, cut in chunks
2 -3 tablespoons butter
1 tablespoon parmesan cheese
1/4 teaspoon garlic salt

Steps:

  • Saute squash and onion in butter until LIGHTLY browned.
  • Add tomato, parmesan cheese, and garlic salt.
  • Cover and cook until tender about 5 mins.
  • (Longer depending on how tender vegetables are desired) Can always add more of anything- squash, tomato, cheese or butter depending on taste.

I got this from another website and everyone in my family liked it. I thought it was delicious and very filling. I use the "Mexican style" type diced tomatoes. For a different taste, use Parmesan or low fat cheddar on top.

1 spaghetti squash (mine weighed three pounds when whole before cooking)
1 lb ground turkey breast
3 garlic cloves, minced
1/2 large onion, diced
1 green bell pepper, chopped
28 ounces diced tomatoes
salt and pepper
1 teaspoon italian seasoning
1 cup reduced-fat feta cheese

Steps:

  • Pierce the squash in several places, put on a plate and microwave until tender (mine took about 20 minutes).
  • Allow cool while you cook the meat and veggie mixture.
  • Brown meat with garlic, onion, salt and pepper, and bell pepper.
  • Drain and add Italian spice and tomatoes.
  • If it seems really liquidy, cook some of the liquid off.
  • Cut the squash in half and scrape out the seeds and discard them.
  • Use a fork to scrape the spaghetti into strands and mix gently with sauce mix.
  • Transfer to a large casserole dish that has been sprayed with cooking spray.
  • Bake uncovered for 35 minutes at 350 degrees.
  • Sprinkle the cheese on top and bake 10-15 minutes more.

I created this recipe at a time when i am growing a tad weary of salads and side salads and wanted a great vegetable side dish. I have always loved my Aunt Norma's stewed squash, and keeping her souther style- recipe in mind I created this yummy south beach friendly version.

2 small yellow squash, halved lengthwise and sliced about 1/4 in thick
1/3 cup vidalia onion, sliced thin
1 garlic clove, crushed
3 slices turkey bacon
1/4 cup dry white wine
1/2 teaspoon Splenda sugar substitute
1 teaspoon all purpose Greek seasoning, like cavendar (optional)
salt & fresh ground pepper
1 teaspoon olive oil

Steps:

  • Fry turkey bacon over medium-high heat in pan until crisp.
  • Depending on the brand of turkey bacon you use you may need to coat the pan slightly with cooking spray.
  • Remove bacon from pan and let drain on paper towels if oily, then crumble when cooled.
  • In the same pan, over medium-high heat add olive oil and then onions.
  • Sauté onions until they start to become translucent.
  • Add garlic, and yellow squash.
  • Season with salt and pepper.
  • Sauté for 1-2 minutes until squash is still crisp-tender.
  • Add white wine and bring mixture to a boil.
  • Reduce heat to medium-low, add Splenda and Greek seasoning and stir to combine.
  • Let simmer for 10 minutes or until your desired tenderness for squash.
  • Just before serving, stir in crumbled bacon and serve.
