MILK TART With a Baked Crust image

Subject to personal taste, this is in my opinion the original South African Milk tart. (Melktert) Baked crust and a filling that does not require baking.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 pinch fine salt
1/3 cup caster or 1/3 cup superfine sugar
80 g/ 2 . 82ozs . butter, softened
1 small egg
2 cups milk
1 cinnamon stick
60 -100 ml white sugar, depending on personal taste
2 eggs
3 tablespoons cornflour
3 tablespoons flour
half teaspoon vanilla essence
2 tablespoons butter

Steps:

  • Crust - Step 1 - Measure the flour, baking powder and salt in a jug and whisk until combined. Cream butter and sugar together with a beater attachment until pale and fluffy (about 3 minutes). Add the egg and beat until thoroughly incorporated. By hand add in the flour mixture and mix until just combined.
  • Crust - Step 2 - Press the dough into a 25cm/10inch tart plate with a removable base. Make sure that it isn't too thick and dock with a fork. Place in the freezer for 30 minutes. Meanwhile preheat oven to 200C/400F and when ready bake the base for 15 minutes or until golden and cooked through. You don't need to weight this down if you freeze the pastry. The pastry can be baked 1-2 days in advance and covered well and placed in an airtight container or box.
  • Heat the milk with the cinnamon stick to just under boiling point.
  • Lightly beat the eggs with the sugar, and then add the corn flour and flour.
  • Pour the hot milk into this mixture, stirring rapidly.
  • Return the mixture to the heat and cook, stirring until the mixture becomes thick.
  • Keep stirring while it is cooking to prevent it from catching on the bottom of the pot and getting lumpy.
  • Take the mixture off the heat and add the vanilla essence and butter.
  • Stir well until the butter is melted.
  • Pour the mixture into the prepared tart crust.
  • Sprinkle with cinnamon sugar.

2 prepared graham cracker crusts
1 liter milk
1 1/4 cups cake flour
1 cup white sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
1 pinch salt
4 eggs, separated
1 tablespoon margarine
2 teaspoons cinnamon

Steps:

  • Heat 3 cups of milk to boiling point.
  • Mix remaining milk, flour, sugar, extracts, salt and egg yolks together and add to hot milk.
  • Cook until very thick and remove from stove.
  • Whisk egg whites to stiff peak stage and add to milk mixture after it has been off the stove for 5 minutes.
  • Stir in margarine and pour mixture into ready-made pie shells.
  • Sprinkle with cinnamon.
  • Refrigerate to cool and set.

Milk tart with creamy filling and a homemade crust is a South African classic. Perfect as dessert or served for tea time.

Follow the directions for my easy no-roll crust
2 cups milk
½ cup heavy / whipping cream
5 egg yolks
¾ cup sugar
2½ tbsp cornstarch / cornflour
2 tbsp flour
2 tbsp salted butter ((alternatively use unsalted butter and 1/2 tsp salt))
½ tsp almond extract
½ tsp vanilla extract
pinch of nutmeg
2 tsp cinnamon

Steps:

  • Make the pastry according to recipe instructions then blind bake until golden brown and crisp. Remove from the oven and allow to cool.
  • To make the filling, heat the milk, cream, vanilla, almond extract and nutmeg in a saucepan over medium heat.
  • In a mixing bowl, whisk together the egg yolk, sugar, flours and salt.
  • Once the milk is hot, whisk two ladles full of the milk into the egg mixture to temper the eggs.
  • Pour the egg mixture back into the saucepan and cook until thickened, whisking continuously. Cook the custard for 2-3 minutes until thick and smooth.
  • Pass the custard through a fine-mesh sieve. Beat in the butter.
  • Pour the custard into the prepared crust. Spray a piece of parchment paper with cooking spray then press onto the surface of the custard to avoid a skin from forming.
  • Place the milk tart in the fridge and allow to set for at least 4 hours but ideally overnight.
  • Before serving, dust the cinnamon over the milk tart. Slice and serve.

My 'ouma' South African grandmother's legendary milk tart. It is lip-smacking. The recipe is a real winner. It is a traditional South African tart that is very easy to prepare.

1 cup white sugar
3 egg yolks
1 cup cake flour
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
4 cups milk
3 egg white
1 tablespoon cinnamon sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a 9 inch deep dish pie plate with vegetable oil cooking spray.
  • In a large bowl, mix together the butter and sugar until smooth. Add the egg yolks and beat until light and fluffy. Sift in the cake flour, baking powder and salt, and stir until well blended. Mix in the vanilla and milk. In a separate bowl, whip the egg whites to stiff peaks using an electric mixer. Fold into the batter. Pour into the prepared pie plate, and sprinkle cinnamon sugar over the top.
  • Bake for 25 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C). Continue to bake for 25 to 30 minutes, or until the center is set when you gently jiggle the pie. Serve hot or cold.

