2 tablespoons mayonnaise
4 slices sourdough bread
1 cup shredded cheddar cheese
2 small zucchini, halved lengthwise
1 large tomato, thinly sliced
1/4 cup shredded carrot
1 to 2 tablespoons salted sunflower kernels
2 tablespoons butter, softened

Steps:

  • Spread mayonnaise on one side of each slice of bread. On two slices, layer with cheese, zucchini, tomato, carrot and sunflower kernels. Top with remaining bread, mayonnaise side down. Spread butter over the outside of bread. , In a large skillet, cook over medium heat until bread is lightly toasted and cheese is melted.

1 zucchini (sliced)
1 yellow squash (sliced)
1 eggplant (sliced)
1 red pepper (sliced)
¼ cup red onions (sliced)
Olive oil spray
½ teaspoon dill
Salt and pepper (to taste)
2 tablespoons butter
4 slices thick bread
4 ounces Dill Havarti cheese (divided)
4 ounces Gouda cheese (divided)

Steps:

  • Preheat oven to 400°F. Toss the vegetables with olive oil spray and dill and season with salt and pepper. Spread out on a baking sheet and roast for 10 minutes, until vegetables are slightly tender.
  • Brush the melted butter on one side of the bread slices.
  • In a large cast iron skillet or electric griddle over medium low heat, place one slice of bread on the skillet, buttered side down. Add half the Dill Havarti cheese on top of the bread, then layer with half the roasted vegetables, followed by half the Gouda cheese. Top with a bread slice, buttered side up.
  • Cook grilled cheese sandwich until golden brown and cheese is melted, about 4-6 minutes on each side. Repeat for the second sandwich.

Easy Sourdough Sandwich Bread image

A simple and easy recipe for homemade sourdough sandwich bread. Made with all purpose flour and just a touch of butter. I like to make the dough at night so we can have fresh bread in the morning. This loaf freezes well (whole or sliced). I recommend this loaf pan. Notes For best results, please weigh your ingredients instead of using measuring cups. Here's why: weight and volume measurements are not equal, only approximate! This is especially important regarding the sourdough starter. If your starter is very bubbly, 1/4 cup might only weigh 30 g which is too little for this recipe (you need 50 g). The dough will take forever to rise! Same goes for the flour... 4 cups might end up weighing way over 500 g depending on how tight the flour was packed into the cup. You'll end up with dry dough. I used Whole Foods 365 Everyday all purpose flour for this recipe. King Arthur and Trader Joe's ap flour will work as well. If using another brand with a lower protein content (i.e. Gold Medal, Pillsbury, Heckers) consider reducing the total water amount by 15 g.

Carefully flip each piece of cheese with the tongs, recover the skillet, and cook until the other side is deeply golden, about 2 to 4 minutes.

I've found that rather than stirring it with a wooden spoon, a sturdy rubber spatula works even better: with the spatula, scrape the dough away from the walls of the bowl and fold it in on itself. Mix the entire loaf this way, until the dough is mostly uniform in color and texture. It should only take a minute or two. The dough will be very wet, and it's okay if the sourdough starter isn't completely mixed in yet.
  • Cover the bowl and place it in the oven again. Set your timer for 20 minutes and let the dough sit.
