This 7-layer dip is super easy and a beautiful dish to entertain with. I have a big colorful platter that I put it on. It's always a hit!!

1 (1 1/4 ounce) package taco seasoning
1 cup sour cream
1 cup guacamole
1 cup salsa
1 cup lettuce
1 cup Mexican blend cheese
4 ounces sliced olives
1 cup tomatoes

Steps:

  • Layer in this order.
  • 16 oz refried beans mixed w/ 1 package taco seasoning.
  • 1 c sour cream.
  • 1 c guacamole.
  • 1 c salsa.
  • 1 c lettuce.
  • 1 c Mexican cheese.
  • 4oz sliced olives.
  • 1 c tomatoes.

1 (8 ounce) package fat free cream cheese, softened
1 tablespoon taco seasoning mix
1 cup salsa (thick 'n chunky preferred)
1 cup canned black beans, drained and rinsed well
1 cup lettuce, shredded
1 cup fat-free cheddar cheese, shredded
1/2 cup green onion, chopped
2 tablespoons pitted ripe olives, sliced

Steps:

  • Beat cream cheese with electric mixer on medium speed until creamy.
  • Blend in seasoning mix.
  • Spread onto bottom of 9-inch pie plate or quiche dish.
  • Top with layers of the remaining ingredients; cover.
  • Refrigerate several hours or until chilled.
  • Serve with cut-up fresh vegetables or whole-wheat pita.

1 (16 ounce) can refried beans
1 (9 ounce) container of premade guacamole
1 (16 ounce) jar of medium chunky salsa
1 (8 ounce) package of shredded cheddar cheese
1 cup of diced fresh tomato
1 (2 1/4 ounce) can of sliced black olives (rinsed and drained)

Steps:

  • Layer each ingedient on top of one another in a 9.5 inch casserole dish.
  • Start by taking the cream cheese and spreading it along the whole bottom of your dish to create a layer(soften to room temperature for easy spreading).
  • Next spread the layer of refried beans.
  • Then spread your guacamole.
  • Then spread your salsa (trying not to mix layers).
  • Sprinkle the cheese over the top of it all.
  • Place chopped tomatoes and olives a top the layers and cheese.
  • Enjoy!

1 (8 ounce) container fat-free sour cream
2 cloves garlic, minced
1 fresh jalapeno pepper, finely diced
1 tablespoon chopped fresh cilantro
1 (1 ounce) packet taco seasoning
5 dashes hot pepper sauce
1 lemon, juiced
2 avocados - peeled, pitted, and mashed
3 cups shredded lettuce
1 (15 ounce) can black beans, rinsed and drained
2 (11 ounce) cans Mexican-style corn, drained
1 cup chunky salsa
1 cup shredded Mexican cheese blend
1 (2.25 ounce) can sliced black olives, drained
¼ cup sliced green onions
1 Roma (plum) tomato, chopped

Steps:

  • Mix together the sour cream, garlic, jalapeno pepper, cilantro, taco seasoning, hot pepper sauce, and 1/2 of the lemon juice in a bowl until well blended.
  • In another bowl, mash the avocado with the remaining lemon juice; set aside.
  • Spread the shredded lettuce over a 12-inch serving platter.
  • Layer the black beans evenly on top, followed by the Mexican-style corn.
  • Spread the prepared sour cream mixture over the corn.
  • Gently spread the avocado mixture on top of the sour cream.
  • Pour the salsa evenly over the avocado mixture.
  • Sprinkle the Mexican cheese blend, olives, green onions, and tomato on top.

While many incarnations exist, I have tailored my recipe to meet my dietary needs (food allergies/migraines). This dip uses lower fat and natural ingredients and is vegetarian-friendly, too. Feel free to modify to suit your tastes. That's what cooking (or in this case layering) is all about!

3 (16 ounce) cans refried black beans (I like La Preferida 99% Fat-Free)
1 (16 ounce) jar all-natural salsa (I prefer Frog Ranch Chipotle)
32 ounces all-natural sour cream (I like Daisy)
12 ounces all-natural guacamole (I like Calavo)
3 cups lettuce, shredded
2 beefsteak tomatoes, coarsely chopped
2 cups finely shredded cheddar cheese
8 ounces black olives, sliced
6 ounces green pimento stuffed olives, sliced
2 -4 green onions, coarsely chopped

Steps:

  • In large mixing bowl, combine refried beans and salsa. Consistency should be that of cake frosting--spreadable but not thick. Adjust amount of salsa accordingly.
  • Spread bean and salsa mixture onto serving platter. (I use the back of a metal serving spoon.).
  • Layer remaining ingredients.
  • Serve with Baked Tostitos Scoops Tortilla Chips.
  • NOTES: Also great as a meal. Even my green-veggie-phobic children devour this dish! This recipe is moderately spicy. Change the heat of the salsa to adjust. You could also top with jalapenos or other hot peppers to add more heat. I sometimes use different greens (prepackaged salad mixes) instead of iceberg lettuce and use different cheeses (pepperjack kicks it up a few notches!).