145 g flour, (plus extra for dusting)
25 g fructose
5 mls baking powder
1 pinch fine salt
100 g butter, (plus extra for greasing)
1 egg, (lightly beaten)
1.125 l milk, (divided)
100 g butter
1 cinnamon quill
3 eggs, (separated)
205 g fructose
72 g flour
70 g cornflour
1 pinch fine salt
5 mls vanilla purée
Ground cinnamon for dusting

Steps:

  • Sift the flour, fructose, baking powder and salt into a mixing bowl
  • Grate the butter into the flour and mix in using your fingertips until it resembles bread crumbs
  • Add the egg and mix to create a soft dough
  • Shape the dough into a ball and press down to create a disc
  • Cover in clingfilm and place into the fridge for 30 minutes
  • Lightly grease an oven proof pie dish
  • Turn the dough out onto a lightly floured surface and roll until larger than your pie dish
  • Carefully roll the dough over the rolling pin and then unroll it into the pie dish
  • Press the dough firmly onto the bottom and sides of the dish
  • Place the pie dish into the fridge while you preheat the oven to 180° Celsius
  • Line the pastry with baking paper and fill with baking beans and blind bake for 15 minutes
  • Remove from the oven, remove the baking beans and baking paper and prick holes into the bottom of the pastry with a fork
  • Return to the oven and bake for 10 minutes
  • Remove from the oven and set aside to cool while you make the custard
  • Trim the edges once cooled
  • Place 1000mls (1l) of the milk together with the butter and cinnamon quill into a large thick bottomed sauce pan
  • Bring to the boil over a medium high temperature and then reduce the temperature
  • Pour the remaining milk (125mls) into a mixing bowl and add the egg yolks, fructose, flour, cornflour and salt
  • Whisk together to combine
  • Remove the cinnamon quill from the milk and then add the egg mixture to the milk
  • Whisk until smooth and then leave to simmer for 5 minutes before removing from the heat and setting aside to cool slightly *
  • Place the egg whites into a mixing bowl and whisk to stiff peaks stage
  • Fold the eggs whites into the custard using a whisk, until just combined
  • Gently whisk in the vanilla purée and pour into the prepared crust
  • Dust the top with the ground cinnamon - as thick as you would like it
  • Leave to set before serving

125 grams cold butter (approximately 1 stick or 1/2 cup)
36 grams fine granulated sugar (approximately 45 ml or 3 tablespoons)
225 grams cake flour (approximately 400 ml or 1 2/3 cups)
1 egg (large)
30 ml cold water (approximately 2 tablespoons)
65 grams butter (approximately 1/2 stick or 1/4 cup)
25 grams cake flour (approximately 45 ml or 3 tablespoons)
198 grams sweetened full cream condensed milk (approximately 1/2 large tin )
500 ml milk (approximately 2 cups)
3 large eggs, separated
1.25 ml salt (approximately 1/4 teaspoon)
5 ml vanilla extract (approximately 1 teaspoon)
2.5 ml cinnamon powder (approximately 1/2 to 1 teaspoon for dusting before serving)

Steps:

  • For the pastry, pulse the butter, flour and sugar in a food processor until it has the consistency of breadcrumbs. Alternately, rub in the cold butter with two knives or a pastry cutter. Try not to use your hands as it will warm up the butter.
  • Add the egg and water and mix until just combined.
  • Bring the pastry into a ball and flatten into a disk on a piece of cling wrap. This makes it easier to roll into a round shape later.
  • Chill and rest the pastry for about 30 minutes before use.
  • Roll out the pastry and line a 25 cm tart pan ensuring that the pastry overlaps the sides a bit as it may shrink during baking if not rested enough. I chilled it again for another 10 minutes before baking.
  • Switch on the oven and heat to 200 degrees celcius / 400 F / Gas mark 6.
  • Prick the base and line with parchment paper and baking beans or beans, and bake blind for about 10 minutes.
  • Remove the baking beans and bake for another five minutes. Be careful not to get a burn as you may drop the beans and damage the tart case.
  • Reduce the oven temperature to 170 degrees celcius / 350 F / Gas mark 4.
  • Cook the filling while the pastry base is baking in the oven.
  • In a medium size bowl mix the butter and flour ensuring there are no lumps. Add in the condensed milk, vanilla and the egg yolks and mix until smooth.
  • Heat the milk until it reaches boiling point stirring occasionally with a flat edged wooden spoon to prevent it catching and burning on the bottom of the pot.
  • Add a little of the boiled milk to the egg mixture ensuring that you whisk out all the lumps. Slowly add the rest of the milk while whisking or stirring and then return to the pot and place back on the heat.
  • Stir the milk mixture on the heat until it thickens and it starts to bubble.
  • Remove the pot from the stove and let the mixture cool for about 10 minutes.
  • Whisk the egg whites and salt until they are glossy but not too stiff. It should be soft peaks at this stage, not the 'tip it over your head and it doesn't drop' stiffness.
  • Fold the egg whites into the cooled custard mixture.
  • Pour into the pastry case and bake for 15-20 minutes until it is set. Do not over bake as it will rise and sink like an overdone souffle.
  • Sprinkle with cinnamon powder and serve.

