2 cups chicken fillet cut into 2 cm cubes
Salt, pepper & crushed chilli to taste
1 ½ tablespoon woester sauce
1 small onion thinly sliced
1 big garlic clove sliced
1 carrot cut into rounds / julienne
2 tablespoon butter
1 teaspoon Aromat (a South African Spice)
1 teaspoon lemon pepper
¼ teaspoon dried parsley
½ teaspoon lemon juice
½ teaspoon cayenne pepper
½ teaspoon Paprika
150g spaghetti boiled in salt water
2 tablespoon soya sauce
2 tablespoon sweet chilli sauce
2 tablespoon Crystal

Steps:

  • In a non stick pan melt butter, add onion and garlic, Saute until soft then add rest of the veggies with seasonings stir fry until veg tender. In another pot cook chicken fillet, then add stir fried veggies to the chicken. Then add the spaghetti. Lastly add soya, sweet chilli and crystal sauce gently toss everything together. Garnish with Pecan nuts.

Number Of Ingredients 16

15 ml olive oil
10 ml grated ginger
2 bird eye chili (chopped fine)
2 cloves garlic (crushed)
5 tablespoons soy sauce
5 tablespoons balsamic vinegar
1/2 cup beef stock
15 ml olive oil (to fry veggies)
2 carrots (peeled and sliced into strips)
2 cups mixed peppers (sliced into strips)
1/2 cup sprouts
15 ml olive oil (to fry meat)
400 gr beef strips
salt and black pepper
noodles (to serve)
peanuts (to serve)

Steps:

  • First off, heat the olive oil in a wok and saute the ginger, chili and garlic.
  • Add the liquids and allow to simmer for a few minutes.
  • Transfer the liquid to a bowl and set aside.
  • Add a tablespoon or so olive oil to the wok, heat it up and stir fry the vegetables until tender but still crispy. Remove from wok and set aside.
  • Heat the next lot of oil, and let it get smoking hot. Add handfuls of beef strips at a time and stir fry until done.
  • Add the vegetables, noodles and liquids back to the wok to mix it all through.
  • Serve with peanuts and extra sprouts.

For the marinade, mix:
2 T sesame oil
2 t soya sauce
¼ t salt
½ t sugar
500 g free-range beef fillet, cubed
2 T Woolworths stir-fry wok oil
1 red onion, sliced into petals
2 red pepper, sliced into strips
¼ green cabbage, roughly chopped
50 g shiitake mushrooms, halved
2 cloves garlic, crushed
1 t ginger grated
100 g Tenderstem broccoli tips, blanched
50 g mange tout, blanched
¼ cup oyster sauce
¼ cup hoisin sauce
3 T chicken stock
1 t cornflour

Steps:

  • Generously coat the beef with the marinade and set aside for 30 minutes.Heat a little sesame oil in a large wok over a high heat until smoking. Spread the meat out in the wok and brown. Remove from the wok.Reduce the heat a little and add the remaining oil. Fry the red onion, pepper, cabbage and mushrooms until golden. Add the garlic and ginger and cook for a few seconds.Add the remaining ingredients except the stock and cornflour. Add the beef and toss until glazed with the sauce.Mix the stock and cornflour. Don't you just love a good stir fry? It really is a life-saver of a kitchen recipe. This savoury Stir-Fry Beef comes to the rescue enabling you to get dinner on the table in a flash. It's quick and easy, and appeals to the whole family. Juicy, simple veggies like red and green cabbage, sliced coloured peppers, mange tout and carrots cooked to perfection in chilli oil and garlic. Add beef strips, and the meat absorbs the vegetables wonderful juicy flavours. Complete the dish by topping it with chives and a sprinkle of toasted sesame seeds or chopped unsalted peanuts.

