I got this recipe from my very old Betty Crocker recipe file box. It was in the 'Outdoor Entertaining' section. I'm posting it exactly as written,per a request, but I don't know exactly what they mean by '1 envelope of meat marinade' which is critical to this recipe. There are numerous marinade recipes on this site,so if it were me, I'd look for one that would compliment / enhance the Mexican flavor, unless you can easily find the meat marinade envelope called for. Cook time does not include marinating time for the steak.

2 lbs beef round steak, 1/2 inch thick
1 (4 1/2 ounce) envelope instant meat marinade
1/4 cup catsup
1 tablespoon Worcestershire sauce
1/8 teaspoon red pepper sauce
1 (15 ounce) can refried beans
1/4 cup cheddar cheese, shredded
chili pepper (optional)
potato chips (optional)

Steps:

  • Score each side of meat 1/8 inch deep in diamond shaped pattern.
  • Prepare marinade as directed on envelope, and stir in catsup, Worcestershire sauce and red pepper sauce.
  • Marinate meat as directed on envelope, remove meat and reserve marinade.
  • Heat beans in foilware pan 15-20 minutes on side of grill. About 5 minutes before serving, sprinkle with cheese.
  • Place meat on grill, about 2 inches from hot coals. Cook about 5 minutes on each side, or to desired doneness, brushing with reserved marinade.
  • Cut beef into serving sizes, and serve with spoonfuls of beans, chili peppers and potato chips.
  • Note: You can use your choice of steak.

East Meets South of the Border Fajitas image

This is my sandwich entry for this week's Family/Friends Sammie. My family has always enjoyed Chinese and Mexican cuisine, so I decided to fuse the two together for this sandwich. A little bit Beef & Green Bean Stir-Fry (my favorite) with a little bit of Beef Fajitas (my husband's favorite). Hence, East Meets South of the Border...

1 lb flank steak, thinly sliced
5 c french beans, ends snipped and cut
2 tsp fat, unsaturated
4 flour tortillas (8-inch)
FAJITA MARINADE
1/4 c fat, unsaturated
1/4 c fish sauce
3 clove fresh garlic, minced
2 Tbsp fresh ginger, minced
1 tsp five spice powder

Steps:

  • 1. In bowl, whisk together marinade ingredients. Reserve and refrigerate 1/2 of mixture for later use. Pour other 1/2 of marinade into a large zip-lock bag, add the steak, and seal. Place in a baking dish and refrigerate for at least 4 and up to 8 hours, turning occasionally.
  • 2. After meat is finished marinating, remove meat. Discard the marinade.
  • 3. Heat 1 teaspoon fat in a large nonstick skillet over medium-high heat. Add beef to pan, and sauté for 4 minutes or until browned. Remove from pan.
  • 4. Wipe pan dry with paper towel. Add remaining 1 teaspoon fat to pan; heat over medium-high heat. Add beans to pan. Cover and cook 3 minutes. Uncover and cook 3 minutes, stirring frequently. Return beef to pan. Stir in reserved marinade; bring to a boil. Cook 1 minute, stirring constantly. Remove from heat.
  • 5. Preheat the oven to 325 degrees F. Wrap the tortillas in foil and place in the oven for 15 minutes to warm and soften. Remove from the oven and keep warm in the aluminum foil.
  • 6. Divide beef and bean mixture among warmed tortillas and enjoy.

I recently ate Carne Asada Tacos at On the Border Restaurant and fell in love with them. Their menu description is: Premium, mouthwatering carne asada steak drizzled with Jalapeno Ranch dressing and topped with melted cheese and crispy-fried onion strings, all in grilled flatbread tortillas. I came up with this recipe (with some help from other 'zaars) which I believe is a pretty good copy cat. I used the marinade from recipe 103372 by Sharlene--W and modified the dressing recipe 195520 by --Miss Diggy*--.

2 lbs flank steaks or 2 lbs round steaks
1/3 cup freshly squeezed lime juice
2 teaspoons garlic powder
1 tablespoon crushed red pepper flakes
fresh ground black pepper, to taste
2 tablespoons finely ground Mexican oregano (optional)
1/4 cup light mayonnaise
1/4 cup light sour cream
1 1/2 teaspoons buttermilk ranch salad dressing mix (roughly 1/2 of .04 ounce packet)
2 tablespoons diced jalapeno peppers
1 teaspoon jalapeno juice, from diced jalapeno peppers can
1 tablespoon cilantro, finely chopped
6 -8 pieces flat bread
2 cups Mexican blend cheese (or personal favorite)
1/2 cup French-fried onions

Steps:

  • For carne asada:.
  • Marinate meat, then prepare ingredients for dressing, before grilling meat.
  • Plan to have flatbread warmed as you are ready to serve meat.
  • Marinate steaks in lime juice in a shallow glass dish for 1 minute.
  • Next add garlic, crushed red chile, black pepper, and Mexican oregano.
  • Marinate in refrigerator for at least 20 but no longer than 40 minutes.
  • While marinating meat:.
  • Combine all ingredients for Jalapeno Ranch Dressing in a 1 cup dish.
  • Mix well and refrigerate to let flavors blend.
  • Preheat oven to 170 degrees (or lowest heat setting).
  • Grill meat to desired doneness
  • Remove steaks from grill and let "rest" for 5 minutes.
  • Before meat is about to be taken off grill or while it is resting, add 1/3-1/2 cup of cheese on each flatbread.
  • Lay the cheese covered flatbreads directly onto middle oven rack and warm until cheese is melted.
  • Once meat has rested, cut meat against the grain into thin strips.
  • On each flatbread add desired amount of meat, 1-2 tablespoons jalapeno ranch dressing and about 1 T french fried onion strings.
  • Enjoy!

1 lb beef, cubed (Chuck roast works well)
1/2 cup onion, diced
bacon drippings
1 cup tomatoes, seeded & diced
1/2 cup ancho chili, roasted skinned, seeds removed
2 cups beef stock
1 teaspoon salt
1 teaspoon pepper
1 tablespoon garlic, minced
2 teaspoons ground cumin
1 lb potato, cubed
1 cup carrot (diced)

Steps:

  • Sauté the beef and onions in the bacon drippings.
  • Add tomatoes, sliced green chilies, stocks and seasonings.
  • Cook over low heat until meat is tender (about two hours).
  • Add cubed potatoes and carrots during last 30 minutes.
