Sauteed Apples image

This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish.

¼ cup butter
4 large tart apples - peeled, cored and sliced 1/4 inch thick
2 teaspoons cornstarch
½ cup cold water
½ cup brown sugar
½ teaspoon ground cinnamon

Steps:

  • In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
  • Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

4 granny smith apples, sliced
1 cup brown sugar, packed
1 teaspoon cinnamon
4 tablespoons butter

Steps:

  • In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
  • Add sliced, unpeeled apples, cover, and saute, stirring frequently.
  • In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
  • When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
  • Continue cooking until sugar has dissolved into syrup.
  • Serve with hot buttered biscuits and sausage on the side; or alongside ham or pork.

After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

1 lemon, yellow zest grated
6 small or 4 large apples, peeled and cored
6 tablespoons unsalted butter, softened
1/2 teaspoon salt
1/2 teaspoon ground cinnamon, or any combination of cinnamon, ground ginger and ground cardamom
1/4 teaspoon ground nutmeg
1 heaping teaspoon dark brown sugar
1 heaping tablespoon dark or golden raisins, or a combination
Dollops of crème fraîche, whipped cream or ice cream (such as vanilla or dulce de leche) for serving

Steps:

  • Fill sous-vide cooker with hot water and heat to 170 degrees. Place lemon zest in a bowl. In another bowl, place apples. If using large apples, cut in half. Cut lemon and squeeze juice over apples, turning to coat.
  • To bowl with lemon zest, add butter, salt, spices, sugar and raisins; mix together. Divide mixture among apples, packing it into hollowed core. If using apple halves, rub mixture all over them.
  • Place two apples in a sealable plastic bag, and seal it after removing as much air as possible; try squeezing most of it out and then carefully sucking out the rest with a straw as you seal the bag. Or, seal apples in plastic with a FoodSaver or similar vacuum device. Repeat with remaining apples. (For sous-vide cooking at home, a complete vacuum seal is not necessary if food will be served immediately after cooking.)
  • Place plastic bags in sous-vide chamber, making sure they are submerged in hot water. Cook at least 2 hours. Food may remain in cooker for up to 2 additional hours; it will not cook any further. When opening bags, be careful as juices will be hot. Serve apples in bowls, topped with crème fraîche, whipped cream or ice cream.