¼ cup butter
½ egg
2¼ cups milk
1¼ tablespoon flour
1¾ tablespoon butter

1 teaspoon vanilla essence
1½ eggs

Steps:

  • Cream the butter and sugar until smooth. Add the egg.
  • Add dry ingredients and mix well to form a smooth dough.
  • Press into greased pie plate.
  • Bake at 350F/180C for approximately 20 minutes or until golden.
  • Boil milk, sugar and butter.
  • Beat eggs with dry ingredients.
  • Pour hot mixture over cold and mix well. Add vanilla essence.
  • Allow to thicken on the stove.
  • Pour filling into pastry-lined pie dish. Allow to cool and then sprinkle with cinnamon.

Steps:

  • Preheat oven to 400°F.
  • For the crust, combine the flour, baking powder, and salt in a large bowl.
  • Cut in the butter with a pastry cutter or knife until the flour resembles a coarse cornmeal.
  • Stir in the sour cream to form a soft dough.
  • Dust the dough with flour and form it into a ball.
  • On a generously floured surface, roll out the dough to fix at 11x13-inch baking sheet or a 14-inch pizza pan. It will be thicker than a usual pie crust.
  • Carefully lift the dough and lay it out flat on the unoiled pan. Crimp the edges by pinching them to form a rim. Pierce the dough with a fork in several places.
  • Bake for 25-30 minutes until crisp and golden.
  • Meanwhile, make the custard by heating the milk to boiling.
  • Combine the sugar, flour, eggs, and salt in a blender.
  • When the milk begins o foam, pur it slowly into the whirling blender.
  • Pour the custard back into the saucepan. Cook over medium heat, stirring constantly for 3-5 minutes, until thickened.
  • Remove from the heat, and stir in the vanilla and almond extracts. Set aside.
  • When the crust has baked, spread the custard filling evenly over it.
  • Generously sprinkle the top with cinnamon and brown sugar. Return the tart to the oven for about 15 minutes, until the brown sugar melts and the top of the custard is firm.
  • Serve the milk tart warm or cold.

Melktert was then adapted and made a purely South African creation by the Cape Malays. Apparently wives reputations hang on their Melkterts and recipes are family heirlooms. So, for something exotic and a bit different, give this a try.

1/2 lb puff pastry
1 1/2 teaspoons butter
1 pinch salt
1 cinnamon stick
3 cups milk, for boiling
2 teaspoons custard powder
3 teaspoons cornflour
3 teaspoons cake flour
2 tablespoons cold milk
1/2 cup sugar
4 large eggs, separated
1/2 teaspoon almond essence
cinnamon-sugar mixture

Steps:

  • Preheat oven to 400o F.
  • Line bottom and sides of two pie plates (not deep dish) with puff pastry making raised edges.
  • In a pot, bring milk to a slow boil and add butter, salt and cinnamon. Reduce to simmer.
  • In a mixing bowl, combine custard powder, corn flour and cake flour. Stir in cold milk and mix to form a paste. Stir in a little of the hot milk mixture.
  • Stir custard mixture into the pot of hot milk. Add 4 tbsp of the sugar and bring to a boil, stirring continuously.
  • Remove from heat once the mixture has thickened. Discard cinnamon.
  • Beat egg whites until stiff. Gradually beat in the remaining sugar. Set Aside.
  • Beat egg yolks lightly and add a little of the custard mixture to the egg yolks.
  • Then stir the yolk/custard mixture into the main custard mixture and add almond extract.
  • Gently FOLD in the egg whites.
  • Pour the mixture into the awaiting pie pans and bake for approximately 10 minutes.
  • Lower the temperature to 350 F and bake for an additional 10 to 15 minutes or until the filling has set.
  • Cool slightly and sprinkle the top of the custard pie with cinnamon and sugar.
  • Serve cold.

