Nothing is more American than meat and potatoes but that doesn't mean it can't have a Mexican twist on it!

1 (4 ounce) package Idahoan® Bacon & Cheddar Chipotle Flavored Mashed Potatoes
2 pounds lean ground beef
1 cup bread crumbs
¾ cup onion, finely chopped
½ cup red bell pepper, finely chopped
½ cup canned corn, drained
½ cup milk
1 egg
½ teaspoon salt
1 ½ teaspoons chili powder
1 teaspoon cumin
¼ teaspoon black pepper
½ cup thick and chunky salsa
Avocados, sliced for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare mashed potatoes following package directions. Set aside.
  • In a large bowl, combine all the ingredients from beef through black pepper. Mix thoroughly but lightly.
  • Shape mixture into a 10x4-inch loaf. Place on rack coated with cooking spray on broiler pan.
  • Bake 1 hour and 20 minutes, or until internal temperature is 160 degrees F.
  • Let stand 5 minutes then frost with the mashed potatoes. Top with salsa and sliced avocados.

1 tbsp oil
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1/2 cup chopped bell pepper
1 package McCormick® White Chicken Chili Seasoning Mix
1 cup water
1 can (15 oz) white beans undrained
1 can (15 oz) black beans drained and rinsed
1 can (14 1/2 oz) diced tomatoes drained
1 can (8 3/4 oz) whole kernel corn drained

Steps:

  • Heat oil in large skillet on medium heat. Add chicken and bell pepper; cook and stir 5 minutes.
  • Stir in Seasoning Mix, water, beans, tomatoes and corn. Bring to boil. Reduce heat to low; cover and simmer 10 minutes or until chicken is cooked through, stirring occasionally. Serve with desired toppings.

1 can (15 ounces) black beans, rinsed and drained
4 taco shells, crushed
1/2 cup chopped onion
1/2 cup chopped green pepper
1/3 cup minced fresh cilantro
2 egg whites
2 tablespoons chopped jalapeno pepper
2 teaspoons ground cumin
2 teaspoons chili powder
3 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
Salsa, optional

Steps:

  • In a large bowl, combine the first 12 ingredients. Crumble beef over mixture and mix well. Press into a 9x5-in. loaf pan coated with cooking spray. Bake, uncovered, at 375° for 1 hour or until meat is no longer pink and a thermometer reads 160°., Cool for 10 minutes before removing from pan. Drizzle with salsa if desired.

This was one of those recipes that I clipped a long time ago but never got around to. Well, I got around to it and it was great! This is my first submission so I am feeling pretty confident that everyone will like it. Great with a side of Uncle Ben's Mexican Fiesta Rice!

1 poblano or green bell pepper, finely chopped
1/2 small onion, diced
1/2 cup reduced fat grated parmesan cheese
1/2 cup low sugar ketchup
2 tbsp Chipotle rub or similar flavored seasoning
1 lb 93% lean ground beef
1 egg
3/4 cup 2% cheddar cheese, shredded

Steps:

  • Preheat oven to 375 F.
  • Dice pepper and onion. Add to a mixing bowl along with ground beef, parmesan cheese, ketchup, seasoning and egg.
  • Bake in heated oven for 45-60 minutes using a meat thermometer to check internal temp is to 155F. Add shredded cheese to the top and put back in the oven 3-5 more minutes or until melted. Remove, let cool and serve.

0.25 cups dry bread crumbs
0.25 cups milk
2 slices bread
2 pounds ground beef
0.5 cups onion
1 packages taco seasoning
2 cups mexican style cheese
1 cans black olives
1 units tomatoes
0.25 cups green onions
0.5 cups salsa

Steps:

  • In a small bowl, combine bread crumbs with milk. Set aside. Grease a 9x5 loaf pan and place the 2 bread heels in the bottom. In a large mixing bowl, combine ground beef, onion, taco seasoning, and bread crumb milk mixture. Mix until well combined.
  • Spread 1/2 of meatloaf mixture in loaf pan on top of bread heels. Sprinkle 1 cup shredded cheese over meat, layer on top of cheese the sliced olives, tomatoes and green onions. Sprinkle on the other 1 cup of cheese over that. Spread rest of meatloaf mixture on top. Spoon the salsa on top.
  • Bake at 350 for 1 hour or until done. Let meatloaf rest 5-10 minutes covered after taking out of oven.
