2 lbs boneless skinless chicken breasts, halved
1/4 cup extra virgin olive oil
1 dash black pepper, ground
1/4 teaspoon thyme, dried
1 teaspoon salt
1 garlic clove, crushed and minced
2 tablespoons fresh parsley, chopped
1/4 cup almonds, finely chopped
1/4 cup parmesan cheese, freshly grated
2 slices whole wheat bread

Steps:

  • Whole wheat bread crumbs:.
  • Use 2 slices whole wheat bread, toast them until lightly brown, then pulse in a food processor. Set aside.
  • Preheat oven to 400 degrees F.
  • Pound the chicken breasts to a 1/2 inch thickness and cut them into 12 pieces.
  • In a medium bowl, stir bread crumbs, Parmesan cheese, almonds, parsley, garlic, salt, thyme and pepper until mixed.
  • Pour oil onto a plate.
  • Dip the chicken into the oil and then into the bread crumb mixture to coat.
  • Place chicken on a cookie sheet.
  • Bake for 20 minutes or until juices run clear when the thickest part of the chicken is pierced with the tip of a knife. (Do not turn chicken over).
  • Serve immediately. Nutrition facts per serving 383 calories, 16 g total fat, 4 g saturated fat, 15 g carbs, 1 g fiber, 41 g protein.

6 boneless skinless chicken breast halves
1 1/2 teaspoons fresh rosemary, minced or 1/2 teaspoon dried rosemary
2 garlic cloves, minced
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt
2 tablespoons extra virgin olive oil
4 -6 tablespoons white wine (optional)
1/4 cup balsamic vinegar

Steps:

  • Rinse the chicken and pat dry. Combine the rosemary, garlic, pepper, and salt in a small bowl and mix well. Place chicken in a large bowl. Drizzle with the oil, and rub with the spice mixture. Cover and refrigerate overnight.
  • Preheat oven to 450. Spray a heavy roasting pan or iron skillet with cooking spray. Place chicken in pan and bake for 10 minute Turn chicken over. If drippings begin to stick to the pan, stir in 3-4 Tbs water or wine if using.
  • Bake about 10 min til thermometer registers 160 and juices run clear. If the pan is dry, stir in another 1-2 Tbs of water or wine to loosen the drippings. Drizzle the vinegar over the chicken in the pan.
  • Transfer the chicken to plates. Stir the liquid in the pan and drizzle over the chicken.

3/4 lb whole skinless boneless chicken breast, halved lengthwise
2 tablespoons dry sherry
1 tablespoon capers
1 tablespoon extra virgin olive oil
2 tablespoons trans-free margarine
1/4 teaspoon paprika
2 tablespoons minced fresh parsley
1 tablespoon lemon juice
salt and pepper

Steps:

  • Pound the chicken pieces to flatten them slightly. Season them with salt and pepper to taste.
  • Heat an empty pan on high heat, then add the oil and one tablespoon of the margarine and allow that to get hot (but not smoking). Then carefully add the chicken, making sure the oil doesn't splatter. Doing this process will prevent the chicken from sticking. If you heat the oil and pan together, or if the pan isn't hot enough, the chicken will stick.
  • Sauté the chicken pieces for 1 minute on each side, or until they are cooked through. Transfer the chicken with tongs to a platter and cover it loosely to keep it warm.
  • Pour off any remaining fat and oil from the skillet.
  • Return it to the stovetop and add the remaining 1 tablespoon margarine, the sherry, and the lemon juice, and bring the mixture to a boil.
  • Stir in the capers, the parsley, the paprika, and salt and pepper to taste, and spoon the sauce over the chicken.

4 chicken breasts, cut into bite-size pieces
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 large onion, chopped
1 garlic clove, minced
3/4 cup chicken broth
2 teaspoons ground paprika
1 1/2 cups broccoli florets
8 ounces whole wheat linguine
1 cup nonfat sour cream

Steps:

  • Season the chicken breasts with salt and pepper.
  • Add chicken to a skillet over medium heat with olive oil or cooking spray.
  • Cook for 7-8 minutes until the pieces begin to brown. Then set aside on a plate.
  • Add the garlic, onion and 3 tablespoons of the broth to the skillet and stir for 5 minutes.
  • Stir in paprika and cook for one more minute and then stir in the remaining broth, broccoli and chicken. Bring the mixture to a boil and reduce the heat to simmer for 20 minutes. While simmering make the linguine.
  • Stir the sour cream into the chicken. Cook for 1-2 minutes more.

1 tablespoon canola oil
1 onion, diced
2 garlic cloves, minced
1 tablespoon curry powder
1 teaspoon ground ginger
4 cups cauliflower florets
1 (13 1/2 ounce) can light coconut milk
1/2 cup low sodium chicken broth or 1/2 cup water
salt
pepper

Steps:

  • Salt and pepper the chicken breasts. Lightly brown the chicken for 5 minutes over medium-high heat with the oil then set aside on a plate.
  • Reduce the heat to medium-low. Add onion, garlic, curry powder, and the ginger. Cook for 2 minutes. Add the califlower, coconut milk and broth or water. Cover and simmer about 5 minutes until the vegetables are crisp-tender. Add the chicken back and cook until sauce is thickened and reduced (about 5 minutes.

2 boneless skinless chicken breasts
pepper, to taste
Mrs. Dash garlic and herb seasoning
2 tablespoons olive oil
1 teaspoon minced garlic
4 pieces turkey bacon
1 cup sliced mushrooms, any variety
1 onion, very thinly sliced
1/2 cup reduced-fat monterey jack and cheddar cheese blend

Steps:

  • Preheat oven to 350°F.
  • In a large, oven-proof skillet, heat olive oil and garlic on low. Be careful not to burn the garlic.
  • In another pan, cook turkey bacon until almost done.
  • In a zip-top bag, pound chicken breasts until thin. Season with pepper and seasoning.
  • Place seasoned chicken into skillet, and brown on both sides until turkey bacon is done. Place turkey bacon on top of chicken, and place in preheated oven for 20 minutes.
  • While chicken is baking, in bacon pan sautee mushrooms and onions until carmelized.
  • Remove chicken from oven, and top evenly with cheese. Return to oven for about 5 minutes, until fully melted.
  • Remove chicken from oven and let rest about 3 minutes.
  • Serve chicken with mushrooms and onions on top.