6 ounces butter, softened
½ cup (100g) sugar
1 egg
2 cups (300g) flour
pinch salt
¼ teaspoon (1.25ml) pure almond extract
4 cups (950ml) milk
1 tablespoon (0.5 ounces) butter
½ cup (100g) sugar
2 eggs
3 tablespoons (24g) cornstarch
3 tablespoons (24g) flour
1 teaspoon (5ml) pure vanilla extract
pinch salt
1 tablespoon (14.3g) cinnamon

Steps:

  • Cream the butter and add the sugar. Beat in the egg and almond extract. Stir in the flour and salt. Knead until a soft dough has formed. Chill for 10 minutes.
  • Roll the dough out onto a lightly floured surface and layer it into a greased pie dish. Cover with a sheet of parchment paper and fill the void with pie weights. Bake blind at 350 degrees for 15 minutes. Remove parchment and pie weights. Allow crust to cool completely on a wire rack.
  • In a heat proof bowl, whisk together the eggs, sugar, cornstarch, flour and vanilla. Set aside.
  • In a medium size saucepan, heat the milk and butter at medium setting. Do not bring to a rolling boil.
  • Add about a fourth of the milk to the egg mixture, whisking to incorporate it evenly. Pour the mixture back into the saucepan with the remainder of the milk. Return to heat and stir constantly until it thickens. Do not boil!
  • Pour the filling into the pie crust and let cool completely. Refrigerate until serving. Sprinkle with cinnamon before serving.

300 ml sweetened condensed milk (Eagle Brand Condensed Milk)
1800 ml milk (6 tins, use tin to measure)
4 large eggs, separated
2 tablespoons margarine
1/2 cup cornstarch
1/2 cup sugar
2 tablespoons custard powder (Birds Custard Powder)
2 teaspoons vanilla
1 tablespoon cinnamon

Steps:

  • Mix sweetened condensed milk, 1 tin (300 ml) milk, egg yolks, corn starch and custard powder in a large microwave proof casserole dish. Whisk together until mixed well. Add the rest of the milk (5 tins or 1500 ml) and mix well again. Cook at high power in microwave for 3 minutes. Stir well and add margarine and vanilla. Cook for 3 minutes, stir well, continue cooking in two or three minute intevals until mixture is thickened and smooth. It takes about 8 minutes total in my microwave. Allow to cool slightly.
  • Beat reserved egg whites until stiffly beaten. Fold in egg whites into cooked milk mixture.
  • Pour into three baked pie crust - use Pat in Pan pie crust as a good pie crust for this pie.
  • Sprinkle cinnamon on top of pie.

  • Start off by mixing the shortcrust pastry ingredients into a bowl together with your hands to a firm dough. Wrap it with a cling film or parchment paper and chill for about 30 minutes. In the meantime make the filling.
  • Using the tip of the knife split the vanilla bean lengthwise and scrape out the vanilla seeds. Mix the scraped out seeds with sugar very well. In a medium pot combine milk (leaving about 5 tablespoons milk behind), vanilla sugar that you've just made, cinnamon stick and empty vanilla bean pod and bring to a boil (at a low heat). Remove from the heat and let infuse for at least 2 hours. In this way the vanilla and cinnamon flavors will be intensified. Then Preheat the oven to 180 ° C (372 °F), with both top and bottom heat.
  • After chilling the dough, take it out of the fridge. Now you can either either 1) crumble the pastry into a buttered tart pan. Using your hands, press the shortcrust pastry into the pan. Make the pastry a bit high on the sides as well. 2) or you roll out the dough between two parchment papers. Rolling it out this way makes life makes easier. Remove the parchment paper on top, but leave the one at the bottom of the rolled out pastry. Transfer the pastry to a tart tin and make it fit nicely. - (If you want, you can also roll out the pastry dough on a floured work surface with a floured rolling pin. Then transfer it to the tart dish with the help of the rolling pin.)
  • Now prick the pastry several times with a fork. Use either dried beans, rice, lentils and co. to weigh down the milk tart crust. Simply line the tart dough with parchment paper, add some weight and blind bake for 35 minutes. Feel free to remove the weight 5 minutes before the end of baking time, so that the crust will become nicely golden brown. Remove the tart crust from the oven, followed by the weight and let cool completely before filling. This takes about 2 hours.