Number Of Ingredients 14

500g rump steak, cut across the grain into thin strips
2 tablespoons peanut or sesame oil
2 tbsp. oil
1 tsp garlic paste
1 tsp ginger paste
⅓. c. low-sodium soy sauce
1 Tbles Garlic chilli sauce
½-1 tsp. crushed chilli flakes
2 Tbsp Corn Flour mixed with ¼ cup water
2 Tbles Peanut or Sesame Oil
1 onion cubed
6 cups cut vegetables (see pic) of your choice. (I used red and green cabbage, mange tout, carrots and red pepper)
¼ cup chopped unsalted peanuts
Steamed medium-grain white rice, to serve

Steps:

  • In a wok or large saucepan over medium-high heat, add the oil. When the oil is quite hot, quickly stir-fry the beef in 2-3 batches. You want it to be nice and crisp on the outsides, but not cooked throughout. If you add all the beef at one time it will stew instead of being crisp.
  • Transfer to a plate.
  • Heat a small saucepan over high heat;
  • Add the sauce ingredients,reduce heat to medium and cook for approx 1-2 minutes.
  • Add the cornflour mixture and cook, stirring, until the sauce boils and thickens.
  • Set aside.
  • Heat remaining oil in the same wok the the beef was cooked in over medium-high heat.
  • Add the onion and carrots. Stir-fry for 2 minutes. Then add the peppers and mange tout and stir fry for another 2 minutes. Lastly stir through the cabbage and stir fry for about a minute.
  • Add the stir fry sauce to the wok. Toss well to combine. Add the beef and toss until completely heated through.

CHAKALAKA (SOUTH AFRICAN VEGETABLE STIR-FRY)

This is a staple food in South Africa as well as other parts. My amaXhosa friend, Ntombizanele Sokupa, gave this recipe to me. She eats this with Pap -Recipe #309584, but says it can also be enjoyed as a side dish with meat or vegemeat or with bread. Thanks Zanele!

2 medium green bell peppers, diced
3 medium tomatoes, diced
curry powder, to your taste
salt, to taste

green chili (optional)
1 vegetable bouillon cube
1 teaspoon chili powder
1 -2 tablespoon oil, for frying
1/4 cup water

Steps:

  • Fry the onion and pepper together with oil in a large skillet until the onion is clear.
  • Add the grated carrots, tomatoes, water, and all the seasonings to your liking and cook for about 15-20 minutes.

1/2 cup canola oil
1 large onion, finely chopped
2 cloves garlic, minced
2 (15 ounce) cans diced tomatoes
1 tablespoon black pepper
1 teaspoon curry powder
1 teaspoon nutmeg
1/2 lb cooked chicken or 1/2 lb cooked pork
1 1/2 cups jasmine rice
1 cup water

Steps:

  • Over medium high heat, pour canola oil in a large, heated saute pan.
  • Add onion and garlic and saute until light brown.
  • Add pepper and then tomatoes.
  • Cook for 5 minutes, stirring frequently.
  • Lower heat to medium.
  • Add meat, curry and nutmeg and cook for 15 minutes.
  • Add 1 cup water and then rice; stir and cover.
  • Cook at medium heat for 40-50 minutes or until rice is tender.
  • IMPORTANT: ADD WATER AS NEEDED TO KEEP RICE FROM STICKING TO PAN.
  • Serve as is or with tortillas.

500 Gr Rump Steak, Thinly Sliced Against the Grain
¼ Cup Low Sodium Soy Sauce
2 Tbles Hot Sauce
2 Tbles Rice Vinegar
1 Tbles Sesame Oil
2 Tbles Cornflour
1 Tbles Sugar
1 Tsp Freshly Ground Black Pepper
2 Tsps Ginger and Garlic Paste
Salt to Taste
1 Cup Mixed Green and Red Peppers Sliced in Julienne Slices
1 Large White Onion Sliced
4 Tbles Oil Divided
½ cup Beef Stock

Steps:

  • Slice beef into ¼ inch strips. Set aside.
  • In a small mixing bowl, whisk together soy sauce, hot sauce, rice vinegar, sesame oil, cornflour, sugar, black pepper, ginger, and garlic, and salt. Whisk to combine. Marinate the steak strips in this sauce and set aside for at least an hour.
  • Heat 2 tablespoons of vegetable oil in a wok over high heat. Add in beef and toss until seared, about 3-5 minutes. Remove from wok and set aside.
  • Add in another 2 tablespoons of vegetable oil. Add in peppers and onions. Cook in the wok until tender but still crisp, about 3 minutes.
  • Add meat back into the wok. Add in as much beef stock as needed to make a nice thick sauce. Stir and cook about 1-2 minutes.
  • Garnish with sliced green onions (optional) and serve hot with rice or chinese noodles.

2 ml cornflour maizena

Steps:

  • Heat oil in a wok until it is smoking hot, fry the beef strips until almost done.
