HOT MILK SPONGE CAKE

Steps:
- Beat eggs and sugar together until light and creamy.
- Sift flour, baking powder and salt together. Add to egg mixture and fold in lightly until well combined.
- Heat milk and butter in a small, heavy-based saucepan. Do not boil; stir until butter is melted. Remove from heat and add essence.
- Add milk mixture to cake mixture and mix well. Spoon mixture into two greased 20 c round cake pans.
- Bake in a preheated oven at 180 °C for 25 - 30 minutes. Leave in pans for a few minutes before turning out onto a wire rack to cool completely.
- Sandwich cake layers with half the icing. Use remaining icing to ice top of cake.

- Preheat the oven to 180'C (350′ F).
- Use a small bread pan, sprayed with non-stick spray.
- Beat butter and sugar until creamy. Add essence.
- Add eggs one by one and beat well.
- Add dry ingredients.
- Add bananas(and nuts/essence/cinnamon) and mix well.
- Add to pan.
- Bake for an hour or until baked through.
- Serve with butter.

Steps:
- Preheat oven to 180°C.
- Using a deep, dry bowl beat egg whites until stiff.
- Add the sugar gradually and continue beating until thick.
- Add the yolks and beat lightly.
- Sift the dry ingredients gently over and mix in lightly.
- Fold in the margarine and water.
- Pour into two prepared tins and bake for 20 minutes.
- Remove from oven and cool on a wire rack.
- Fill and sandwich with jam and cream.
- Sift icing sugar on top of cake.
- HINT: To prepare baking pan, brush lightly with oil.
- Cut out brown paper to fit base.
- Place at the bottom of the pan and then brush paper with oil.
